An Evaluation Of Three Nutrition Labeling Formats For Restaurant Menus, Li Ge, Carl Behnke, Barbara Almanza
Hospitality Review
This study evaluated three menu nutrition labeling formats: calorie only information, a healthy symbol, and a nutrient list. Daily sales data for a table-service restaurant located on a university campus were recorded during a four-week period from January to February 2013 to examine changes in average nutritional content of the entrees purchased by customers when different nutrition labels were provided. A survey was conducted to assess the customers’ use of nutrition labels, their preferences among the three labeling formats, their entree selections, their cognitive beliefs with regard to healthy eating, and their demographic characteristics. A total of 173 questionnaires were …

Hospitality Graduate Students’ Program Choice Decisions: Implications For Faculty And Administrators, Hubert B. Van Hoof, Luorong Wu, Lu Zhang
Hospitality Review
Despite rapid growth in the quality and volume of hospitality graduate research and education in recent years, little information is available in the extant body of literature about the program choices of hospitality management graduate students, information that is crucial for program administrators and faculty in their attempts to attract the most promising students to their programs. This paper reports on a study among graduate students in U.S, hospitality management programs designed to understand why they chose to pursue their degrees at their programs of choice. Given the large numbers of international students presently enrolled, the study additionally looked into …
The Effects Of Implementing Cow Cooling For Oostdam Dairy: Benefits From Milk Production, Feed Intake, And Reproduction, Mark Oostdam
The Effects Of Implementing Cow Cooling For Oostdam Dairy: Benefits From Milk Production, Feed Intake, And Reproduction, Mark Oostdam
Dairy Science
Heat stress has a major effect on management decisions for a dairy operation because of the decrease in the cows productivity. Dairy cattle loose efficiency of economic production due to lower milk yields and decreased pregnancy rates. Milk loss due to heat stressed cows in California averages a loss of 293 kg of milk/cow/year(St.-Pierre et al., 2003), and with milk prices reaching record highs, dairies are losing out on increased revenue opportunity. Increases in reproductive infertility from heat stress also affect revenue for a dairy operation by reducing conception rates (Hansen 1997) and pregnancy rates, which causes the average days …

Psychological Contracts In Information Exchanges, Stanislav Mamonov
Psychological Contracts In Information Exchanges, Stanislav Mamonov
Dissertations, Theses, and Capstone Projects
Information assets continue to grow in importance of contribution to economic activity. Many emergent businesses, including Google, Amazon and Facebook, leverage crowd-sourced information assets as essential pillars supporting their business models. The appropriation of rights to information assets is commonly done through legal contracts. In practice this approach often fails to prevent conflicts between the information contributors and the companies claiming information rights. In research presented here I attempt to understand when and why the conflicts arise. I draw on psychological contract theory and I develop the framework of psychological contracts in information exchanges. I propose that intellectual property and …

The Effects Of Food Safety Standards On Trade And Welfare: The Case Of Eu Shrimp Imports, Xiaoqian Li
The Effects Of Food Safety Standards On Trade And Welfare: The Case Of Eu Shrimp Imports, Xiaoqian Li
Theses and Dissertations--Agricultural Economics
This research explores the link between a gravity model and welfare frameworks and then applies the quantitative model system to analyze how trade and welfare is affected by the Minimum Required Performance Limits (MRPL) in the shrimp importing market of European Union.
The quantitative model system consists of two parts: first, this study uses the “phi-ness” gravity model to investigate the trade effects of MRPL on EU shrimp market. The “phi-ness” gravity model partitions the standard variables to avoid biased estimation caused by the correlation between time and country fixed effects and policy variables. The Poisson Pseudo Maximum Likelihood (PPML) …
