Evaluation Of A Hands-On Cooking Class And Its Effects On Self-Efficacy In Relation To Healthy Eating In Type 2 Diabetics, Codi A. Jenshak-Gorzinski
Doctor of Nursing Practice Scholarly Projects
The prevalence of Type 2 diabetes is alarming and poses a great threat to U.S. national health. Chronic diabetes can lead to serious conditions such as heart attack and stroke, and can result in premature mortality (World Health Organization, 2018). Diabetes can be prevented or treated by eating a healthy diet. Cooking classes are a potential way to improve American’s knowledge of nutritional principles and help them become confident that they have the capacity to eat a healthy diet. The purpose of this DNP project was to determine if participation in cooking classes enhanced self-efficacy as it pertains to healthy …

Diet and lifestyle-related illnesses including functional gastrointestinal disorders (FGIDs) and obesity are rapidly emerging health issues worldwide. Research has focused on addressing FGIDs via in-person cognitive-behavioral therapies, diet modulation and pharmaceutical intervention. Yet, there is paucity of research reporting on digital therapeutics care delivering weight loss and reduction of FGID symptom severity, and on modeling FGID status and symptom severity reduction including personalized genomic SNPs and gut microbiome signals. Our aim for this study was to assess how effective a digital therapeutics intervention personalized on genomic SNPs and gut microbiome signals was at reducing symptomatology of FGIDs on individuals that …

Academic Libraries And Athletic Training: Research Preferences Of Athletic Training Students, Daniel G. Kipnis, Lisa A. Adriani, Ronda Kolbin
Libraries Scholarship
To ensure academic standards are met for athletic training curriculums, it is essential that librarians and faculty understand student research habits and information literacy instruction preferences. This article provides results from a survey of undergraduate athletic training students conducted at two universities. Athletic training students prefer information literacy instruction at the beginning of the semester. When seeking research assistance, students ask their classmates first, followed by friends and Google. Most students spend up to 60 minutes researching online before seeking assistance and prefer in-person communication for assistance from the library followed by email.

Proteins and peptides belonging to the plant immune system can possess natural antibacterial, antifungal and antiviral properties. Due to their broad range of activity and stability, they represent promising novel alternatives to commonly used antifungal agents to fight the emergence of resistant strains. An isolation protocol was optimised to target proteins found in plants’ defence system, and it was applied to white mustard (Brassica hirta) seeds. Firstly, a ∼14 kDa protein with activity against S. cerevisiae was extracted and purified; secondly, the protein was identified as the mustard Napin protein named Allergen Sin a 1. Napin is the name given …

The cotyledon and caruncle tissues provide a functional bridge between the fetus and the dam. However, the relationship between these tissues and the transcriptomic profile that underlies the tissue functions remains elusive. Herein we investigate the expression profile of cotyledon and caruncle from nulliparous beef heifers carrying female fetuses at day 83 of pregnancy to identify changes occurring across tissues that contribute to placental function and their tissue-specific roles. We identified 2654 differentially expressed genes [padj ≤ 0.05, abs(log2FC) ≥ 1], including nutrient transporters and paternally imprinted genes. We found key regulators of tissue function and differentiation, including FOXO4, GATA2, …

The prevalence of internet gaming disorders (IGD) is considerably high among youth, especially with the social isolation imposed by the ongoing COVID-19 pandemic. IGD adversely affects mental health, quality of life, and academic performance. The Internet Gaming Disorder Scale (IGDS9-SF) is designed to detect IGD according to DSM-IV diagnostic criteria. However, inconsistent results are reported on its capacity to diagnose IGD evenly across different cultures. To ensure the suitability of the IGDS9-SF as a global measure of IGD, this study examined the psychometric properties of the IGDS9-SF in a sample of Sri Lankan university students (N = 322, mean age …

