The aim of this study is to map out the gastrocritical approach, using Irish literature and writing to test its premises, and to provide a vade mecum for its practical application, particularly for interdisciplinary scholars. The gastrocritical approach furnishes a “culinary lens” for reading food and foodways in imaginative texts, informed by work in the field of food studies and gastronomy. The approach was broadly characterised by Tobin in 2002, but only sparsely used since. This research project explores the influence of floral decorations on the experience of a diner in a food setting in contemporary Ireland by examining what and how dining experiences are designed, where floral decorations are relevant in this context and how they specifically influence people in these settings.

In this thesis, three cycles of design based research are outlined, implementing a situated immersive virtual reality game for Irish language learning. Calculating Restaurant Failure Rates Using Longitudinal Census Data, J. J. Healy, Máirtín Mac Con Iomaire

Failure rates in the restaurant industry are popularly perceived to be far higher than they actually are. This paper calculates failure rates in the Irish Food and Drinks Sector (IFDS), for the first time, using longitudinal census data from the Central Statistics Office (CSO) in Ireland, which follows the European statistical classification of economic activity (NACE). The results are compared with previously published literature on restaurant failure rates in the United States of America. This study also compares IFDS failure rates with other industry sectors in Ireland (construction, manufacturing). An Investigation Of Irish Culinary History Through Manuscript Cookbooks, With Particular Reference To The Gentry Of County Kilkenny (1714-1830), Dorothy Cashman

This thesis argues that Irish culinary manuscripts have a significant contribution to make to an understanding of Irish culinary history. It does so by identifying one particular manuscript, NLI MS 34,952 (Baker) as being representative of the genre but singular in terms of the archival and literary support available for an in-depth study. Analysis of the manuscript is undertaken using a methodology devised by the culinary historian Wheaton for researchers attending her workshops at Radcliffe College, Harvard. People have become obsessed with the harmful effects of eating (Rozin, 1999) and are experiencing ‘food anxiety’, a by-product of modern food. The aim of this research was to explore the nature of food anxiety in Ireland and the potential implications for the food sector.
