Introduction: This paper addresses the TTRA Canada conference sub-theme “Future-Proofing: Learning from Today to Build Back Tomorrow.” The pandemic has accelerated discussion about the socioeconomic and environmental impacts of tourism, social equity, workers’ dignity, as well as the long-term climate crisis. As an original piece of research, this dissertation investigates the factors that contribute to gender inequality in the chef profession in Ireland. The aims of the study sought to establish the extent of gender inequality and the factors that contribute to it in the chef profession in Ireland. The first national gender inequality survey was designed to collect empirical and qualitative data of the chef profession. Joan Acker’s (1990) original theory of gendered organisations and Connell’s (1995) concept of hegemonic masculinity were employed to undertake a systematic gender analysis of the data emanating the survey. How can you engage students online by utilizing the online environment? Solution: a choose-your-own adventure style game. As an Assistant Professor of Hospitality Management, I teach a class in Strategic Management where I used a software called Twine to create a choose-your-adventure type scenario where the students make their own decisions for a business scenario and then see the consequences of their decisions.

The hospitality industry has faced and continues to face major challenges in hiring and retaining the workforce needed for recovery from the pandemic and future growth. The goal of this research was to better understand these changing needs so that hospitality educators can supply the industry with well-rounded graduates attuned to the transformed hospitality operating environment. Focus group research was conducted with 22 senior hospitality managers in summer 2021; participants also completed an inventory of 28 skills and attributes commonly associated with the delivery of hospitality services.
