There are many health related benefits of participating in regular physical activity. A well-designed elementary physical education program will promote lifetime physical activity that may reduce the risk of disease. In implementing a quality curriculum for physical education, educators need to take in to account the standards when deciding the direction for their curriculum (NASPE, 2005). According to the Washington State Office of the Superintendent of Public Instruction (2008), physical education includes curriculum, instruction and assessment all implemented together. This project addresses the need for meaningful and convenient assessment tools.

This project looks at obesity and undernourishment in American students. The project discusses the importance of physical education and nutrition education and the lack there of in the 21st Century. A handbook has been developed to aid teachers in the incorporation of movement activities in the elementary classroom. The activities can be done between lessons or between long periods of focus. The activities will help to gain attention and engagement of students. The activities in the handbook are to be used as a supplement to any existing elementary curriculum. The handbook consists of seventy-eight activities that may be used in a variety of classroom settings. Current literature and research surrounding the topics of engagement, stimulation, retention, and the importance of movement for adolescents were explored.

A project was designed for secondary health students possessing learning disabilities in the areas of perceptual motor, motor active, and reading. After identifying the characteristics and remedial approaches for these learning disabilities, lesson plans and specific learning activities were developed for a unit on nutrition. A resource and materials section was included to assist regular secondary health classroom teachers with learning disabled students.

A mobile camp for the mildly/moderately mentally retarded was designed to provide first-hand experience in the essentials of obtaining food, shelter, and social skills of cohabitation along with their interdependency with flora, fauna, and the topographical environment. The camp design consists of 10 days of camping in tents and staying in motels. The campers travel by bus along the Washington coast, Puget Sound, and San Juan Islands. Areas of academic instruction include plants and animals along the route.

A series of 28 reading comprehension strategies was developed to assist students in using and understanding the first aid textbook in a ninth grade Standard First Aid and Personal Safety class. The strategies included lessons at the literal, interpretive, and applied levels of reading comprehension and were developed to further facilitate students' reading the text with more depth and proficiency.
