Assessment Of Microbial Quality And Safety, Including Aflatoxin B1, In Buckwheat Flour And Groats, La Fontaine Bahatsi

Department of Food Science and Technology: Dissertations, Theses, and Student Research

Buckwheat (Fagopyrum esculentum), a gluten-free pseudocereal, has gained popularity in global food markets for its nutritional value and functional properties. However, despite its health-promoting potential, buckwheat is vulnerable to microbial contamination and mycotoxin accumulation during cultivation, processing, and storage. These factors present significant food safety concerns that remain understudied, particularly in North America.

This study investigated the microbiological quality and mycotoxin contamination of buckwheat flour and groats collected from different suppliers via online sourcing. Samples were collected in two consecutive years (2024-2025). Microbiological quality, including aerobic plate counts (APC), Enterobacteriaceae, coliforms, E. coli, yeasts, and molds, was evaluated …

Low Prevalence Of Helminth Infection In Ugandan Children Hospitalized With Severe Malaria, Drew Capone, Nuzrath Jahan, Ruth Namazzi, Robert Opoka, Chandy John

Paediatrics and Child Health, East Africa

Co-infection by intestinal helminths and Plasmodium spp. may be common in endemic communities. In 2003, Uganda instituted a national deworming program, with anti-helminth medication provided twice annually to children 6 months to 5 years of age, but few follow-up studies have been conducted. Several studies have identified a relationship between helminth infection, Plasmodium spp. infection and malaria severity. However, the relationship is not well defined, and results are inconclusive. We analyzed 177 stool samples from a cohort of children with severe malaria enrolled in two hospitals in Uganda from 2014–2017. All children were 6 months to 48 months of age …

If You Take Care Of Me, I’Ll Take Care Of You: The Mutual Gains Of Parental Support For Employee And Organizational Well-Being, Cara-Lynn Scheuer, Angela R. Grotto, Jessica L. Doll Sep 2025

If You Take Care Of Me, I’Ll Take Care Of You: The Mutual Gains Of Parental Support For Employee And Organizational Well-Being, Cara-Lynn Scheuer, Angela R. Grotto, Jessica L. Doll

Department of Management Faculty Scholarship and Creative Works

As the number of working parents rises, employers are increasingly called upon to support employees’ work–family (WF) obligations. Grounded in conservation of resources theory, we examined how providing varying degrees of parental support (paid vs. unpaid leave and family-supportive vs. -unsupportive leadership) is mutually beneficial to employee and organizational well-being – the ultimate criterion for organizational science. Participants (N = 538) were randomly assigned to read vignettes that varied the amount of parental support provided for expectant working parents. We tested whether WF benefits fairness perceptions moderated the indirect effects of parental support on felt obligation through job-related anxiety. Findings …

Actin Up And Factor’D In: A Pediatric Spindle Cell Lesion Case Presentation, Michael Higham, Stephanie Campbell, Naomie Jean, Amanda Killeen

School of Podiatric Medicine Publications

Introduction: Solitary spindle cell nodules on the foot in pediatric patients are rare and diagnostically challenging. Dermatofibroma (benign fibrous histiocytoma), a common adult dermal lesion, is infrequently observed in children under 18.

The spectrum of pediatric spindle cell tumors includes reactive entities like nodular fasciitis and dermatomyofibroma, benign neoplasms such as myofibroma, and malignant tumors including spindle cell rhabdomyosarcoma, fibrosarcoma, and dermatofibrosarcoma protuberans (DFSP). Accurate differential diagnosis is essential, as DFSP requires wide excision or Mohs surgery to reduce recurrence risk.

