Explicit nutrition and gardening education for preschool-aged children is on the decline as health concerns increase (Fryar et al., 2018; Malden et al., 2019). Though the health, social-emotional, and academic benefits of hands-on gardening education are evident in research, many barriers to integration exist that inhibit teachers from implementing gardening into their classrooms (Burt et al., 2018; Heim et al., 2009; Gatto et al., 2011; Lineberger et al., 2000). For two years now, the Covid-19 pandemic has continuously impacted all aspects of our society, including K-12 education. The impact of the Covid-19 pandemic is thought to be very harmful and have long-term consequences. Understanding this impact is very important, which is why this study focuses on how the Covid-19 pandemic has impacted K-12 education, specifically how it has impacted academics and behavior while attempting to understand which groups were most impacted. Research suggests that students living in rural areas may be more likely to face adversity and stress due to intersecting challenges present in their communities including poverty, substance abuse, addiction, poor health, reduced economic opportunity, and geographic isolation. I conducted an engaged scholarship project in partnership with students and staff at JES to explore ways that open-ended art activities that provide students with self-directed creative spaces can cultivate a student-centered environment built around strong relationships. During my time of studying to be an early childhood education teacher at Ouachita Baptist University, I felt a calling to explore and become immersed in another culture. I had never been out of the country before, and I believed that in order to become a well-rounded teacher, I needed to learn how other countries' teachers taught their children.
