The Bacteria Who Lived: Uncovering And Mitigating The Persistence Of Pathogens In Low-Moisture Food Processing, Kavita Shripati Patil

Low-moisture food (LMF) processing environments pose a persistent food safety risk due to Salmonella survival and harborage on surfaces. This work investigates persistent bacterial populations (PBPs) in LMF production environments, focusing on identifying a suitable surrogate and evaluating sanitation strategies. Three potential surrogates, Escherichia coli MP 26, Enterococcus faecium, and Pediococcus acidilactici, were compared to Salmonella PBPs formed in nonfat dry milk (NFDM) on stainless steel coupons stored at 25°C under 30% or 70% relative humidity (RH) using two different inoculation methods. E. faecium showed survival patterns most similar to Salmonella, with no significant differences in log reductions (p > 0.05), …

Employers in all industries are concerned with creating and maintaining a workplace where their employees are engaged in their work. Job dissatisfaction is shown to lead to higher levels of turnover, absenteeism, and presenteeism. The purpose of this quantitative study will be to examine the connection between workplace wellness activity participation and job satisfaction, specifically for manufacturers in Southwest Missouri, Southeast Kansas, and Northeast Oklahoma. Septic arthritis is a severe joint infection that can rapidly destroy cartilage and cause lifelong disability if not diagnosed and treated promptly. Faster, bedside diagnostic tools are needed to reduce delays and support timely treatment decisions while preserving standard laboratory workflows. A syringe-mounted diffuse reflectance spectroscopy (DRS) system was developed for rapid, sterile, point-of-care measurement of synovial fluid optical properties. Broadband light (400–650 nm) was delivered and collected through the syringe barrel without contaminating the sample. This research examines Postclassic Maya food practices during CE 1200–1600 to understand how eating behaviors reflect systems of social hierarchy, political economy, and cultural identity. The investigation focuses on four archaeological sites in the northern Yucatán Peninsula—Tulum, El Rey, El Meco, and San Miguelito—to examine dietary behaviors through dental microwear texture analysis (DMTA), oral pathology, and stable isotope data within a biocultural framework. The research aims to identify whether elite and non-elite individuals exhibited notable variations in food texture consumption, access to resources, and nutritional health. Pasture-raised broiler chickens face temperature extremes that can threaten welfare. In the study, we evaluated whether a 0.26 % tryptophan-supplemented diet (T) improved heat stress (HS) resilience in Ross-708 broilers raised on pasture. At D14, birds began the T or remained on the control diet (C) and were moved outdoors. On D20 and 41, half of each group underwent six-hour HS; the remainder stayed under thermoneutral (TN) conditions. Weekly body weight, feed intake on D20 and D41 were recorded, and fear was measured using the Tonic Immobility (TI) test. Neither diet nor HS affected body weight. Abstract The poultry industry has implemented numerous methods, as marination and aging, to improve meat quality and satisfy consumer demands. Three experiments were developed to assess the effects of vacuum tumble marination and aging on the proteins of chicken breast. These experiments utilized 0.75 % sodium chloride, 0.45 % phosphate, and water in a marinade. In experiment one, 270 fillets were allocated into six treatment groups, each comprising 45 fillets. Six days of storage time were used, marinating and storing the fillets in each group at a temperature of 4°C. Following each day of storage period, the fillets underwent a …

Colorectal cancer is one of the most fatal diseases in the United States. Chronic tissue inflammation can cause cell proliferation, which leads to tumor formation and cancer development. Macrophages are responsible for maintaining tissue homeostasis and for inflammatory responses. M1 macrophages exhibit proinflammatory responses while M2 macrophages exhibit anti-inflammatory responses. Imbalance between M1 and M2 macrophages is closely related to inflammation-associated disease development. The anti-inflammatory effects of apiaceous vegetable constituents, specifically flavonoids, have been studied for their preventative effects towards reducing disease risk. This dissertation evaluates the performance of three on-farm swine carcass disposal methods: whole carcass composting (WCC), ground carcass composting (GCC), and shallow burial with carbon (SBC), focusing on biosecurity factors and groundwater contamination risks. Foreign animal diseases (FADs), such as African swine fever and classical swine fever, pose severe economic and animal well-being risks if introduced to the United States. With confirmation of an FAD, swine movement will be halted, creating an urgent need for practical, biosecure, and environmentally responsible on-farm disposal strategies for swine carcasses. Food science provides an opportunity to engage high school students in Science, Technology, Engineering, and Mathematics (STEM) by connecting classroom concepts to real-world applications. Despite the field’s relevance to public health, food safety, sustainability, and innovation, food science remains largely absent from high school curricula, and few students recognize it as a viable STEM pathway. This research addressed this gap by evaluating immersive summer camp experiences and teacher-focused curriculum review as strategies to increase food science awareness and interest among students and educators. Per- and polyfluoroalkyl substances (PFASs) have gained significant attention due to their widespread distribution in the environment and potential adverse health effects. While ingestion, especially through contaminated drinking water, is considered the primary route of human exposure, recent research suggests that other pathways, such as inhalation and dermal absorption, also play a significant role. Abstract
Objectives: Perimenopause has been associated with increased anxiety symptoms. However, data is lacking regarding the experiences of women with perimenopausal anxiety and the contributing factors to worsening anxiety symptoms. We explored the experiences of women with self-reported new onset or worsening of anxiety symptoms during perimenopause to better understand contributing factors.
Study design: Twenty women participated in one-on-one interviews to explore experiences of perimenopausal anxiety in the context of their daily lives and perimenopausal physical changes. Inductive thematic analysis was used to develop codes and themes from the transcribed interview data. Analysis was done using MAXQDA software.

