Introduction. The ketogenic diet (KD) is a high-fat, low-carbohydrate diet in which the body undergoes metabolic adjustments that stimulate ketogenesis, thereby increasing circulating ketone bodies. Loss of body weight is attributed to these adjustments, as well as neuroprotective properties. However, the mechanisms involved are still not fully elucidated. That aim of this work was to evaluate the effect of a ketogenic diet on body composition, feeding behavior and glucose metabolism in mice of the BALB/c strain, a mouse model resistant to obesity.

Mixed Method Approach Towards The Life Of University Students During The Covid-19 Pandemic, Raihan Khan, Andrew White, Tony Jehi

Background
The COVID-19 pandemic negatively impacted the higher education system. This mixed-methods study aimed to assess COVID-19 fear, anxiety, and stress among Shenandoah Valley college students.
Methods
An online survey was fielded and completed by n=680 students. Qualitative semi-structured interviews were conducted with 20 students.
Results
The mean participant age was 22.14±5.48 years, and primarily White (81.9%), women (80.4%), and undergraduate (78.0%) students. Approximately 41% were enrolled in health-related majors (41.4%). Women students had significantly higher anxiety, depression, and fear of contracting COVID-19 than men. Undergraduate students had significantly higher depression than graduate students. BACKGROUND: Endocannabinoids and related N-acylethanolamines (NAEs) are bioactive lipids with important physiological functions and putative roles in mental health and addictions. Although chronic cannabis use is associated with endocannabinoid system changes, the status of circulating endocannabinoids and related NAEs in people with cannabis use disorder (CUD) is uncertain.
METHODS: Eleven individuals with CUD and 54 healthy non-cannabis using control participants (HC) provided plasma for measurement by high-performance liquid chromatography-mass spectrometry of endocannabinoids (2-arachidonoylglycerol (2-AG) and N-arachidonoylethanolamine (AEA)) and related NAE fatty acids (N-docosahexaenoylethanolamine (DHEA) and N-oleoylethanolamine (OEA)). Fatty acids interact with a wide variety of proteins, as they are either directly or indirectly involved in essentially every physiological process. Mimetics of these fatty acids have the potential to address unique issues associated with these proteins, in ways that the native ligands cannot. The pharmacological panel of targets for fatty acid mimetics is very large and comprises nuclear hormone receptors, cell surface receptors, and enzymes. This thesis describes approaches to the design and synthesis of novel fatty acid mimetics. Specifically, techniques introducing chirality and conformational constraints are employed to produce potent and selective modulators of various receptors. Synthetically, …

Modern societies have significantly transformed people's lifestyles, leading to a substantial increase in physical inactivity, which concerns 23% of adults and 81% of adolescents worldwide. Physical inactivity is a major factor contributing to the emergence of chronic diseases, most prominently Type 2 Diabetes (T2D), which exhibits a high prevalence in many countries. T2D is characterized by elevated blood glucose levels due to cells’ responsiveness to insulin. The shift towards inactivity likely occurred more rapidly than the genome's capacity to adapt, resulting in the metabolic dysfunctions underlying the development of T2D. Methods of treating anxiety disorders or reducing anxiety-related behaviors. The methods include administering a therapeutically effective amount of ketone supplementation, such as butanediol, ketone esters (e.g., 1,3-butanediol-acetoacetate diester) and/or ketone salts (e.g., beta-hydroxybutyrate-mineral salt), chronically, sub-chronically, or acutely, with or without admixture with a medium chain triglyceride or in combination. It was determined herein that ketone supplementation reduced anxiety in rats on elevated plus maze as measured by less entries to closed arms, more time spent in open arms, more distance travelled in open arms, and delayed latency to entrance to closed arms, when compared to control. BACKGROUND: Food product labelling can support consumer decision-making. Several food product labels (nutrition information panels (NIPs), ingredients lists, allergen declarations and country-of-origin) are mandated for physical product packaging in Australia, with a voluntary front-of-pack nutrition labelling system, Health Star Ratings (HSRs), also available. However, labelling requirements are not explicitly extended to online settings and the extent to which this information is available in these increasingly important food environments has not been assessed.

