Background/Objectives: Fermentable Oligosaccharides Disaccharides Monosaccharides and Polyols (FODMAPs) are a group of short chain carbohydrates that are poorly absorbed in the small intestine and can lead to gastrointestinal discomfort in sensitive individuals, particularly in those with irritable bowel syndrome (IBS). First-line treatment of IBS is a low FODMAP diet. However, little is known regarding FODMAP intake and the commonly consumed high FODMAP foods in the Irish population. This study aimed to investigate the FODMAP content of foods commonly consumed in the Irish diet.

Green tea extract (GTE) is widely recognised for its bioactive compounds, which exhibit potential health benefits, including modulation of gut microbiota. However, the concentration-dependent effects of GTE on specific probiotic strains remain underexplored. The aim of this study was to systematically evaluate the concentration-dependent effects of green tea extract (GTE) on Lacticaseibacillus rhamnosus (L. rhamnosus). The promoting and inhibiting effects of GTE in the range of 0–50 mg/mL were analysed in vitro by OD₆₀₀ growth curve, pH change and colony forming unit (CFU) count. Injury recovery in sport involves not only physical rehabilitation but also significant psychological challenges, particularly for female athletes in amateur and elite environments. This study aimed to explore the perceived social support received by injured female Gaelic Athletic Association (GAA) athletes and the effect it had on their mental health during injury. A qualitative research design was employed to gain an in-depth understanding of the experiences of injured female athletes. Consumer uptake of a sustainable diet is critical for addressing environmental challenges and promoting public health. Understanding why consumers resist adopting sustainable eating habits can inform targeted interventions and policies. “We Talked About Straight People Sex”: The Health Education Experiences Of Queer And Trans Youth In Utah, Sonny Partola
Journal of Multicultural Affairs
This article explores how Utah’s health education curriculum shapes the experiences of queer and trans youth. Drawing on critical ethnography conducted at an urban public high school, the study foregrounds the voices of six queer and trans students. Findings reveal that abstinence-focused and heteronormative curricula render these youth invisible, exclude critical information on queer, trans, and intersex health, and compromise students’ well-being. Participants described feelings of discomfort, irrelevance, and pressure to act as informal educators for peers. Their accounts highlight the urgent need for queerly responsive health education that affirms diverse identities, normalizes inclusion, and provides accurate, relevant information. Such …

Background: Elevated blood homocysteine (Hcy) levels are a hallmark of hyperhomocysteinemia (HHcy), a metabolic disorder that is known to be a risk factor for cardiovascular illnesses. It greatly raises the risk of vascular problems when combined with hypertension (HTN). However, there are few statistics on the prevalence of HHcy in individuals with HTN. Ulcers that form in the oral mucosa are a hallmark of recurrent aphthous stomatitis (RAS), a chronic inflammatory disease. Up to 25% of the population may get aphthous ulcers, and recurrence rates within three months can reach 50%. Among women, it is more prevalent. Background:
Heavy metals, like lead, arsenic, and cadmium, are linked to increased inflammation even in early life; however, anti-inflammatory diets may offset these effects.
Methods:
We evaluated associations between heavy metals and inflammatory biomarkers, and potential effect modification by diet in 399 adolescents aged 10 to 18 at baseline who attended two study visits 2 years apart (773 observations). At baseline, blood lead, urinary arsenic, and cadmium concentrations were measured, and the Children’s Dietary Inflammatory Index (C-DII) was calculated. Fasting serum interleukin (IL)-4, IL-10, IL-1β, IL-6, IL-8, high-sensitivity C-reactive protein, and tumor necrosis factor-alpha were measured for both visits. Generalized …

Hashimoto thyroiditis (HT) is a common autoimmune disorder, affecting women 7–10 times more often than men, that develops because of genetic susceptibility, X chromosome inactivation patterns modulated by environmental factors as well as micro biome composition, and leads to an imbalance in self-tolerance mechanisms. The consequential thyroid infiltration by lymphocytes, potentiated by antibody-mediated autoimmune response through the antibodies against thyroid peroxidase (TPO Abs), leads to a destruction of thyrocytes. The presence of TPO Abs is associated with a 2 to 4-fold increase in the risk of recurrent miscarriages and preterm birth in pregnant women. Aim: The aim of the study …

In 2024, Utah State University conducted a study of Utah's farmers, ranchers, and food makers related to value-added food production and processing. This fact sheet provides an overview of the survey results related to respondents, their operations, products, and marketing outlets. It also discusses respondents’ familiarity with key regulatory and resource organizations, the types of products and business resources they find difficult to obtain or access, and the primary obstacles to their processing operations. Management of secondary hyperparathyroidism (SHPT) in chronic kidney disease (CKD) has evolved dramatically over the past five decades, driven by discoveries that have fundamentally reshaped our understanding of the vitamin D endocrine system and its role in disease progression. This review synthesizes the key pathophysiological insights and clinical evidence underlying three critical paradigm shifts. The first shift moved beyond simple calcitriol replacement with the development of selective vitamin D receptor activators (VDRAs) designed to minimize hypercalcemia while maximizing PTH suppression. Crucially, these analogs revealed unexpected survival benefits, suggesting protective VDR actions extending beyond mineral metabolism. The second shift recognized the …

Sphenocentrum jollyanum Pierre (Menispermaceae) is a West African medicinal plant used traditionally for various ailments, including malaria, diabetes, and reproductive disorders. Despite its ethnobotanical significance, comprehensive scientific validation of its pharmacological properties remains limited. This review aims to provide a comprehensive overview of the plant’s ethnobotany, phytochemistry, and pharmacological activities, integrating traditional knowledge with modern scientific insights to guide future research. American agriculture, once solely supported by rural family farmers and steeped in an agrarian system, now relies heavily on industrialized operations, creating an arena ripe for the clash of diverse policy perspectives. In the pre-industrial era, before the advent of long-distance transportation or food preservation, human survival necessitated proximity to where food was grown or husbanded. Cities located near agriculturally productive lands and domesticated livestock animals were commonplace within cities. But by the 1920s, the technological innovations of the Second Industrial Revolution left urban areas free of farm animals and farm-related activities. Local governments exercised their powers to codify the separation of residential and agricultural uses within cities and reinforce the idea that food production was not proper in community neighborhoods. Twenty years after the Journal of Food Law & Policy published its first issue, I find myself looking back with deep gratitude for the people who helped create it, for the students who sustained it, and for the community that continues to make it thrive. What began as an untested idea has grown into a respected publication and a cornerstone of a still-growing field. This essay is both a reflection on that journey and a heartfelt thank-you to everyone who made it possible.
