After harvesting the animal, pork muscle continues to undergo changes as it turns from muscle into meat. During this early period, the muscle uses up energy and produces acid, which lowers pH and can affect important quality traits such as color and how well the meat holds water. A key driver of these early changes is calcium, a natural mineral inside muscle cells that helps control contraction and energy use. In this study, we tested whether mitochondria (the cell’s “powerhouse”) help control calcium after harvest and, in turn, influence early postmortem changes in pork. In water limited environments, alfalfa is often criticized for its high water use, prompting implementation of new irrigation technologies, deficit irrigation, and adapted crop genetics. Cumulative potential benefits from combining, or stacking, these water-optimizing practices have not been identified. The objective of this on-farm research study was to determine how irrigation technologies, deficit irrigation, genetics, and combinations of these practices impact alfalfa yield and forage quality. Cheese ripening is a complex process that shapes the flavor, texture, and overall quality of cheese, yet many of the factors that control how these changes occur are still not fully understood. One factor that may play an important role is redox potential, which describes the balance between oxidation and reduction reactions happening inside the cheese. These reactions can influence both the activity of bacteria and the chemical processes that create flavor. Past efforts to control redox using chemical additives often harmed beneficial bacteria, limiting their usefulness.

This study explores the extraction and application of Pithecellobium dulce seed protein isolate (PSPI) in chocolate compound coating formulations. PSPI was extracted via ultrasonication-assisted isoelectric precipitation under optimized conditions (solute-to-solvent ratio 1:30, pH 12, 10 min), yielding 23.64% with 38.28% recovery. PSPI exhibited high protein content (75.3%), low water activity (0.22), near-neutral pH (6.94), and favorable techno-functional properties, including high water (3.27 g/g) and oil holding capacities (4.81 g/g), improved solubility (↑21.3%), and superior thermal stability compared to skim milk powder (SMP). While in vitro digestibility was slightly lower than SMP (88.52% vs. 92.42%), PSPI outperformed other reported plant protein …

Preventive strategies targeting modifiable lifestyle factors related to food, nutrition, and health are needed as chronic health conditions continue to rise. Nutrition literacy refers to having the knowledge and skills needed to obtain, understand, and apply nutrition information to make informed dietary decisions. Without adequate nutrition education and food security, vulnerable populations are at risk of malnutrition and poor dietary behaviors. Protein is a priority nutrient in the American diet, being fueled by the demands of weight loss drugs, diet culture, and new dietary guidelines. However, meeting these elevated protein goals sustainably requires diversifying beyond standard sources like whey protein isolate. 3D printing offers an opportunity to present a variety of protein sources in a palatable, customized, and consumer-acceptable format. In this study, 3 protein sources (cricket, whey, and pea), were optimized within food inks for 3D printing. Disordered eating behaviors and body image concerns remain prevalent among collegiate athletes, yet the role of sport type and sport-related environmental factors, such as uniforms, is not fully understood. The purpose of this study was to examine the relationship between sport type, uniform perception, and disordered eating behaviors among female collegiate athletes at the University of Arkansas. A quantitative, non-experimental design was used, with 36 athletes completing an anonymous Qualtrics survey incorporating demographic questions, uniform perception items, and the Eating Disorder Examination Questionnaire Short Form (EDE-QS).

Integrase strand transfer inhibitors have transformed human immunodeficiency virus (HIV) therapy, yet the widely prescribed drug dolutegravir (DTG) has been linked to developmental toxicity, and its teratogenic mechanism remains unclear. Here, we used zebrafish to dissect DTG toxicity during early vertebrate development. DTG exposure from 2-4 h post-fertilization (hpf) to 24 hpf produced high mortality and abnormal morphology. Co-treatment with folates partially restored normal morphology, whereas calcium had no effect. Strikingly, supplementation with magnesium (Mg) partially rescued DTG-exposed embryos, implicating Mg availability in protection. Joubert syndrome (JS) is a rare genetic disorder characterized by developmental abnormalities, particularly in the brainstem and cerebellar vermis, alongside multisystem manifestations such as kidney and liver anomalies, polydactyly, cleft lip or palate, and tongue defects. The underlying ciliopathy causing JS may also contribute to gastrointestinal symptoms and immune dysregulation via Wnt signaling and impaired epithelial maintenance. Dysmotility including Hirschsprung disease has been documented at increased rates in JS and in other ciliopathies. Our case series highlights how JS patients frequently exhibit feeding intolerance, vomiting, and poor growth, which may raise suspicion for an underlying gastrointestinal condition, such as eosinophilic …