America’s diet-related illness crisis intersects with a lack of nutrition literacy, nutrition security, and systemic inequities. The Cooperative Extension Service’s (CES) national infrastructure could potentially provide equitable access to quality nutrition education in the US utilizing a Master Food Volunteer (MFV) model. This research brief examined preliminary evidence for the MFV model as a support for CES agents and paraprofessionals, and results show a paucity of evidence. Further research and a pilot program with pre-established measures for health-related knowledge and behaviors could elucidate the model’s potential to increase equitable access to evidence-based programming, nutrition, and implementation guidance.

Extension professionals engage with communities to present programming, find solutions, and disseminate research-based knowledge. While traditional means of communication and face-to-face meetings are still important, the COVID-19 pandemic shifted the ways these professionals connect to their communities. Web-based platforms can provide unique, alternative ways to engage communities in programs, evaluations, and information sharing. Our team of Extension professionals share platforms that create engaged communities by meeting virtual demands.

Strawberries (Fragaria × ananassa) are one of the Rosaceae family, considered economically and nutritionally important berry fruits. Phytochemicals are crucial ingredients that contribute to characteristics such as the fruit?s aroma and flavor. The current study investigated the phytochemical characteristics of strawberry fruit at three developmental stages (green, white, and red). HPLC measurements determined the glucose, fructose, and sucrose concentrations significantly increased in the red fruit, whereas glucose was identified as the major sugar in ripe fruit (2.8 g.g-1FW). Evaluation of the phenylpropanoid pathway implied that the amount of total phenol and flavonoid following phenylalanine ammonia-lyase enzyme activity decreased …

‘ Food on the margins in Plymouth’ is a short ‘fly on the wall’-style documentary film which has captured the food stories of six individuals who are, for whatever reason, experiencing food insecurity. The film was inspired by a recent participatory food research project (Food as a Lifestyle Motivator) which aimed to explore creative methods to better understand the food experiences of vulnerable communities in Plymouth, UK. BACKGROUND: Colorectal cancer (CRC) is one of the major causes of cancer-related mortality worldwide. The tumor microenvironment plays a significant role in CRC development, progression and metastasis. Oxidative stress in the colon is a major etiological factor impacting tumor progression. Tumor necrosis factor receptor-associated protein 1 (TRAP1) is a mitochondrial member of the heat shock protein 90 (HSP90) family that is involved in modulating apoptosis in colon cancer cells under oxidative stress. The “Space Between”: Situated Professional Development To Enhance 4-H Educators’ Pedagogical Design Capacity For Effective Curriculum Enactment, Martin H. Smith, Gemma Miner, Lynn Schmitt-Mcquitty

Curricula are planned and written by curriculum developers; they serve as instructional guides for educators. Educators make adaptations to written curricula to meet learners’ needs and achieve intended learning outcomes. The efficacy of curriculum adaptations is enhanced when educators have a high pedagogical design capacity, which can be improved through effective professional development. Lesson study is a model of situated professional development centered around ongoing improvement of curriculum enactment. Educators work collaboratively to make curriculum modifications and data-driven decisions to improve their teaching practices. Lesson study occurs at regular intervals over an extended duration.

Extension professionals often communicate program outcomes to external stakeholders using impact statements. We developed and evaluated four impact statements for the Expanded Food and Nutrition Education Program (EFNEP). We drafted the statements after conducting literature reviews for core content areas of EFNEP that include diet quality, food resource management, physical activity, and food safety. Subsequently, we evaluated the statements by facilitating expert panels made up of subject matter experts and communication professionals (n=14) from 12 Land-grant Universities. These impact statements aim to support EFNEP and other Extension professionals when communicating program value with key external stakeholders.

Over past few decades, new insight has been revealed in the scientific community about the importance of the human gut microbiome relating to general health. It is known that imbalances in the species that reside in the human gut can cause organism-wide problems in humans. When prescribing or injecting oral medications, the thought of the downstream effects on the gut microbiome are not always considered.
