Educating Elementary Students About Nutrition: An After-School Club Curriculum, Morgan Gurwell

This creative project was created to serve as a 10-week afterschool club curriculum for 3rd-5th graders to teach them about nutrition and healthy eating patterns. The goal of the program is to help kids establish a foundation for healthy eating that they can utilize throughout their lives, potentially reducing their risk of developing chronic diseases as an adult. Information presented during the program is a representation of the key components of the USDA MyPlate and the 2020-2025 Dietary Guidelines for Americans. A working definition of a concept known as ‘food literacy’ encompasses using basic food preparation knowledge that has been learned, understood, and practiced to make better food decisions. To advance these skills for client service, a post-secondary nutrition program would need to include objectives that allow application of knowledge. For this reason, the purpose of this study was to determine the difference in knowledge and application among students in 100, 200 and 400 level college nutrition course(s). Deep fat frying began in the southern part of the United States and has gradually spread nationwide. Turkeys are the most common food prepared by this method. However, chicken, turkey parts (breasts, wings and thighs), and Cornish game hens may be deep fat fried. Deep fat frying results in a juicy product because the hot fat seals the outside and the skin becomes crisp.