Methods (Case Presentation): An 11-year-old boy presented with a one-year history of a non-healing lesion on the heel, initially …

A Novel “Stairstep” Approach To The Management Of Extreme Hypernatremia Using Continuous Kidney Replacement Therapy And Hypertonic Saline, Bahar Barani, Xuexin Lu, Darcy Weidemann, Judith Vansickle, Vimal Chadha, Nathan Beins

Posters

Hypernatremia is defined as a serum sodium greater than 145 mEq/L and is due to either a deficit of free water or excess sodium intake. Extreme hypernatremia (sodium level > 190 mEq/L) is immediately life–threatening with mortality rates > 60%. It is especially challenging to avoid complications, such as permanent neurological injury, respiratory failure, and profound electrolyte derangement, when children are in kidney failure. Established guidelines are lacking for correcting such extreme levels due to a paucity of information in the literature, although general recommendations are to decrease levels by no more than 10-12 mEq/L per day to prevent neurological complications. We …

Recombinant Erythropoietin Use For Anemia Of Prematurity: A Three Year Since Center Experience, Hannah Darland, Krishna Dummula, Chaitali Mahajan, Vishal Pandey

Posters

Background: Anemia is a common disorder of prematurity secondary to limited blood volume, excessive blood draws, inadequate nutrition, poor iron reserves, and insufficient endogenous erythropoietin. While many NICUs use recombinant erythropoietin (rEpo) to treat anemia of prematurity, the absence of universal guidelines has led to variability in dosing and schedules. Here we present our experience on the use of rEpo in a level 3 NICU. Our unit protocol uses 400 IU/kg three times a week for a total of 9 doses if hematocrit < 30%. Objectives: The purpose of this study was to evaluate the response to rEpo in infants with anemia of prematurity. Methods: Charts of infants born between 2018 and 2020 with gestation ≤34 weeks who received rEpo for anemia of prematurity were retrospectively reviewed. We defined response to therapy as an increase of hematocrit by 5% from pre-treatment baseline. Infants who did not achieve the therapeutic goal or who received blood transfusions were considered non-responders. Neutropenia, thrombocytopenia, and retinopathy of prematurity (ROP) requiring treatment were treated as adverse events. Results: A total of 44 infants were treated with rEpo during the study period. Clinical characteristics are described in Table I. Average hematocrit at birth was 44.8±7.5 (32.7 to 60.8). Infants were started on rEPO at a median corrected age of 33.3 ±3 weeks and a weight of 1674±622 g. Average DOL was 37±18 at initiation of therapy. Average baseline hematocrit at the start of therapy was 27.9±1.8%. 80% of patients (35/44) responded with increase of hematocrit by >5%, 20% (9/44) did not respond. 75% of infants (33/44) received all 9 doses. 11 patients received …

Blockchain-Based Accountability: A Systematic Literature Review, Nabeel Z. Tawfeeq, Dujan B. Taha Sep 2025

Blockchain-Based Accountability: A Systematic Literature Review, Nabeel Z. Tawfeeq, Dujan B. Taha

Mesopotamian Journal of CyberSecurity

The Blockchain algorithm has advanced the accountability and transparency of modern digital infrastructures. Enforcing responsible behavior and data integrity across distributed environments involves several key components, such as smart contracts, access control models, cryptographic techniques, and a decentralized identity framework. Because the blockchain ledger is immutable and transparent, once a transaction is recorded, it cannot be altered without detection, making fraudulent actions easily traceable and thereby ensuring accountability. However, the need for hybrid approaches that combine on-chain and off-chain solutions for an efficient reliability system introduces challenges, including privacy preservation, scalability, and regulatory compliance. This paper analyzes the effective features …

From Structure To Specificity: Biophysical Characterization Of Functional Interfaces In Protein Systems, Logan M. Brown Sep 2025

From Structure To Specificity: Biophysical Characterization Of Functional Interfaces In Protein Systems, Logan M. Brown

Doctoral Dissertations

Proteins are nature’s dynamic molecular machines, operating across a spectrum from highly ordered scaffolds to intrinsically disordered systems, and executing functions that depend on both precise structures and conformational flexibility. Yet, the mechanistic rules linking sequence, structure, and activity particularly in disordered proteins and specialized functional adaptations remain incompletely understood. This dissertation addresses that gap by integrating structural biology, biophysics, and protein engineering to dissect molecular recognition, stability, and function across three diverse yet thematically connected protein systems. Building on this understanding of protein structure and function, the following four projects apply these concepts to address diverse biological questions, ranging …

Evaluating The Effects Of Agricultural Management Practices On Beneficial Arthropod Communities, Isaac Newton Ativor Sep 2025

