Among all the sectors, the hospitality and tourism sector has been detrimentally affected by the impact of the COVID-19 pandemic. This research aimed to determine how changes have been experienced specifically in the Turkish tourism higher education and tourism sector. Twenty-seven academics from the hospitality and tourism education departments were interviewed. Most agreed that restrictions have limited student access to hands-on practical courses and internships, which are crucial to developing necessary competencies. Culinary arts school have been created to supplement the hospitality industry’s workforce need. However, in recent years with decline in enrollment and the increased number of successful chefs that do not have a culinary background poses the question of the relevance of culinary art schools. This research paper attempts to identify the significance of formal culinary education in the industry or if simply the information taught requires an update according to the recommendations of culinary professionals. The framework consists of secondary research and findings will clarify and reinforce the need for culinary art schools and the improvement of their curriculum.

We explored an undergraduate business program’s navigation of an unplanned change, response to the Covid-19 pandemic-occasioned move to online learning, and the resilience of its curriculum by following cohorts of students through two consecutive courses from the end of 2019 through 2020 up to summer 2021. The exploration was aimed at the assessment of the impact of the pandemic-induced disruptions, i.e., how the school’s curriculum fared through the pandemic. Premised on the school’s accreditor, AACSB’s agility-cultivating curriculum guideline, the curriculum should adapt and stabilize post-pandemic. Emotional Intelligence (EI) may be more important to the success of college students than cognitive intelligence and technical skills combined. Recent research has primarily focused on EI in the workplace. However, implications for improving EI skills of college undergraduate students before they enter the workforce appears to be lacking. This quantitative research examined the Emotional Intelligence levels of five different majors to identify differences based on area of study, gender, or other demographic factors. The Physiology Majors Interest Group (P-MIG), a grassroots organization of educators, has collected data on the history and characteristics of Physiology and highly related undergraduate programs (ex: Human Biology, Pre-Medicine, Biomedical Sciences, etc.) that serve a common population of prehealth students. Data was obtained as part of an online survey sent out to P-MIG conference attendees at the 2017-2019 annual meetings (n=30). Participating institutions indicate that 25.9% have degrees called Physiology aligned with 28% being housed in a department of physiology, 75.9% are a Bachelor of Science program, 34.9% are affiliated with a College of Arts and Sciences, and 80% …

International business education (IBE) scholarship is extensive and is continuously growing. Nevertheless, to date there is no systems perspective overview of the literature dedicated to this topic. Using latest advancements in scientometric analysis, this study structures and visualizes the entire IBE scholarship, which allows to identify gaps in research and propose a number of future research directions. Emotional labor is integral to guest-host interactions. Given that this is a competency that is desired by industry in graduates, it is important to understand how the concept presents in the Hospitality and Tourism curriculum. This exploratory qualitative study sets out to investigate how hospitality and tourism educators perceive the development of emotion skills in Hospitality and Tourism education curriculum. Data was collected through in-depth interviews with higher education hospitality and tourism educators in Australia. Findings reveal that the development of emotion skills is a taken for granted concept that is not explicitly addressed within the curriculum. Implications for practice …

In 2013, roughly 7% of college graduates under 25 could not find employment, and about 37% were underemployed. Public university tuition costs increased by 42% between 1999 and 2012, and 71% of college graduates have an average of $29,400 in outstanding student debt. Employers for several decades have complained about how higher educational institutions have failed to deliver graduates with developed nontechnical skills comprising (a) work ethic, (b) communication, (c) organization, (d) problem solving, and (e) teamwork. In response to changing market demands for marketing graduates, our university’s Department of Marketing began a major revision to its MS Marketing program. With input from faculty, administrators, students, industry contacts, and MS directors at peer institutions, the department developed a vision for the program that emphasizes “real-world” experiences and career support. This paper presents the research and decision-making that led to a new vision for the program, as well as the process that will be used to implement this vision.

Undergraduate degree programs named “Physiology” have existed for over 50 yr. The number of programs and enrolled students have been growing since ~2005 (5, 9). There are many thousands of students currently enrolled in physiology pro- grams across the United States and indeed across the world. This article examines internship courses in undergraduate hospitality management programs in the Southern Association of Colleges and School Commissions on Colleges (SACSCOC) region. The purpose of this article is to examine how internship course curriculum compares to the industry employers’ internship expectations. The results show the disconnect between curriculum for internship courses and what industry employers desire for internships. The findings show that undergraduate hospitality management programs in the same region vary in requirements, and these requirements do not meet industry employers’ internship expectations.

Problem: Genomics in undergraduate nursing education has experienced slow adoption in the United States. Various approaches have been proposed but do not address barriers to successful implementation.
Methods: A strategic plan was developed to increase the amount of genetics and genomic content in the curriculum of an undergraduate nursing program. A gap analysis was performed on the curriculum revealing a paucity of content. A SWOT analysis informed the strategic plan, which included a faculty education program using the ANA/ISONG’s Essentials of Genetic and Genomic Nursing: Competencies, Curricula Guidelines and Outcome Indicators (2nd ed.) (2009) as a foundation.

For college undergraduates, the thought of managing money is often new, exciting, and terrifying in the same breath. Some students have learned well from their parental and prior academic influences, and yet others may be overwhelmed by a lack of those same resources. Everything needed to facilitate a My Pop-Up Shoppe experience where students will take part in a hands-on, real-life entrepreneurial journey is included. During My Pop-Up Shoppe, students will receive a product provided by the facilitator, school or organization and be challenged to turn the product into a running business with real sales and customers. Purpose – This study aims to identify the content in introductory business sustainability courses in the USA to determine the most frequently assigned reading material and its sustainability orientation. Design/methodology/approach – In total, 81 introductory sustainable business course syllabi reading lists were analyzed from 51 US colleges and universities. The study utilized frequency counts for authors and readings and R analysis of key words to classify readings along the sustainability spectrum. There is hardly an established university anywhere in the world that does not have, or aspire to have, an MBA program. Few universities, however, have dedicated Executive MBA (EMBA) programs and of those universities that do, there is much confusion regarding what constitutes an EMBA. For example, some university providers suggest that an EMBA is simply an extension of the full-time MBA program that is offered to part-time students. Other university providers claim that an EMBA is a stand-alone and differentiated program, consisting of a bespoke curriculum, designed for the mature executive.

The Commission on Sport Management Accreditation (COSMA) has identified experiential learning projects as an integral element to be included in sport management curriculum (COSMA, 2016). However, often the experiential learning opportunities offered by sport management programs are limited to a required internship experience (Foster & Dollar, 2010). While internship programs have been widely accepted and implemented by sport management programs (Eagleman & McNary, 2010), there is little evidence of the implementation of other experiential learning practices within sport management programs. The emergence of Augmented Reality (AR) as a ground-breaking technology has transcended both business and academic sectors. Despite its rapid rise commercially, evidence of the benefits of AR in the classroom at higher education is slower to emerge, with only a limited focus to date on its specific relationship with curriculum development and learning outcomes.
