The broad topic of health literacy has been assessed in a variety of studies. The most extensive research has been completed on how a lack of health literacy contributes to specific disease progressions. However, there is a deficit of research on how general health literacy contributes to overall individual health in high school students. The role of diet on brain health has received significant attention, with the Western diet (WD) contributing to cerebrovascular alterations and neurodegenerative disease. The blood-brain barrier (BBB) may play a particularly important role as it forms the interface between the peripheral circulation and the central nervous system. The WD has been shown to negatively impact the BBB. Whether there are sex specific differences with diet on BBB integrity remains unclear.
