From Kitchen To Canon: Women And Culinary Recognition Executive Summary, Eulanda A. Sanders, Andra Harris
ICHRIE Research Reports
Despite women comprising a majority of the U.S. restaurant workforce, they remain significantly underrepresented in culinary leadership and elite recognition. Using an exploratory, descriptive design that draws on secondary data from the ACS, NRA, U.S. Census Bureau, and the James Beard Foundation, this study maps gender disparities across the culinary career pipeline. Women represent approximately 54% of the restaurant workforce but only 24.8% of chefs and head cooks, with a substantial gender wage gap persisting across the occupation (NRA, 2026; U.S. Census Bureau, 2024). Of 402 James Beard Award winners analyzed, 71.6% were male and 28.1% female. Disparities intensify at …

Gambling is increasingly recognized as a complex public health issue with wide-ranging implications for individuals, families, and communities. While traditionally male-dominated, recent shifts reveal a growing participation among women, facilitated by gender-specific gambling products, targeted marketing, and evolving societal norms. This paper critically examines the prevalence, motivations, and harms associated with gambling among women, drawing on theoretical perspectives such as social capital theory, cultural geography, and gender role theory. This project explores the current landscape and future potential for recreation and tourism development in Orick, California. It highlights how natural, built, cultural and economic systems shape a community’s identity, functionality and appeal for residents and visitors. Findings reveal that effective integration of natural and built systems, combined with strong governance, cultural stewardship and tourism planning is essential for sustainable growth, enhancing resident well-being and leveraging tourism as a key economic driver while preserving environmental and cultural assets.

This paper examines regenerative tourism as a holistic approach that goes beyond sustainability by actively restoring and enhancing social-ecological systems. Recognizing tourism’s interconnectedness with economic, social, cultural, and environmental systems, it presents regenerative tourism as a dynamic model integrating supply and demand perspectives to promote innovation, resilience, and renewal. On the supply side, regenerative tourism emphasizes ecological restoration, sustainable practices, economic stability with minimal environmental harm, and authentic experiences. Grounded in a case study in Barbuda in the Caribbean, this research examines sustainability from the perspective of what arts and heritage can contribute to community engagement and local and broader understandings about the environment. This article documents a growing body of literature recognizing the role of arts and culture, including local knowledge and traditional ecological knowledge (TEK), in climate change endeavors. Art and TEK present expansive world views. Contextual information situates research done on the island of Barbuda pre- and post-Hurricane Irma. On-The-Go Dining In America: Comparing Convenience, Service Quality, And Satisfaction In Qsr Versus Gas Station Food, Shiva Jahani, Mohammed Lefrid, Lorie A. Tuma

Purpose
The objective of this multi-group study is to examine the influence of service quality and convenience on customer satisfaction in quick service restaurants (QSRs) versus gas stations.
Design/methodology/approach
Data were collected online from 552 participants in the USA and analyzed using partial least square structure equation modeling (SmartPLS).
Findings
Service quality and convenience are strong predictors of customer satisfaction in both QSR restaurants and gas station food outlets. In addition, this study concluded significant differences between QSRs and gas stations in terms of these relations.

Coffee is traded in a highly complex global value chain where countless sustainability initiatives have emerged to address social, economic, and environmental issues, challenges which persist due to dominance of the market structure by largescale traders and roasters. As the hospitality industry continues to struggle with attracting and retaining employees, chefs in particular, research on culture in kitchens continues to grow. A recent report in Ireland exposed a culture of bullying and harassment of employees in the hospitality sector. Proposed regulations for alcohol advertising prevent beverage companies from targeting people under the legal drinking age. However, similar regulations for alcohol alternative beverages are less explored, which could allow alcohol alternative products to create awareness for alcoholic beverages among youth. Migration presents challenges to receiving communities, as it tests their ability to respond to unexpected expenditures and social stresses. Evaluating the local impact of rapid and substantial migration flows is difficult due to the absence of a validated instrument for assessing community support for migration. Our study adapted and validated a Support for Migration Assessment survey (SMA) based on Social Exchange Theory (SET). The validation of the SMA contributes in two significant ways. College and university housing professionals served a role they were generally underprepared for as long-term crisis managers during the global COVID-19 pandemic. The COVID-19 pandemic interrupted and shifted higher education operating structures on a grand scale, and housing staff were asked to continue operating on-campus housing facilities throughout the ever-changing response to COVID-19. The purpose of this hermeneutic phenomenological study was to understand the lived experiences of housing professionals during the COVID-19 pandemic. Purpose: Racial code-switching is an impression management behavior for people to blend into social and professional situations by adhering to norms outside their own. Drawing on the identity threat perspective, this study aims to examine the harmful effects of racial code-switching on employee psychological depression and hospitality industry turnover intentions.
Design/methodology/approach: The current study used a two-wave time-lagged survey of 286 restaurant frontline employees. Participants were asked to rate their racial code-switching, identity threat and shame in the first survey. Participants reported their depression and industry turnover intention in the second survey one week later.

The objective of this study was to explore different type of retail cases and case environments, primarily lighting, to quantify the impact on shelf life. Coarse ground 80:20 beef from a local retail establishment was acquired between 7 and 10 d from the box date and fine ground through a 9.5 mm grinder plate, and then formed into 150.25 g patties with an automatic patty forming machine. When, in 2003, the Las Vegas Visitors and Convention Authority (LVCVA) launched the tag line “What happens here, stays here,” it reinforced the idea, already supported by the media, that in Sin City everything is allowed. Looking at the COVID-19 crisis, one might wonder how, after being seen for years as a place without restrictions, Las Vegas could convince its tourists to respect some rigid safety guidelines. Covid-19 And Its Implications For Women In Gaming: Move Towards Regulation, Policies, And Culture Changes In The United States, Shekinah Hoffman, Itzel Alanis

COVID-19 exposes structural inequalities within American society which can no longer be ignored. Here, we highlight the structural inequalities women and women of color face that are glaringly apparent or exacerbated in the pandemic. Inequalities that play a role in the unemployment, insufficient workplace protection, and increased work-life demands of women and women of color in the gaming industry. Instead of returning to “normal” business post-pandemic, we urge gaming leaders to reflect on these inequities within their workplaces. We offer that guaranteed paid leave and permanent flexible work arrangements could improve the life of gaming women employees and their families.
