[[Objective ]] This study aimed to investigate the effect of brown rice particle size on the quality of brown rice noodles. [[Methods ]] Brown rice flours with average particle sizes (D[4,3]) of 370,86,62,47,and 30 μm were prepared using low -temperature impact milling.Noodles were made from each flour,and their starch short -range ordered structure,crystalline structure,cooking quality,and texture properties were analyzed. [Objective ] The purpose of this study is to improve the quality of boiled spicy pork slices and promote standardized and industrialized production.[Methods ] The changes of volatile flavor substances in boiled spicy pork slices were analyzed by gas chromatography-mass spectrometry (GC-MS ).The contents of the main volatile flavor substances were calculated by adding internal standard substances,and the odor activity value (OAV ) was used to determine the key volatile flavor substances in samples.[Results] 136 volatile flavor substances were identified in samples.The number of volatile flavor substances in samples during slicing,curing,boiling,and pouring oil was 57,66,57 and 63 respectively.Ketones ’ contents …

Effects Of Glycosylation Combined With Tannic Acid Modification On The Emulsification Properties Of Molten Globule Egg White Protein, Wan Jun, Zhang Xiaoqin, Deng Bowen, Ai Minmin, Xie Zhequan

[Objective] This study aimed to develop a modification method to stabilize emulsions using molten -globule state egg white protein (MGEWP ).[Methods] MGEWP was prepared through partial denaturation of egg white protein via pH induction.The synergistic effects of D-xylose and tannic acid on the emulsifying properties of MGEWP were analyzed.[Results]] Increasing tannic acid concentration significantly elevated the turbidity and browning degree of D-xylose glycosylated MGEWP (X-MGEWP ) (P<0.05).Tannic acid facilitated the unfolding of X -MGEWP,exposing free sulfhydryl and active groups,which enhanced molecular flexibility,apparent viscosity,storage modulus and loss modulus (P<0.05).However,under extreme pH value treatment,the active groups of MGEWP were passivated,inhibiting the Maillard reaction with D-xylose.As a result,there was no significant difference in emulsification properties between glycosylated X -MGEWP and untreated MGEWP (P>0.05).The addition of tannic acid enhanced the emulsifying activity of X -MGEWP obviously (P<0.05),and it was dose -dependent with tannic acid concentration.[Conclusion] The synergistic modification of MGEWP with D-xylose/tannic acid represents a promising method for enhancing the emulsifying properties of MGEWP,offering potential applications in emulsion stabilization.

Allostatic load (AL), the cumulative physiological burden of chronic stress, is a significant health problem, and it has been associated with adverse health outcomes, including cognitive functioning. There is a paucity of literature examining associations between AL and incident dementia in the United States. This quantitative study used data from the United States Health and Retirement Study cohort (2016-2020) to examine the association between AL quartile and incident dementia among participants who were aged 56 and older at baseline. The COVID-19 pandemic posed unprecedented challenges to public health worldwide, significantly impacting vulnerable populations like obese men in the United States. This qualitative descriptive study involved exploring how these men perceived the pandemic’s impact on their physical and mental health, addressing a critical gap in existing literature. The research question that guided this study was: How did obese men living in the United States perceive the stressor that was the COVID-19 pandemic on their physical and mental health? The Norfolk Southern train derailment on February 3, 2023, in East Palestine, Ohio, prompted concerns about the health impacts from the chemical spills and open-air combustion. We hypothesize that the combustion of chemicals, including vinyl chloride, in the presence of transition-metal oxides from the train, tracks, and soil minerals were conducive to the formation of hazardous byproducts including environmentally persistent free radicals (EPFRs), dioxins, and furans. We also hypothesize that these harmful byproducts of combustion have a shared origin and thus will have elevated concentrations in soil samples collected close to the derailment site when compared to concentrations in background …