Vegetable production requires intensive weed management. Conventional producers rely on herbicide applications to manage weeds effectively at low costs; however, growers are under pressure to minimize chemical use due to environmental concerns and increased incidences of herbicide resistance. Non-conventional systems, including organic and sustainably focused small-scale production, rely primarily on cultural practices and physical weed control methods, which are labor-intensive and costly due to limited labor availability and rising wages. Childhood obesity is rising and leading to serious co-morbidities, among which is metabolic dysfunction-associated steatotic liver disease (MASLD) predisposing individuals to cirrhosis. We describe a young 11-year-old Hispanic male who presented with hepatopulmonary syndrome secondary to cirrhotic portal hypertension from metabolic dysfunction-associated steatohepatitis (MASH), necessitating liver transplantation. Despite lifestyle modifications post-transplantation, the patient experienced persistent weight gain and recurrence of steatosis, emphasizing challenges of managing pediatric MASLD. The burden of childhood obesity is increasing and impacting children significantly earlier than previously believed. Importance: The incidence and risk (predictive) factors for early life food allergy development remain uncertain.

Objective: To estimate the incidence and quantify risk factors for food allergy development.

Data sources: MEDLINE and Embase were systematically searched to January 1, 2025. Data were analyzed from June 1, 2025, to November 25, 2025.

Study selection: Incidence estimates included studies confirming food allergy via food challenge. Risk factor analyses included cohort, case-control, and cross-sectional studies in any language assessing children younger than 6 years using multivariable analyses.

The digestive system is essential for nutrient absorption, processing, and waste elimination. The expression of many genes and physiological processes within this system exhibits a 24-h rhythmicity. However, modern lifestyle factors, such as jet lag, shift work, and irregular eating patterns, significantly disrupt these rhythms, triggering various stress responses and contributing to numerous digestive disorders. Ulnar stress fractures are relatively rare, particularly in the context of collegiate cheerleading. This case report explores the presentation, diagnosis, and surgical management of an unexpected stress fracture in the ulna of a collegiate cheerleader. An 18-year-old female presented with persistent, localized pain in her non-dominant arm. Imaging revealed an isolated ulnar stress fracture, an unusual finding despite participating in this physically demanding sport. Surgical intervention was deemed necessary, and a nail fixation technique was employed to stabilize the fracture. Ulnar stress fractures, though rare in cheerleading, can present unique challenges. Introduction: Adolescence is a critical period for establishing lifelong health habits; however, many unhealthy behaviors, such as poor diet, lack of physical activity, inadequate sleep, and smoking, are common. This study aimed to assess healthy lifestyle behaviors among female adolescents in Bisha, Saudi Arabia. Methods: This is a school-based cross-sectional study that examined lifestyle behaviors among 403 female adolescents (ages 15–19) in Bisha, Saudi Arabia. Campylobacter bacteria are the causative agents of human foodborne acute enteric disease, ``campylobacteriosis''. Poultry meat is considered the primary source of this infection. This study was conducted to evaluate the use of multiplex polymerase chain reaction (multiplex PCR) for the direct detection of Campylobacter species from chilled chicken livers without an enrichment step, in comparison with the traditional culture-based method. Dollar stores are the fastest growing food retail format and are highly concentrated in rural, low-income communities including West Virginia, where diabetes and obesity prevalence rank among the highest in the United States. Although these retailers increase physical access to food, concerns remain about their limited healthier food options and potential contribution to chronic disease disparities. Guided by the socioecological model, this three-manuscript dissertation examined how dollar store density and healthier food availability related to county-level diabetes and obesity prevalence in West Virginia. Background Oral care is often not a standardized practice in the NICU. Oral/lip care is documented at each care time, even if it is sometimes not performed in the same way. There is confusion about what oral/lip care entails. Cesarean sections (C-sections) are a major surgical procedure intended to minimize the rate of maternal and infant mortality due to complications during birth. While they were originally intended to only be performed when medically necessary, rates of non-medically indicated C-sections have increased significantly. This poster examines the unintended consequences (UICs) that are associated with C-section delivery, focusing on both short-term and long-term effects. A major focus is how C-sections disrupt early microbial exposure during birth, which plays an important role in the development of the infant gut microbiome and immune system. The Dream Center in St. Cloud, Minnesota, supports adult men aged 18 and older who face challenges such as mental illness, chemical dependency, traumatic brain injury, learning disabilities, and physical disabilities. The center provides stable housing, three daily meals, clothing, and a range of support systems designed to promote rehabilitation and community reintegration. In addition to meeting basic needs, the Dream Center offers faith‑based programming that emphasizes restoration through Christian teachings, including the message of God’s love through Jesus Christ, the Holy Spirit, and the Word of God.
