The current-day epidemic of type 2 diabetes, largely driven by increased adiposity and reduced physical activity in the setting of genetic susceptibility, is a major public health challenge. The National Institute of Diabetes and Digestive and Kidney Diseases (NIDDK) presciently proposed the Diabetes Prevention Program (DPP), a multicenter randomized clinical trial, designed by investigators in conjunction with NIDDK staff and initiated in 1996. The primary goal of DPP was to determine whether an intensive lifestyle intervention (ILS) or metformin in comparison with placebo would reduce the development of diabetes in a high-risk population with prediabetes. After mean 2.8 years, ILS …

Research has supported the effectiveness of narratives for promoting health behavior, but different narrative presentation formats (serial vs. episodic) have seldom been compared. Suspense theories suggest that serial narratives, which do not provide a full resolution at the end of an episode, may create higher motivation for continued engagement with a story. Forty-four 8 to 12-year-old children were randomly assigned to watch an animation series designed for an existing active video game in which the plot was delivered either continuously across multiple episodes (serial) or in multiple yet relatively independent self-contained episodes (episodic). Controlling for social desirability, children who watched …

Nutrition estimation is an important component of promoting healthy eating and mitigating diet-related health risks. Despite advances in tasks such as food classification and ingredient recognition, progress in nutrition estimation is limited due to the lack of datasets with nutritional annotations. To address this issue, we introduce FastFood, a dataset with 84,446 images across 908 fast food categories, featuring ingredient and nutritional annotations. In addition, we propose a new model-agnostic Visual-Ingredient Feature Fusion (VIF2 ) method to enhance nutrition estimation by integrating visual and ingredient features. Ingredient robustness is improved through synonym replacement and resampling strategies during training. The ingredient-aware …

Large Multi-modal Models (LMMs) have made impressive progress in many vision-language tasks. Nevertheless, the performance of general LMMs in specific domains is still far from satisfactory. This paper proposes FoodLMM, a versatile food assistant based on LMMs with various capabilities, including food recognition, ingredient recognition, recipe generation, nutrition estimation, food segmentation and multi-round conversation. To facilitate FoodLMM to deal with tasks beyond pure text output, we introduce a series of novel task-specific tokens and heads, enabling the model to predict food nutritional values and multiple segmentation masks. We adopt a two-stage training strategy. In the first stage, we utilize multiple …

Alzheimer’s disease (AD) is a progressive neurodegenerative disorder marked by amyloid-β plaque accumulation, tau tangles, and extensive neuroinflammation. Neuroinflammation, driven by glial cells like microglia and astrocytes, plays a critical role in AD progression. Initially, these cells provide protective functions, such as debris clearance and neurotrophic support. However, as AD progresses, chronic activation of these cells exacerbates inflammation, contributing to synaptic dysfunction, neuronal loss, and cognitive decline. Microglia release pro-inflammatory cytokines and reactive oxygen species (ROS), while astrocytes undergo reactive astrogliosis, further impairing neuronal health. This maladaptive response from glial cells significantly accelerates disease pathology. Current AD treatments primarily aim …

Smelling is a human sense, expressing strong sexual dimorphisms. We aim to improve the knowledge of the genetics of human olfactory perception by performing an exploratory genome-wide association meta-analysis of up to 21,495 individuals of European ancestry. By sex-stratified and overall analysis of the identification of twelve odours and an identification score, we discovered ten independent loci, seven of them novel, with trait-wise genome-wide significance (p < 5 × 10−8) involving five odours. Seven of these loci, including four novel ones, are also significant using a stricter study-wide significance threshold (p < 3.85 × 10−9). Loci were predominantly located within clusters of olfactory receptors. Two loci were female-specific while one was sex-differential with respective candidate genes containing androgen response elements. Two-sample Mendelian randomization was applied to search for causal relationships between sex hormones, odour identification and neurodegenerative diseases. A causal negative effect was detected for Alzheimer’s disease on the identification score. These findings deepen our understanding of the genetic basis of olfactory perception and its interaction with sex, prioritizing mechanisms for further molecular research.

Multiple micronutrient supplements (MMS) in pregnancy reduces risk of infant low birthweight (LBW) and improves other maternal and infant outcomes compared with iron and folic acid (IFA) supplements alone. However, the impact of timing of initiation and adherence on the MMS effectiveness in real-world programs remains unclear. To address this, we conducted a 2-stage individual participant data meta-analysis that included 15 randomized trials (61,204 pregnant women) and assessed whether the relative effect of MMS differed by the following: adherence alone; adherence in combination with gestational age at initiation; and the total number of tablets taken. We also evaluated the observational …