Fda-Approved: How Pfas-Laden Food Contact Materials Are Poisoning Consumers And What To Do About It, Katya S. Cronin
The Business, Entrepreneurship & Tax Law Review
Nearly every person in the United States currently has in their body dangerous amounts of chemicals proven to cause cancer, endocrine disruptions, liver and kidney failures, infertility, developmental difficulties, learning disorders, and immunodeficiencies. These chemicals are known collectively as “PFAS”—per- and poly-fluoroalkyl substances—and they were designed for heavily industrial applications. However, over the last two decades, they have surreptitiously and successfully migrated from heavy machinery and building sites onto the many items that consumers use to cook, serve, or store their food. With the FDA’s blessing, PFAS are now ubiquitous in food contact materials, from where they leach directly into …
Should The Great Food Transformation Be Fake-Meat Free? Considering Strategies For A Future Of Food That Is Kinder To People, Animals, And The Planet, Iselin Gambert
The Business, Entrepreneurship & Tax Law Review
In 2019, former Trump White House adviser Sebastian Gorka infamously denounced advocates of the Green New Deal with the pithy admonishment, “They want to take away your hamburgers.” This rhetoric is ironic given that none of the politicians supporting the Deal have suggested widescale adoption of vegan diets, much less any laws or policies restricting the consumption of animal-based meat. However, given our species’ broken relationship to food, perhaps they should. The 2019 EAT-Lancet Commission Food in the Anthropocene report laid bare the scope of our current global predicament, warning that “[g]lobal food production threatens climate stability and ecosystem resilience …

Barbed Wire Fences: The Structural Violence Of Education Law, Latoya Baldwin Clark
University of Chicago Law Review
In this Essay, I argue that, in urban metros like Chicago, poor Black children are victims of not just gun violence but also the structural violence of systemic educational stratification. Structural violence occurs in the context of domination, where poor Black children are marginalized and isolated, vulnerable to lifelong sub-ordination across many domains. Specifically, I argue that U.S. education policy subjects poor Black children to the violence of intergenerational subordination by trapping children behind residential barbed wire fences, starving their schools of necessary resources, and abusively dangling powerless community control.

The creation of the Caribbean Ocean and Aquaculture Sustainability faciliTy (COAST) is used as a case study of community-engaged design addressing safety needs. COAST is a parametric insurance product, sold to national governments, which was designed to meet the food and nutrition security of small- and medium-scale fisherfolk. The design of COAST is an example of convergence research, where the discipline of engineering was integrated with another discipline to solve pressing societal needs of Caribbean fisherfolk. This case study demonstrates that community-engaged design helps to (1) identify and include historically underrepresented stakeholders, (2) emphasize the importance of professional responsibility for …

Poor people proved especially vulnerable to economic disruption during the coronavirus disease (COVID-19) pandemic, which highlighted the importance of poverty reduction as a policy concern. In this article, we explore the politics of poverty reduction during the COVID-19 crisis in Canada and the United States, two liberal welfare-state regimes where poverty reduction is a key policy issue. We show that, since the beginning of the pandemic, policies likely to reduce poverty significantly have been adopted in both Canada and the United States. Yet, this poverty reduction logic has emerged in different ways in the two countries—with the United States embracing …

Feeding by adult and larval sweetpotato weevil induces terpenes, rendering storage roots unmarketable. To reduce storage root damage and sweetpotato weevil populations, the present experiment tested the impact of sweetpotato cultivar on developmental time, adult emergence, body length, weight, and supercooling point of sweetpotato weevil. The cultivars tested were â Beauregard' and â Evangeline,' both orange fleshed cultivars susceptible to sweetpotato weevil, and â Murasaki,' a white fleshed cultivar known to be …

(1) Background: Many insects have evolved different strategies to adapt to subzero temperatures and parasites, but the supercooling response of pollinator populations under the brood parasitism pressure has not been sufficiently investigated. (2) Methods: This study assessed the supercooling traits (supercooling points, fresh weight and fat content) of the solitary bee Osmia excavata Alfken and its brood parasite, Sapyga coma Yasumatsu & Sugihara. We measured 4035 samples (3025 O. excavata and 1010 S. coma, one individual as one sample) and discovered the super-cooling traits relations between solitary bee and brood parasite. (3) Results: Significant differences in the supercooling points were …

Objectives: A qualitative study was performed to characterize experiences of women going through menopause, as well as to identify barriers and facilitators for participating in a lifestyle program targeting weight management during menopause. Study Design: Perimenopausal and postmenopausal Black women with a self-reported desire to lose or maintain weight during menopause participated in a total of six focus groups. Main Outcome Measures: Women were asked about their past experiences with diet, exercise, and weight management; their menopause experiences; as well as specific components and considerations for developing a lifestyle program for weight management. Thematic analysis was conducted on coded transcripts …
