Theses
The aim of this thesis was to investigate the nutritional, techno-functional and physicochemical properties of milk fat globule membrane (MFGM) enriched whey protein concentrate (WPC) ingredients. This research focused on the physicochemical, nutritional, techno-functional, and microstructural properties of MFGM-enriched whey protein concentrate (WPC) powder ingredients, which included 3 MFGM-enriched WPC ingredients and a WPC ingredient co-enriched with α-lactalbumin and MFGM. These were compared to parallel stream (WPC 80 and whey protein isolate (WPI)) and upstream, whole milk powder (WMP) bovine derived ingredients of varying macromolecular composition, including MFGM-enrichment. The macromolecular compositions of the MFGM-enriched WPC ingredients included fat contents ranging …
An Investigation Into The Irish Bread Market With A Particular Focus On Sourdough Bread. Are Increased Numbers Of Consumers Purchasing Sourdough Bread? If So, Why And What Do They Know About It?, Aisling Kelly
Theses
Bread has a long-standing history in the Irish diet and remains a staple part of our calorie intake with an average consumption of 37.5 kg per person per annum (Jocelyn, 2020; Murtagh, 2009). While the traditional breads of oatcakes and soda bread have remained a favourite for many decades, Ireland’s bread market has also evolved to include baked items from all over the world. Most recently, consumers have altered their purchasing habits in relation to bread due to the enforced restrictions on the movement of people (and consequently goods) during the COVID-19 pandemic of 2020 to 2022. Evidence suggests that …

BACKGROUND: Small cell lung cancer (SCLC) is an aggressive lung cancer subtype that is associated with high recurrence and poor prognosis. Due to lack of potential drug targets, SCLC patients have few therapeutic options. MicroRNAs (miRNAs) provide an interesting repertoire of therapeutic molecules; however, the identification of miRNAs regulating SCLC growth and metastasis and their precise regulatory mechanisms are not well understood.
METHODS: To identify novel miRNAs regulating SCLC, we performed miRNA-sequencing from donor/patient serum samples and analyzed the bulk RNA-sequencing data from the tumors of SCLC patients. Further, we developed a nanotechnology-based, highly sensitive method to detect microRNA-1 (miR-1, …

Evaluating The Use Of Reflective Practice Principles To Support Nurse Manager Well-Being During A Period Of Chronic Distress, Amy A. Martone
Yale School of Nursing Digital Theses
The COVID-19 pandemic brought forward a crisis that the current U.S. healthcare system was not prepared for. This increased the risk for burnout of teams and individuals, including the nurse leader. Nurse managers were selected as the target audience for support because they are key clinical leaders at the unit and staff level, yet they report feeling undervalued and are at higher risk for turnover than other leaders. This project developed a program that used reflective practice principles to support nurse manager well-being during periods of chronic distress.
The curriculum was guided by the Dimensions of Leadership as framework for …

Exploring Mexican Attitudes Toward The Front Labeling System For Food And Beverages: A Twitter Analysis, Monica D. Hernandez, Edith Galy
International Business and Entrepreneurship Faculty Publications
Recently, the Mexican government implemented a simple labeling system that would apply to 85% of the food products. The aim of the system is to report high amounts of calories, sugars, sodium, fats and trans fats. Labels are displayed on the front of the package individually or in groups. No studies have been conducted to analyze public attitudes toward the labeling system. In order to fill this gap, the purpose of the study is to conduct an exploratory analysis of the Mexican attitudes toward the new labeling system on Twitter. The Twitter API was used to collect tweets published between …

Shift work chronically disrupts circadian rhythms and increases the risk of developing cardiovascular disease. However, the mechanisms linking shift work and cardiovascular disease are largely unknown. The goal of this study was to investigate the effects of chronically shifting the light-dark (LD) cycle, which models the disordered exposure to light that may occur during shift work, on atherosclerosis. Atherosclerosis is the progressive accumulation of lipid-filled lesions within the artery wall and is the leading cause of cardiovascular disease. We studied ApolipoproteinE-deficient (ApoE−/−) mice that are a well-established model of atherosclerosis. Male and female ApoE−/− mice were housed in control 12L:12D …

At the dawn of Artificial General Intelligence (AGI), the emergence of large language models such as ChatGPT show promise in revolutionizing healthcare by improving patient care, expanding medical access, and optimizing clinical processes. However, their integration into healthcare systems requires careful consideration of potential risks, such as inaccurate medical advice, patient privacy violations, the creation of falsified documents or images, overreliance on AGI in medical education, and the perpetuation of biases. It is crucial to implement proper oversight and regulation to address these risks, ensuring the safe and effective incorporation of AGI technologies into healthcare systems. By acknowledging and mitigating …

The purpose of this study was to examine implementation of serving food and beverage evidence-based practices (nutrition EBPs) across CACFP participating licensed childcare centers (CCCs, n = 51) and family childcare homes (FCCHs, n = 49) in central California. Results indicated that FCCHs reported significantly higher (p < .05) implementation of nutrition EBPs and barriers than CCCs. Both CCCs and FCCHs refer families to WIC/SNAP when they observe child food insecurity and control how much food is served to children. It is important to consider organizational structure (CCCs, FCCHs) and child food insecurity when developing policies/interventions for improving implementation of nutrition EBPs in ECEs.