Evaluating The Effects Of Agricultural Management Practices On Beneficial Arthropod Communities, Isaac Newton Ativor

Doctoral Dissertations

Arthropods provide essential ecosystem services to our agricultural landscapes. These ecosystem services include biological control of pest organisms, including weed seeds, and plant pollination. Concerningly, however, there has been a global decline in insect populations over the last decade, a major cause of which is agricultural intensification. Previous research has demonstrated that agricultural management practices can strongly influence the species composition and abundance of arthropod communities, and therefore presumably the ecosystem services or disservices these organisms provide; however, our understanding of these interactions remains limited. I conducted three studies to investigate whether agricultural practices common in annual row crop (tillage …

Reentry, Justice Involvement, And Evolving Perspectives: Moving Toward Rehabilitation?, Casey Cavanaugh Sep 2025

Reentry, Justice Involvement, And Evolving Perspectives: Moving Toward Rehabilitation?, Casey Cavanaugh

Doctoral Dissertations

As prison populations climb, it is inevitable that the vast majority of incarcerated individuals will eventually return to the community. As they return, they face numerous barriers resulting from their incarceration. While it is important to identify barriers to reentry, it is also important to identify facilitators of reentry, which include forces that may mitigate reentry challenges. A tool is needed to measure this comprehensive list of barriers and facilitators, and in doing so, one may identify improvements and successes that stretch beyond merely that of recidivism. “Successful” reentry is typically measured through low recidivism rates, which recent government reports …

Investigations Into Prior Knowledge And Self-Efficacy As Predictors Of Exam Performance In General Chemistry, And Student Interactions With Chemistry Textbooks, Gordon Hunter

Doctoral Dissertations

The first chapter addresses the validity and reliability of the Motivated Strategies for Learning Questionnaire (MSLQ) as a tool for chemistry education research. The study shows that the original MSLQ did not meet modern standards of reliability and presents a modified version that better captures self-efficacy in chemistry-specific contexts. The revised instrument shows improved model fit, reinforcing the importance of refining assessment tools for chemistry education research. The effects of prior knowledge and self-efficacy on student performance in a first-semester general chemistry course are investigated in the second chapter. Self-efficacy, defined as a learner's belief in their capability to successfully accomplish …

Planning Responses To Drinking Water System Emergencies, Jingyan Huang Sep 2025

Planning Responses To Drinking Water System Emergencies, Jingyan Huang

Doctoral Dissertations

Despite extensive efforts to ensure clean and safe drinking water, drinking water contamination emergencies remain a persistent challenge in the United States. These events can result in widespread public health impacts, economic losses, and long-term environmental damage, particularly when triggered by hazardous chemical releases. Effective management of such crises requires a dual focus on both technical preparedness and human decision-making. This dissertation addresses these challenges through a two-part investigation that bridges pre-incident planning and post-incident response. It is guided by two core research objectives: (1) to evaluate commonly applied emergency countermeasures from both resilience and sustainability perspectives; and (2) to …

Counting Kelp: Development And Assessment Of Modelling Approaches To Improve Understanding Of Kelp Bed Abundance And Resilience In The Gulf Of Maine, Constance N. Tyler Sep 2025

Counting Kelp: Development And Assessment Of Modelling Approaches To Improve Understanding Of Kelp Bed Abundance And Resilience In The Gulf Of Maine, Constance N. Tyler

Doctoral Dissertations

Kelp habitats in the Gulf of Maine are threatened by rising ocean temperatures and marine invasions. The replacement of kelps with red turf macroalgae fundamentally alters these habitats and disrupts the ecosystem services they provide. Thorough assessment and monitoring of kelp habitats is needed for proper conservation of these habitats, but most long-term monitoring is performed using traditional survey methods that are restricted in the amount of space they can cover. Habitat modelling approaches are required to expand our knowledge of Gulf of Maine kelp habitats, and to better understand the interactions between kelp and red turf habitats across the …

Bio-Acoustical Statistical Signal Processing For Detection, Classification, And Population Estimation In Wildlife Monitoring, Yue Liang Sep 2025

Bio-Acoustical Statistical Signal Processing For Detection, Classification, And Population Estimation In Wildlife Monitoring, Yue Liang

Doctoral Dissertations

Sound is a primary way for many animal species to communicate, forage, navigate, and assess their environment. As a result, passive acoustic monitoring (PAM), the recording and analysis of animal vocalizations, has become a valuable, non-invasive alternative to visual surveys. However, the massive volume of acoustic data generated annually, often reaching hundreds of terabytes, presents a significant challenge for efficient analysis. Since manual inspection of every frame in such data is infeasible, it is essential to develop automated detection and classification tools.

