Urban gardens can be a part of the combined efforts of many to combat climate change and the associated risks posed by rapid urbanisation. These gardens can take shape on private, communal, or institutional scales, including urban educational campuses, where the teaching of sustainable gardening along with general knowledge about nature and ecology can benefit students, staff, and the wider community. How I Became A Food Historian: Looking Back On All Manners Of Food, Stephen Mennell

The author’s book All Manners of Food was published in 1985 and was well received by historians and (to a lesser extent) by sociologists. In this essay, he reflects on how, having begun his academic career mainly as a sociological theorist, he came to write a large book about the history of food in England and France. In particular, he traces his intellectual debt, in writing this book, to Norbert Elias.

Harnessing Ireland’S Food Heritage – The Role Of The Artisan Food Producer In Ireland’S Food Tourism Offering, Margaret Connolly, Rebecca O'Flynn

This research paper examines the role of the artisan food producer, not just as an entrepreneur and service provider but with a focus on how they contribute to the preservation of Ireland’s food culture and heritage. Using a qualitative methodology and in keeping with a phenomenological approach, in-depth interviews were conducted with a purposeful sample of ten artisan food producers from different parts of Ireland. A thematic analysis of the responses was carried out, with a desire to let the voice of the artisans themselves tell their story. Previous studies have found that professionalism is an important success factor for chefs. Yet, research on what professionalism “means” to chefs, and how they “make sense” of it, is currently underexplored. While there is some evidence of the significance of the traditional chef’s uniform in professional identity formation, it also needs further consideration. Culinary arts lecturers and chefs have already contributed to these discussions, but the student voice remains largely unknown. Alongside this, there is no prior research specifically on professionalism in culinary arts in Ireland. Therefore, a research gap emerged, which this paper intends to address. The Literary Gestalt Of The Restaurant Review, Anke Klitzing
European Journal of Food Drink and Society
The restaurant review is a quintessential form of gastronomic writing, but it has rarely been studied in terms of its literary form. This paper investigates the literary gestalt of restaurant reviews through a gastrocritical reading of two reviews by the Irish restaurant critic Helen Lucy Burke. It concludes that restaurant reviews typically include mimesis and evocative descriptions, a meal plot, inherent tension due to the performance character of the restaurant meal and incorporation anxiety, and a combination of phenomenological and ethnographic reporting. The Hebrew Bible (Tanakh) contains a wealth of stories reflecting life in the ancient world including struggles and wars that prove(d) traumatic. It is shown time and again that history repeats itself, and the stories of the Bible reappear in the modern world, both real and (crime) fictional. In this paper, traumatic experiences associated with the German pastor Dietrich Bonhoeffer as well as the fictional character DI John Rebus created by the crime writer Ian Rankin, are linked with similar incidents recorded in the Tanakh. Giving Voice To Australia’S Professional Tour Guides: Perspectives Of Their Social Identity, Birgitta E. March Mrs, Kim Williams Dr, Caroline Winter Dr
International Journal of Tour Guiding Research
Professional tour guides (PTGs) play an instrumental role in Australia’s tourism industry, however, there is little understanding of their perspectives regarding their challenges, expectations, belonging, and recognition. Anecdotal evidence suggests that they lack a voice and feel neglected within the tourism industry. This study adopted an interpretivist approach to capture the voices and perspectives of 19 Australian PTGs, through focus group discussions and one-on-one interviews. This qualitative study was seen through the lens of Tajfel’s Social Identity Theory (1974). The Annals is a 273-page book printed by DataPrint Athy containing ten parts authored by locals and edited by Anne Murphy, Mark Wall and Clement Roche. The three main themes of the Annals relate to industrial heritage, agricultural heritage and sporting heritage. Additional parts are allocated to significant local personalities including J. J. Bergin, Juan Greene, John Wortley, Annamay McHugh and the Bramley family. One part considers a plan to grow flax locally to produce sailcloth for the English navy in its fight against Napoleon! The final part lists the residents of the main streets in 1916 and 2016.

A series of case studies outlining the application of virtual reality and digital technologies for cultural heritage is presented in this article with an aim to examine the role for community engagement and SMEs in cultural heritage within a digital context. Digital technologies can be a repository and tool for telling local stories in relation to place and time on site and virtually off-site. In a series of case studies, tools and technologies for virtual reality experiences are outlined to identify the appropriate tools which can best facilitate this community engagement. The emphasis placed on the baking of traditional soda-bread in a Bastable oven on the open hearth has created a charming image of spartan self-sufficiency throughout rural Ireland in the nineteenth and early twentieth centuries. But shop-bought bread, produced in small-scale commercial ovens located in villages and towns, was a common item of both rural and urban diet throughout the nineteenth century. This paper explores both the means of production and the possible scale of production in a cluster of villages in the Blackwater valley in the west of county Waterford. Patterns Of Consumption At The Uk’S First “Alcohol-Free Off-Licence”: Who Engaged With No- And Low-Alcohol Drinks And Why?, Claire G. Davey

No- and low-alcohol beverages are currently experiencing high sales growth in the UK, but academic research regarding the production, regulation, marketing and consumption of these drinks remains limited. This article presents research findings from ethnographic customer observations and semi-structured staff interviews at Club Soda’s temporary “alcohol-free off-licence” in London – the UK’s first shop that sold exclusively no- and low-alcohol drinks. I analyse the demographics of who came to the off-licence, and how and why they engaged with no- and low-alcohol drinks. Findings suggest that relatively equal numbers of non-drinkers and current drinkers were customers of the off-licence, but there …

This article explores the foundations upon which to build innovation and further professionalise the tour guiding sector in an Italian context. It is based on a cooperation initiative started in March 2020 just at the beginning of the Covid-19 pandemic which proposes smart city tours as innovative, sustainable, and creative ways to (re)discover urban environments with the expected impact to make tour participants think, influence post-tour behaviour towards sustainability, and to provide a differentiated view of a visited place. Global tourism was hit hard by the Covid-19 pandemic, but an exception can be seen among walking tour companies providing tours for locals in Budapest, who saw a rise in demand for their tours during the summer and early autumn of 2020. During pre-pandemic times tourism levels broke records annually, and one of the main concerns was overtourism in certain cities, but due to COVID-19, international arrivals hit record-lows and millions of jobs became endangered. The Maltese islands barely cover an area of 300 square kilometres and yet, they enjoy a varied landscape characterised by cliffs, ridges, hills and valleys. There are over a hundred valleys on the main island of Malta and many provide important waterways during the rainy season and present some of the most beautiful and varied scenery. This paper analyses the development of social policies in Malta, with a particular focus on events which have impacted on the country’s growth and subsequently on its social security system and policies involving housing, health, education migration and employment. In recent decades, with costs to sustain an ever-growing web of social services becoming more demanding, governments have tried to encourage more self-help and to lessen the heavy dependence on aid structures within the system, pushed at times by recommendations from regional and international institutions.
