The U.S. Food and Drug Administration (FDA) proposed a front-of-package nutrition labeling (FOPL) rule in early 2025 to help consumers more quickly and easily compare the nutritional quality of packaged foods (U.S. Food and Drug Administration, 2025). FOPL is gaining attention as a way to encourage healthier eating habits and consumer choices, but there is still debate over which label format works best. The objective of this study was to examine consumer perceptions, understanding, and trust of FDA FOPL, and to determine how these labels impact purchasing behavior and nutritional decision-making. Introduction: Multiple barriers exist to healthy and environmentally sustainable food choices. Limited consumer understanding of the health and environmental implications of food choices complicates their abilities to make choices that lead to desired outcomes. The complexity of the retail environment itself may crowd out less immediate motivations to address health or environment. Even if consumers understand general impacts of food choices on health and environmental outcomes, there may be non-negligible time and search costs to identifying the products that meet consumers’ needs. Diet-related diseases impact populations across the globe. While intertemporal preferences—a fundamental preference for the distribution of benefits across time—have been used to explain low-quality food choices, the recent literature proposes another cause: inattention to the future implications (or opportunity costs) of the options faced. Food choices tend to become habitual to conserve cognitive resources, rather than carefully modeling future health impacts. Both low discount rates for future benefits and attention to future health impacts predict healthier decisions. While intertemporal preferences are stable, attention may provide an opportunity to intervene in the decision process to promote healthier decisions. In this study, …

Many choices that people face daily have implications for future health and well-being. Choices about what foods to purchase and consume are one of the most frequent—and universal choices—that people must make. The ongoing rise of overweight and obesity rates—and associated diet-related diseases—in the US and many other countries illustrates the future health consequences of low-quality dietary choices. While a large body of research shows that individuals with a tendency to consider the future make a wide range of healthier decisions, research on limited attention and exogenous factors influencing choice suggests that attention to the future consequences of choices may …

Food insecurity is a growing issue in developing and developed countries alike, and in countries like Belize, the prevalence of hunger has soared in recent years. Not having access to diets with sufficient calories and nutrients leads to a host of developmental issues, including stunting and cognitive delays. The purpose of this work was to create an all-encompassing manual for small-scale poultry production in order to provide nourishment for the students and staff of a school in Belize. In 2017, Mozambique ranked as one of the least developed countries in the world by measures of health, education, and income. With a minimal annual income, purchasing adequate food to meet recommended levels of nutrients for a healthy diet is difficult, leaving 40% of the country undernourished. This study analyzed what foods are available during the dry months (hungry season) of May through October in the Nampula province of Mozambique to determine if it is possible to meet recommended levels of nutrients from purchasing and growing food. The Double Your Dollar (DYD) Program is a program that gives Supplemental Nutrition Assistance Program (SNAP) beneficiaries and Senior Farmers Market Nutrition Program (SFMNP) participants match dollars to spend at local farmers markets. The DYD’s goal is to incentivize healthy eating among individuals of low income and promote spending at farmers markets. Food insecurity affects over 60,000 individuals in Washington and Benton counties in Arkansas. Livestock, animals raised in confinement, animals in large numbers shipped to other countries, and, of course, those cattle, calves, sheep, swine, goats, poultry and horses raised for the purpose of supplying meat for human and animal consumption will present problems that will increase in importance as long as they exist.

Humane problems involving livestock are a hundred times more important and much more complex today than they were a hundred years ago. What can societies do to prevent or reduce this reservoir of potential cruelty? I think we can do many things.
