Outlines the processes involved in the development of a competency based framework for use by middle managers of three-star Irish hotels within rooms division and the food and beverage department. Secondary research provides an overview of existing generic competency models. Competency models and frameworks have been applied and customised across a broad range of industry sectors. Seeks to address the need for an innovative and fresh approach to HRM within the Irish hotel sector. This study has been conducted at a time when Ireland’s tourism industry is booming. Following eight successive years of growth there exists an air of invincibility surrounding the sector. However, on P‘ January 2002 the European Single Currency will come into circulation in the form of Euro notes and coins, and with it comes the seeds of change. The primary objective of this research was to explore the criteria that came into ply when a tourist judges one area over another. It examined the relative importance of tourist attributes in contributing to the attractiveness of a travel destination. This research is a study of over 1,000 German tourists to Ireland, having purchased and experienced the tourism product. Extensive review of consumer behaviour literature on theorists such as Schiffman and Kanuk (19940, Engel et al (1995), Lewis (1984 and 1987), Mowen (1995) and Loudon and Della Bitta (1993) laid a basis for research into tourism literature. This study has been carried out at a time when Tralee is trying to develop a viable tourism industry and aims at analysing the impact of this process. It studies Tralee s transition over the last decade from being a commercial town to becoming a recognised tourist destination. The present state of the local tourism product is portrayed and fixture courses of action suggested. This analysis is conducted utilising the views of tourists, tourism operators in the town and current industry thinking. This publication is a chronology of the Bartenders Association of Ireland, An Cumann Tabhairnithe Eireann (BAI). The BAI evolved from the United Kingdom Bartenders Guild (UKBG) formed in 1934. The book deals with the many physiological, economic, social changes and technological developments in the beverage industry since 1948, it documents the introduction of cocktails and various beverages in Ireland during those years, provides an insight into social history and includes a pictorial record of the past half-century.
