Hotel And Restaurant Entry-Level Job Competencies: Comparisons Of Management And Worker Perceptions, Dana V. Tesone, Peter Ricci

This article presents the findings of a central Florida study of lodging and restaurant managers as well as entrylevel workers who were graduates of hospitality management programs. It provides a theoretical construct as a basis of the methodology employed. The article then reports the findings of perceptions of desired knowledge, skills and abilities, and attitudes associated with entry-level employees. It further compares desired levels of preparation for entry-level positions in the industry as reported by respondents of both groups. Finally, the authors present conclusions and implications for central Florida practitioners and educators.

An Examination Of Factors Affecting Japanese Tourism In Hawaii, Sun-Young Park, Hye-Ryeon Lee

The Japanese tourist market is a crucial component of the Hawaii tourism economy due to both market size and higher per capita expenditures in comparison with other key markets for the state. Over the past decade, annual Japanese tourist arrivals have decreased significantly off a peak in 1997. This study examines various supply and demand factors, which may be influencing Japanese tourist arrivals to Hawaii using regression analysis. Results show that five of eight variables significantly influence the monthly Japanese tourist numbers to Hawaii: monthly total Japanese overseas tourists, available air seats, average room rates, available room units, and change …

The research reported has created a holistic model for sustainable trail management that is broader than the quantitative assessment of ecological trail degradation. The range of quantitative and qualitative results gathered show that a more realistic treatment of sustainable trail management needs is achieved through a qualitative, participative and flexible research process. The investigation focuses primarily on the assessment of trail degradation in the uplands of Co. Wicklow, Ireland where signs of deterioration have been observed as a consequence of recreational use. Many restaurant organizations have committed a substantial amount of effort to studying the relationship between a firm’s performance and its effort to develop an effective human resources management reward-andretention system. These studies have produced various metrics for determining the efficacy of restaurant management and human resources management systems. This paper explores the best metrics to use when calculating the overall unit performance of casual restaurant managers. These metrics were identified through an exploratory qualitative case study method that included interviews with executives and a Delphi study. The Winding Stair Restaurant is located at 40, Lower Ormond Quay Dublin on the north side of the river Liffey beside the Ha’penny Bridge. The proprietor is Elaine Murphy. The Winding Stair started life as a bookshop and café which was a popular meeting spot in Dublin during the 1970s and 1980s. The café closed in 2005 and in 2006 the current proprietor re-opened it as a restaurant.

Hotel managers have long toiled over a course of action that would help them preserve hotel revenue during diminished demand seasons. They have responded to this challenge by discounting hotel room rates to sustain revenue and the means by which they could determine how discounting could increase hotel financial performance. That revenue would otherwise be lost when supply of rooms exceeds the demand. Their need to find a procedure to aid them in solving hotel occupancy problems that threaten that revenue has been a source of discussion throughout the industry. Global issues dominated the discussion at the Aruba Timeshare Association (ATSA) sponsored think tank on visioning the future of Aruba. Global competition, global foreign policy, changing demographics and the global environment emerged as primary concerns by participants at the ATSA event on November 30, 2006. They also expressed major concerns over the lack of public-private cooperation to assist the Aruba tourism industry in addressing the challenges in these areas. After studying the effects of Louisiana’s post-hurricane “thank you” campaigns, the researchers find expressions of gratitude significantly improve perceptions of Louisiana in the midst of its recovery. Through a national survey conducted November 2006, they find that those who saw or heard a thank you advertisement have more positive attitudes toward the state and its people, a greater willingness to pay a premium for its products, services and travel to the state, and spread positive word-of-mouth, thus justifying the use of public funds to support the campaign. The purpose of this study was to assess sustainability of rural tourism practices in heritage, ecological, and ethnic communities in southeastern China, using sustainable tourism development indicators. The rural tourism communities selected for this study were Tengtou Village in Fenghua, Zhuge Bagua County in Lanxi, and She Minority Village in E Shan Tonglu, representing examples of domestic rural tourism initiatives in China. Each annual report contains data relating to a survey of 1000 overseas visitors to Dublin which looked at their attitudes, motives, and touristic behaviour. Florida bed and breakfasts (B&Bs) were surveyed for the purpose of discovering the attitudes, beliefs, and actual behaviors of B&B owners and operators that contribute to an operation’s success. An Investigation Into Hotel Employees' Perception Of Green Practices, Sun-Hwa Kim

This study examined how employees of the hotel industry perceived green practices. Data was collected from 220 employees working in eight green certified hotels in Orlando. Research results revealed that performance levels of green practices implemented by hotels were lower than the importance levels of those same green practices as perceived by hotel employees. The results of the study illustrated that (1) the employees' perception regarding green practices was not different than one of hoteliers in terms of importance and performance, and (2) employees weighted the green practices that were beneficial to them as more important than green practices that …

Geotourism is a new niche segment of sustainable tourism focused on sustaining and enhancing the geographical character of a place. The purpose of this study was to answer the question: "to what degree do visitors in the 'Crown of the Continent' share the values of geotourism?" Visitors to sites on National Geographic's Crown of the Continent geotourism mapguide were intercepted and asked to fill out a survey regarding their travel values.