The study examined the relationship between socioeconomic status (SES) and Special Education identification in rural Minnesota schools, focusing on Specific Learning Disabilities and Other Health Disabilities, to determine whether students from lower-income backgrounds are disproportionately identified for Special Education services. Data were collected from five rural Minnesota public schools, analyzing student-level demographic and eligibility data from the 2022–2023 school year. Descriptive statistics, Pearson’s correlation analysis, and ratio calculations assessed the relationship between SES, indicated by free/reduced-price lunch eligibility, and Special Education identification rates. Indigenous gut health is a critical but often overlooked determinant of overall well-being. Gut health encompasses digestion, nutrient absorption, immune function, and the balance of the microbiome. Indigenous communities face unique challenges related to geography, food access, and the legacy of colonization, all of which affect dietary diversity and microbiome health. Drawing from the Health Belief Model, this project proposes a culturally responsive, education-based intervention to increase awareness of fiber-rich diets and their role in preventing chronic disease. U.S. laws, policies, and practices have been implemented to reduce forms of overt racism and discrimination. These structural barriers have been effective (e.g., Dovido & Gaertner, 2000; McConahay, 1986; Sue & Sue, 2007). Covert forms of racism, however, including racial microaggressions, are more difficult to address using structural changes and, therefore, continue to thrive (Omi & Winant 1994; Sue et al., 2007). Introduction: Neuromuscular electrical stimulation (NMES) has shown promise in improving glycemic outcomes in supervised, laboratory-based settings. However, its feasibility and effectiveness in real-world, community-based applications remain underexplored, particularly among sedentary, overweight/obese individuals at risk for type 2 diabetes (T2D). This study aims to assess the feasibility and effectiveness of self-administered NMES use on glycemic control and substrate utilization among sedentary, overweight/obese population with hyperglycemia. Several studies have reported the link between diabetes, cardiovascular disease, hypertension, and obesity as risk factors for the onset of chronic kidney disease (CKD), ultimately leading to renal replacement therapies such as dialysis and kidney transplantation. Although extensively researched in adults aged 55 years and older, CKD remains under-researched for young adults. Concussions and traumatic brain injury (TBI) remains a significant public health concern, especially in American football, where repeated head impacts pose long-term risks to athlete health. While current helmet testing standards rely heavily on the Hybrid III surrogate headform to evaluate protective performance, these surrogate models lack anatomical accuracy and exclude the presence of a brain component, limiting their ability to capture the true mechanics of concussion. Artificial reefs are deployed to enhance marine habitats and fisheries, yet their role in supporting secondary production and their vulnerability to climate stressors remain understudied. This dissertation investigates the trophic ecology and climate sensitivity of benthic invertebrates at artificial reefs in the northern Gulf of Mexico. Chapter 1 assessed reef food webs using stable isotopes from fishes, invertebrates, and primary producers across six reefs and two seasons. Mixing models showed that most fishes rely on benthic reef carbon, while suspension feeders consume plankton and sediment microphytobenthos. Isotopic niche analysis revealed functional diversity and seasonal shifts in δ¹³C and δ³⁴S, though …

Breast cancer remains one of the most prevalent diseases worldwide, yet therapeutic equity is still lacking. Standard treatments including surgery, radiotherapy, chemotherapy, and long-term hormone therapy. These approaches are often accompanied by significant side effects. While newer methods such as immunotherapy and targeted therapies have emerged, chemotherapy protocols and incorporation have remained largely unchanged in the past decades. This study explores the role of Career and Technical Student Organizations (CTSOs) in enhancing the educational experiences of secondary Career and Technical Education (CTE) teachers in Utah. By surveying CTE educators, the research identifies key factors that motivate teachers to implement CTSOs, as well as barriers they face in doing so. The findings indicate that a significant majority of teachers recognize the value of CTSOs for fostering student engagement and career readiness. Key motivators include support from school administration and access to professional development, while challenges such as time constraints and resource limitations hinder participation. This thesis investigates the phenotypic variability of maize (Zea mays spp.) from archaeological sites located in the Uinta Basin, Utah. Maize was first introduced to the American Southwest around 5,000 years ago following its migration via trade routes from its native region of southern Mexico (Vint 2017). The adaptation of maize to the arid and temperate conditions of the American Southwest and Mexico triggered significant phenotypic change resulting from human and environmental selection pressures.
