Over the last 30 years, the global positioning system (GPS) tracking collars have significantly enhanced livestock grazing behavior studies. Practices designed to understand and improve livestock grazing distribution can now be accurately and cost-effectively monitored with GPS tracking. The behavior and spatiotemporal microhabitat selection of Mashona cattle relative to the season in a semi-free-range grazing system was evaluated using a low‐cost GPS herd activity monitoring (GPSHAM) collar. The GPSHAM automatically logged the position of the lead cow at 20-second intervals over a 7–hour daily grazing period. Additionally, the GPS data was complemented by visually observing the lead cow during daylight …

Food Justice And Urban Agriculture: Using City Spaces To Foster Equity, Jessica Giese Jul 2022

Food Justice And Urban Agriculture: Using City Spaces To Foster Equity, Jessica Giese

School of Education and Leadership Student Capstone Theses and Dissertations

In an increasingly urban society, urban agriculture creates opportunities to address inequalities in access to healthy foods and bridge gaps in our food systems. While solving the problems of food and environmental injustice demands large-scale changes at a systemic level, urban agriculture can promote community engagement, education, and sovereignty, empowering city residents to gain control over their resources and access to nutritious foods. This research seeks to explain how two very different urban agricultural projects are impacting their communities through access, engagement, and education. Intersections Food Forest is a neighborhood project that utilizes an empty city lot to cultivate perennial …

Archaea: An Under-Estimated Kingdom In Livestock Animals, Yunjuan Peng, Ting Xe, Zhuosui Wu, Wenxiao Zheng, Tao Zhang, Samantha Howe, Jianmin Chai, Feilong Deng, Ying Li, Jiangchao Zhao

Animal Science Faculty Publications and Presentations

Archaea are considered an essential group of gut microorganisms in both humans and animals. However, they have been neglected in previous studies, especially those involving non-ruminants. In this study, we re-analyzed published metagenomic and metatranscriptomic data sequenced from matched samples to explore the composition and the expression activity of gut archaea in ruminants (cattle and sheep) and monogastric animals (pig and chicken). Our results showed that the alpha and beta diversity of each host species, especially cattle and chickens, calculated from metagenomic and metatranscriptomic data were significantly different, suggesting that metatranscriptomic data better represent the functional status of archaea. We …

Differential Effects Of Protein Isolates On The Gut Microbiome Under High And Low Fiber Conditions, Marissa Behounek

Department of Food Science and Technology: Dissertations, Theses, and Student Research

Protein isolates are a growing market share in the food industry both as food ingredients and as supplements. All dietary habits can influence and alter the gut microbiome; however, little is known about how protein isolates from different sources will change the composition and function of the gut microbiota under high and low fiber conditions. The study aims to determine the microbiome response to plant and animal protein isolates under high- and low-dietary fiber (H/LDF) conditions. Six commercially available protein isolates (beef, egg white, milk, pea, and two soy protein isolates) were subjected to in vitro enzymatic digestion and dialysis …

Molecular Mechanisms Underlying Mucosal Attachment And Colonization By Clostridioides Difficile, Ben Sidner Jul 2022

Molecular Mechanisms Underlying Mucosal Attachment And Colonization By Clostridioides Difficile, Ben Sidner

Department of Food Science and Technology: Dissertations, Theses, and Student Research

Clostridioides difficile is a Gram-positive, spore-forming, anaerobic bacterium which causes gastrointestinal disease and is a leading cause of nosocomial infections. Although infection typically occurs following antibiotic therapy, in recent years there has been an increase in infections which are not preceded by antibiotic use. Additionally, community-associated infections and rates of disease recurrence have increased. While it is understood that a healthy gastrointestinal microbiota provides protection against infection, the molecular mechanisms which underly C. difficile's ability to colonize and persist in the gut are mostly unknown. Building on work from others that suggests C. difficile associates with the outer mucus …

Conceptualizing A 'Right To Research' And Its Implications For Copyright Law: An International And European Perspective, Christophe Geiger, Bernd Justin Jütte

Joint PIJIP/TLS Research Paper Series

Copyright, at international, European and national levels, does not provide a legal framework that prioritizes enabling and incentivizing research using protected works and information to the extent necessary and desirable in a digital, data-driven society in order to build a sustainable ecosystem for innovation and creativity. While small progress has been made, for example with the recent introduction of specific exceptions for research purposes and for text and data mining in certain national legislations as well as in the European Union law, a horizontal approach towards a more research-friendly copyright ecosystem has so far failed to evolve. By revisiting international …

Crowding out analysis emphasizes the extent to which household spending on tobacco affects other baskets of household expenditures. The data used in this study is the National Socio-Economic Survey in 2016. Using the Quadratic Almost Ideal Demand System equation, this study found that tobacco expenditure has a negative and significant effect on almost all types of household expenditures, such as fuel, education, entertainment, clothing, health, and durable goods. Household durable goods expenditure is the most displaced or sacrificed, followed by education expenditure. This finding reveals tobacco consumption has effect on human capital investment and long-run economic growth in West Sumatra.

Rurality As An Intersecting Axis Of Inequality In The Work Of The U.N. Treaty Bodies, Amanda Lyons Jul 2022

Rurality As An Intersecting Axis Of Inequality In The Work Of The U.N. Treaty Bodies, Amanda Lyons

Washington and Lee Law Review

Rurality intersects with other identities, power dynamics, and structural inequalities—including those related to gender, race, disability, and age—to create unique patterns of human rights deprivations, violations, and challenges in rural spaces. Therefore, accurately assessing human rights and duties in rural spaces requires attention to the dynamics of rurality in a particular context, the unique nature of diverse rural identities and livelihoods, the systemic forces operating in and on those spaces, and the intersections with other forms of structural discrimination and inequality.

Although much of the work of the U.N. treaty bodies has in fact addressed human rights situations in rural …

Doctoral Projects

Type 2 diabetes mellitus in the United States is an epidemic that disproportionately affects Hispanics in the state of California. Many factors have been attributed to this phenomenon because of their unique characteristics. As recent studies have pointed out, their social determinants of health, cultural influences, and genetic predisposition often lead to poor health outcomes and impaired quality of life. A targeted approach is critical in promoting increased diabetes knowledge, enabling skills to master self-care activities, and positive self-care behaviors to avert poor outcomes. The purpose of this doctoral project is to examine whether culturally tailored DSME influences an individual’s …