This thesis investigates and develops several statistical signal processing and machine learning techniques to address this challenge. The …

The nature of work continues to evolve, particularly in the aftermath of the COVID-19 pandemic. While a substantial number of employees have returned to traditional, in-person work environments, many continue to engage in remote or hybrid work arrangements. Online meetings are a significant aspect of remote work, and while there has been a significant increase in this area, there are still aspects of these meetings that are not fully understood. Existing research in this area has primarily focused on the development of tools to facilitate meeting execution and content management. In contrast, relatively few studies have explored the social dynamics …

Eastern Oyster, Crassostrea Virginica, Genomics In A Well-Mixed Estuarine System: Examining Population Structure, Viability, And Response To Stressors, Alyssa Strickland Sep 2025

Eastern Oyster, Crassostrea Virginica, Genomics In A Well-Mixed Estuarine System: Examining Population Structure, Viability, And Response To Stressors, Alyssa Strickland

Doctoral Dissertations

Eastern oysters, Crassostrea virginica, are foundational estuarine species that contribute to a variety of ecosystem services including water filtration, nutrient cycling, habitat creation, and shoreline protection. However, populations have declined due to disease, overharvesting, habitat loss, and climate change, especially in northern systems such as New Hampshire’s Great Bay Estuary (GBE), located in the Gulf of Maine, one of the world’s fastest warming waters. This dissertation uses genomic and transcriptomic approaches to understand the drivers of population structure, decline, and resilience in GBE oyster populations, aiming to aid restoration and aquaculture. Chapter 1 used low-coverage whole-genome sequencing to understand population …

Uncovering The Plant-Microbe-Permafrost Paradigm As It Relates To Soil Priming And Arctic Carbon Cycles, Sean Robert Schaefer Sep 2025

Uncovering The Plant-Microbe-Permafrost Paradigm As It Relates To Soil Priming And Arctic Carbon Cycles, Sean Robert Schaefer

Doctoral Dissertations

Permafrost, or perennially frozen soil, covers approximately 25% of the northern hemisphere and contains over half of the world’s soil organic carbon stocks. Permafrost-affected regions are rapidly warming, resulting in ecosystem changes including permafrost thaw and a shift from sedge-dominated to shrub-dominated plant communities. As permafrost thaws, it releases previously unavailable compounds to plants and microorganisms. Plant root inputs can then stimulate the decomposition of thawed permafrost, increasing greenhouse gas emissions in a process called priming. Permafrost thaw increases the decomposition of previously frozen soil organic matter (SOM); however, the extent of decomposition is highly dependent on plants and their …

Quality Improvement Project The Role Of Targeted Education And Its Impact On Self-Efficacy And Cognitive Impairment Recognition Among Medical Assistants, Jicky Guzman Sep 2025

Quality Improvement Project The Role Of Targeted Education And Its Impact On Self-Efficacy And Cognitive Impairment Recognition Among Medical Assistants, Jicky Guzman

Doctor of Nursing Practice Projects

Primary care teams develop lasting relationships with patients that can reveal subtle cognitive changes during routine visits (e.g., identity verification and brief mobility checks). Yet, cognitive decline often goes unnoticed and poorly documented, which can lead to delayed care. This quality improvement (QI) project addressed a gap in the detection of mild cognitive impairment (MCI), such as Alzheimer’s disease (AD), among frontline staff. It assessed whether an educational intervention could improve self-efficacy in recognizing early cognitive impairment, measured by the General Self-Efficacy Scale (GSES). Guided by Bandura’s Self-Efficacy Theory and Lewin’s change model, a quasi-experimental pretest–posttest study was conducted at …