When a corporation engages in misconduct that is widespread or pervasive, courts, regulators, or prosecutors often insist that the firm obtain assistance from an independent third party — a monitor — to oversee the firm’s remediation effort. The largest firms in the world — from Deutsche Bank, to Volkswagen, to Carnival Cruise Lines — have found themselves having to retain a monitor for corporate misconduct, despite attempts to avoid a monitorship entirely. Traditionally, monitors, or their special master forebearers, were utilized by courts to assist in overseeing compliance with court orders, and their work was both accessible and transparent. As …

Meat is an essential component of a healthy and well-balanced diet and has played a crucial role in human evolution over the years because it is an excellent source of highly digested protein, vitamin B12, vitamin B6, niacin, iron, copper, zinc, and selenium. Raw meat is considered an unavoidable source of microbial contamination due to its enriched nutrient composition, high pH (5.5 to 6.5), and water activity (0.98 to 0.99); consequently, the meat is regarded as a perfect medium for bacterial growth. Meat deterioration begins immediately after slaughter because of faulty practices during the processing stages such as skinning, evisceration, …

Purpose: This study aimed to assess the prevalence of self-reported polycystic ovary syndrome (PCOS) among Emiratis and examine bi-directional associations of PCOS with self-reported chronic diseases, namely: diabetes, asthma, high cholesterol, and high blood pressure. Patients and Methods: A cross-sectional analysis was performed using the UAE Healthy Future Study (UAEHFS) data collected from February 2016 to April 2022 involving 1040 Emirati women aged 25–67 years from recruitment centers in the United Arab Emirates (UAE). The bi-directional associations between self-reported PCOS and self-reported chronic diseases were evaluated by establishing temporality based on reported age-at-diagnoses. Firstly, the associations between PCOS (diagnosed at …

The ongoing spread of antimicrobial resistance has complicated the treatment of bacterial hospital-acquired pneumonia (HAP) and ventilator-associated pneumonia (VAP). Gram-negative pathogens, especially those with multidrug-resistant profiles, including Escherichia coli, Klebsiella pneumoniae, Enterobacter spp., Pseudomonas aeruginosa, and Acinetobacter spp., are an important culprit in this type of infections. Understanding the determinants of resistance in pathogens causing pneumonia is ultimately stressing, especially in the shadows of the COVID-19 pandemic, when bacterial lung infections are considered a top priority that has become urgent to revise. Globally, the increasing prevalence of these pathogens in respiratory samples represents a significant infection challenge, with major limitations …

This thesis examines the link between sports and theatre from the actor's perspective and concludes that these two practices should be used together to achieve optimal performance. Using context provided by great physical theatre practitioners such as Jacques LeCoq, Vsevolod Meyerhold, and Rudolf Von Laban, the candidate used his past experience as a gymnast and a soccer player, and the teachings of Timothy Gallwey's The Inner Game of Tennis, to craft a rehearsal and performance regimen for Theatre UCF's production of Paula Vogel's Indecent. This regimen included an experiment where he alternated days in which he swam to days in …

The circadian rhythm is a 24-hour cycle present within most biological systems that is controlled by the suprachiasmatic nucleus (SCN) of the hypothalamus. The SCN is responsible for synchronizing the peripheral "clocks" present in other tissues so that all rhythms, such as heart rate, body temperature, and hormone secretion, are functioning together. As most systems experience a circadian rhythm, physical performance likely does as well. Previous studies have investigated time of day effects on maximal strength, power, and endurance performance, however, factors (e.g., sex, chronotype, age, etc.) have not clearly been distinguished. Additionally, body temperature has been suggested to be …

A Zeolitic imidazolate framework-8 (ZIF-8) was synthesized by the solvothermal method of zinc nitrate hexahydrate and 2-methylimidazole in DMF to remove Cd(II), Ni(II), and Pb(II) ions from aqueous solutions. The synthesized ZIF-8 was distinguished by XRD, FT-IR, BET, SEM, EDX, TEM methods. Several significant variables were optimized with response surface methodology (RSM) to obtain the highest removal of metal ions. According to the achieved results, the aqueous solution pH values of 6.5, 6.5, and 6.0, ZIF-8 dosages of 0.05, 0.06, and 0.05 g⸳L-1, and metal ions initial concentrations of 50, 60, and 60 mg⸳L-1 were chosen as the optimum amount …