Multiple myeloma is a clonal plasma cell (PC) dyscrasia that arises from precursors and has been studied utilizing approaches focused on CD138+ cells. By combining single-cell RNA sequencing (scRNA-seq) with scB-cell receptor sequencing (scBCR-seq), we differentiate monoclonal/neoplastic from polyclonal/normal PCs and find more dysregulated genes, especially in precursor patients, than we would have by analyzing bulk PCs. To determine whether this approach can identify oncogenes that contribute to disease pathobiology, mitotic arrest deficient-2 like-1 (MAD2L1) and S-adenosylmethionine synthase isoform type-2 (MAT2A) are validated as targets with drug-like molecules that suppress myeloma growth in preclinical models. Approximately 30% of patients with chronic myelomonocytic leukemia (CMML) undergo transformation to a chemo-refractory blastic phase (BP-CMML). Seeking novel therapeutic approaches, we profiled blast transcriptomes from 42 BP-CMMLs, observing extensive transcriptional heterogeneity and poor alignment to current acute myeloid leukemia (AML) classifications. BP-CMMLs display distinctive transcriptomic profiles, including enrichment for quiescence and variability in drug response signatures. Integrating clinical, immunophenotype, and transcriptome parameters, Random Forest unsupervised clustering distinguishes immature and mature subtypes characterized by differential expression of transcriptional modules, oncogenes, apoptotic regulators, and patterns of surface marker expression. [Objective ] To investigate the mechanism of the effect of deproteinisation on the physicochemical and functional properties of rice flour.[Methods ] Enzymatic and alkaline methods were used to remove protein from early rice flour,and the damaged starch content,size distribution,morphology,solubility,swelling power,pasting characteristics and textural characteristics of the deproteinized rice flour were analyzed.[Results] Sodium dodecyl sulfate -polyacrylamide gel electrophoresis (SDS -PAGE ) and confocal laser scanning microscope (CLSM ) showed that the alkaline method equally removed the protein subunit where as the enzymatic method showed a better homogeneity of protein removal from the surface of starch.The size distribution of the control showed …

Dextran is a kind of microbial polysaccharide consisting of a glucose chain linked by α-1,6-glucoside bond.Its application research has been carried out in many food fields.In this review,the structure and function analysis of new sources of dextran and the research trend of producing bacteria in recent years were summarized,and the research status of innovative applications of dextran in the field of protein deep processing,bread baking,prebiotics,etc.,were described.The existing problems in current research and policy and future research directions were also discussed.

Astaxanthin is widely used in food,feed,cosmetic and pharmaceutical fields due to its biological activity and color characteristics,among which natural astaxanthin has a huge market demand in recent years due to its higher antioxidant activity and safety.In this review,the extraction methods of natural astaxanthin from crustacean aquatic products were summarized,including pretreatment as well as specific extraction techniques,such as oil solubilization,organic solvent method,supercritical fluid extraction,emerging ionic liquid method and deep eutectic solvent method.Moreover,the current problems in the extraction of natural astaxanthin were analyzed and the future research direction was pointed out.

Lynch syndrome (LS), caused by inherited mutations in DNA mismatch repair genes, including MSH2, carries a 60% lifetime risk of developing endometrial cancer (EC). Beyond hypermutability, mechanisms driving LS-associated EC (LS-EC) remain unclear. We investigated MSH2 loss in EC pathogenesis using a mouse model (PR-Cre Msh2LoxP/LoxP, abbreviated Msh2KO), primary cell lines, human tissues, and human EC cells with isogenic MSH2 knockdown. By 8 months, 58% of Msh2KO mice developed endometrial atypical hyperplasia (AH), a precancerous lesion. Extracellular vesicles (EVs) are cell derived nanovesicles which are implicated in both physiological and pathological intercellular communication, including the initiation, progression, and metastasis of cancer. The exchange of biomolecules between stromal cells and cancer cells via EVs can provide a window to monitor cancer development in real time for better diagnostic and interventional strategies. In addition, the process of secretion and internalization of EVs by stromal and cancer cells in the tumor microenvironment (TME) can be exploited for delivering therapeutics. Fluridone was registered for use in rice production in 2023, offering a new herbicide site of action for growers. However, little information is available on the degree of rice tolerance to this herbicide. Field experiments conducted in 2022 and replicated in 2023 near Colt, AR, evaluated the tolerance of 12 rice cultivars to fluridone, applied preemergence or at the 3-leaf growth stage, in separate experiments. Background/Objectives: Lithium is the gold standard for treating Bipolar Disorder (BD), but its effectiveness varies widely. While clinical and environmental factors may influence response, it remains unclear if screening tools can reliably predict lithium response outcomes. This study explores this potential using two widely used screening instruments for BD.
Methods: A total of 146 patients with BD were evaluated. Lithium response was assessed using the Alda Scale, while hypomanic and manic symptoms were characterized through the Hypomania Checklist-32 (HCL-32) and the Mood Disorder Questionnaire (MDQ). Background: Whether testosterone replacement therapy (TRT) conveys additional cardiometabolic benefit to an intensive lifestyle therapy (LT) in older men with obesity and hypogonadism remains unclear.
Objective: To determine whether TRT augments the effect of LT on metabolic outcomes in older men with obesity and hypogonadism.
Design: Secondary analysis of a randomized, double-blind, placebo-controlled trial.
Setting: Veterans Affairs Medical Center.