Spectral Differences Of Three Ethyl Cellulose-Coated Vitamins, Sophia Garcia Buenrostro, Mia Toronto, Owen Mcdougal
Idaho Conference on Undergraduate Research
Water-soluble vitamins C (ascorbic acid), B5 (pantothenic acid), and B9 (folic acid) are essential micronutrients commonly added to fortified foods to ensure adequate dietary intake. However, their sensitivity to heat, light, and moisture presents challenges for stability during food processing and storage. A solution to the sensitivity of vitamins is coating them in ethyl cellulose, a hydrophobic polymer that protects the vitamins against environmental factors that can degrade the vitamins before the product is consumed. For fortified foods, accurate quantification of vitamin content is necessary for compliance with FDA regulations and food labeling standards. Near-Infrared (NIR) spectroscopy, a rapid, non-destructive …
Obstetric Fistula Prevalence Among Internally Displaced Women In Sub-Saharan Africa, Kyli Fox Soug
Obstetric Fistula Prevalence Among Internally Displaced Women In Sub-Saharan Africa, Kyli Fox Soug
AWE (A Woman’s Experience)
Obstetric fistulas are rare in the West but common for women in the Global South, particularly in sub-Saharan Africa and South Asia. Fistulas are caused by prolonged or obstructed labor which forces downward pressure on the baby’s head and the mother’s pelvis. This pressure creates a non-natural opening in the genital region. Fistulas cause leakage of waste and therefore are often accompanied by unwanted odors. As of 2021, the prevalence of obstetric fistulas was 2 million women in South Asia and sub-Saharan Africa, and 3 in every 1000 women of reproductive age in the world have a fistula. In the …

Objective: To examine associations of serum imidazole propionate (ImP), histidine, and their ratio with incident type 2 diabetes (T2D) and related dietary and gut microbial factors in U.S. Hispanic/Latino people.
Research design and methods: In the Hispanic Community Health Study/Study of Latinos, we evaluated serum ImP, histidine, and ImP-to-histidine ratio at baseline (2008-2011) and their cross-sectional associations with dietary intake and prospective associations with incident T2D over ∼12 years (n = 4,632). In a subsample with gut microbiota data during a follow-up visit (2016-2018), we examined gut microbial species associated with serum ImP and their potential interactions with dietary intake. …

Fish and other seafood products are an integral and valuable part of human diets. In advanced nations, the transportation of fish and other seafood products to customers requires packaging and display. Due to their intrinsic physicochemical properties, seafood products are particularly susceptible to microbial growth, resulting in shorter shelf lives and higher spoilage rates compared to other animal-derived proteins, such as meat. To prevent microbial spoilage and preserve the freshness and quality of fish and other seafood products, petroleum-based plastic materials are commonly used in combination with packaging technologies, such as vacuum packaging and modified atmosphere packaging. However, as these …

Background: Milk quality analysis (MQA) is critical for ensuring high-quality dairy production and enhancing the productivity of dairy processing plants. The integration of Internet of Things (IoT) and artificial intelligence (AI) can revolutionise MQA by enabling automated, real-time detection and monitoring of key parameters (i.e. composition, adulterants, indicators of microbial quality), reducing human error and improving decision-making in the dairy supply chain. Aim(s): This systematic review aimed to evaluate the application of IoT and AI in MQA over the past decade, focussing on three critical areas: composition monitoring, adulteration detection and indicators of microbial quality. Methods: A systematic analysis of …

Electronic Theses and Dissertations
This mixed methods case study investigates how Title I funds are allocated and perceived in relation to student achievement in six rural elementary schools in the southeastern United States. Drawing on the Distributive Justice Theory by John Rawls, the study explored the perspectives of three principals and three instructional coaches regarding the effectiveness of Title I expenditures in improving outcomes for economically disadvantaged students. Quantitative data from school report cards (2019-2023), Title I expenditure plans, and SC-Ready English Language Arts assessment scores were analyzed alongside qualitative data from semi-structured interviews about the expenditures.
Findings revealed that expenditures most strongly associated …

Background: Vitamin D plays a critical role in bone metabolism, calcium regulation, and various cellular processes, including those linked to cancer. The biologically active form, 1,25-dihydroxyvitamin D [1,25(OH)2D], works through the Vitamin D Receptor (VDR). Polymorphisms in VDR and related genes have been associated with cancer risk, including breast cancer. This case-control study aimed to investigate the relationship between serum vitamin D levels and breast cancer among Kenyan women.
Methods: Serum 25-hydroxyvitamin D [25(OH)D] levels were measured in 112 breast cancer patients and 106 controls using electrochemiluminescence.
Results: Results indicated that 81.2% of participants had deficient or insufficient vitamin D …

Selenium (Se)-deficient soils result in Se-deficient forages that do not meet the nutritional requirement for this trace mineral in grazing cattle. Supplementation of Se conventionally occurs through a basal vitamin/mineral mix containing Se in an inorganic form (ISe), although organic Se (OSe) is available when cattle graze on forage. We previously reported that the provision of supplemental Se as a 1:1 mixture of ISe:OSe (MIX), in contrast to the industry standard of ISe alone, increases early luteal phase concentrations of systemic progesterone (P4) and increases the length of the conceptus at day 17 of pregnancy. The objectives herein were to …

Childhood adversity (CA) impacts a large proportion of US youth with far reaching consequences for development and subsequent health outcomes (McLaughlin et al., 2012). Given the widespread impact of CA, it is imperative to understand how these exposures impact development, as well as identify opportunities for intervention. McLaughlin and Sheridan (2016) proposed the Dimensional Model of Adversity of Psychopathology (DMAP), providing a framework for understanding the heterogeneity of outcomes related to exposure to CA. DMAP emphasizes that deprivation (i.e., lack of expected cognitive or social stimulation) and environmental threat (i.e., exposure to harm or the threat of harm) impacts youth …
