Vegan In College: Simple, Affordable, Healthy Meals For Students, Haley Cedarholm May 2018

Vegan In College: Simple, Affordable, Healthy Meals For Students, Haley Cedarholm

Senior Honors Projects

Vegan in College

Simple, Affordable, Healthy Meals for Students

For the entirety of my college career I have led a vegan lifestyle. Like many students, college represented the first time in my life where I experienced true independence. As I began to live by myself, I had to make food choices and overcome barriers such as lack of time, money and knowledge of nutrition. While leading a healthy vegan lifestyle can be affordable and easy, I struggled to find this balance and I knew I wasn’t alone.

Many students, vegan or not, experience the same barriers to eating healthfully that …

University Regulation Of Student Speech: In Search Of A Unified Mode Of Analysis, Patrick Miller May 2018

University Regulation Of Student Speech: In Search Of A Unified Mode Of Analysis, Patrick Miller

Michigan Law Review

Universities are meant to be open marketplaces of ideas. This requires a commitment to both freedom of expression and inclusivity, two values that may conflict. When public universities seek to promote inclusivity by prohibiting or punishing speech that is protected by the First Amendment, courts must intervene to vindicate students’ rights. Currently, courts are split over the appropriate mode of analysis for reviewing public university regulation of student speech. This Note seeks to aid judicial review by clarifying the three existing approaches—public forum analysis, traditional categorical analysis, and a modified version of the Supreme Court’s education-specific speech doctrine—and proposes a …

Effects Of Las Comadres On Latino Parental Involvement, Karla Ortiz

Capstone Projects and Master's Theses

Parent involvement is essential to every child’s education. This senior capstone examines how a group of pre-service and in-service teachers called “Las Comadres” could really involve Latino parent involvement in their children’s education. While school perceives parental involvement in their traditional way, Los Comadres perceived that “platicas – conversation” is the culturally appropriate way to involve Latino parents in their children’s education regardless of their language barriers.

Who Am I? Refugee Adolescents' Transformation And Negotiation Of Identities At The Cultural Borders, Aamena Saleh May 2018

Who Am I? Refugee Adolescents' Transformation And Negotiation Of Identities At The Cultural Borders, Aamena Saleh

All Dissertations

Many gaps exist in the research on refugee students in general, with the overall portrayal in the literature presenting a school experience in which refugees struggle academically, socially, and emotionally (Roxas, 2008; McBrien, 2005; Lerner, 2012; Lustig, 2004; Smith & Halbert, 2013). Current research discusses social and linguistic struggles frequently, and highlights the need for schools to acknowledge refugees’ backgrounds and draw on their linguistic repertoires to aid their acquisition of the English language (Cummins, 2005; Cummins, et al., 2006; Gutierrez, Baquedano-Lopez, & Tejeda, 1999; Gutierrez, Baquedano-Lopez, Alvarez, & Chiu, 1999). Little has been done to uncover who refugees are …

All participants completed the Revised Children’s Manifest Anxiety Scale-2 pre- and post-treatment as well as a Children’s Intervention …

Religious Leadership And Political Affiliation On A Secular Midwestern Campus, Kristy Atanasov Apr 2018

Religious Leadership And Political Affiliation On A Secular Midwestern Campus, Kristy Atanasov

Honors Projects

This qualitative study explores the connection between religion and political affiliation in campus organizations from the perspective of the leaders of religious organizations on a secular Midwestern university. Interviews with ten leaders of Christian, Jewish, or Muslim organizations were utilized in gathering data. The current literature on campus religion is rarely qualitative, and fails to address specific campus religious organizations and their leaders. The results of the study found that religious affiliation is not a highly contributing factor in political affiliation, as previous quantitative studies have indicated. Ethnic, religious, and racial marginalization emerged as more significant indicators of political affiliation …

Exploration Of The Qualities And Interactions Of Post-Secondary Faculty Identified As Exemplary By Students With Support Services, Joan E. Green

Special Education ETDs

Recent statistics indicate that approximately 11% of undergraduate college students seek out disability support services (National Center for Education Statistics, 20015). The review of research indicated a lack of research regarding faculty in postsecondary education and their knowledge of disabilities and services, experiences of individuals with disabilities, and in particular, experiences and interactions toward students with support services attending postsecondary educational institutions. The purpose of this case study was to explore the classroom experiences of seven faculty nominated by students with support services as exemplary at a four-year public university. The semi-structured interviews focused on the abilities of students with …

Personal Care Products: Where Are The Phthalates?, Tara Lunsford, Erika L. Doctor, Cassandra S. Korte

Faculty and Staff Publications & Presentations

Phthalates are chemicals that are commonly used as a plasticizer in personal care products. This class of compounds is added to help prevent products from drying out. Phthalates have been shown to have potential negative impacts on reproductive organs, cause birth defects, effect the endocrine system, as well as causing other ill effects. For example, previous work found that phthalates can have an effect on the endocrine system of adolescent individuals. In an intervention study, phthalate exposure was reduced when these products were not being used. The purpose of the present study is to examine phthalate abundance in personal care …

Psychometric Properties Of An Instrument Derived From The Intentional Relationship Model: The Self-Efficacy For Recognizing Clients’ Interpersonal Characteristics (N-Seric), Victoria C. Ritter, Farzaneh Yazdani, Tove Carstensen, Mikkel M. Thørrisen, Tore Bonsaksen

The Open Journal of Occupational Therapy

Background: The Intentional Relationship Model conceptualizes the therapeutic use of self in occupational therapy. To increase motivation for and success in establishing therapeutic relationships, therapists need self-efficacy for using the self in therapeutic practice. However, attempts to combine this model with self-efficacy theory are rare, and instruments by which to measure self-efficacy for therapeutic use of self are in a developing stage. This study aimed to examine the factor structure and internal consistency of the Norwegian Self-Efficacy for Recognizing Interpersonal Characteristics (N-SERIC).

Methods: Occupational therapy students (n = 100) from two education programs completed the instrument and …

Tipsheet: Student Mental Health And Resources, Unl Office Of The Executive Vice Chancellor Apr 2018

Tipsheet: Student Mental Health And Resources, Unl Office Of The Executive Vice Chancellor

United States Public Health Resources

Stress, depression, anxiety, alcohol abuse, eating disorders, and other mental health challenges affect at least 1 in 5 college students*. Faculty can be an important source of support for UNL students. Here are some strategies for supporting student mental health:

1. Communicate the importance of mental health. Mental health is just as important as physical health. When someone breaks a leg they go to the hospital. Mental illness is the same thing. If someone is feeling depressed they should seek treatment. Normalize mental health by talking about getting support if you notice your students struggling with stress, depression, anxiety, etc. …

Library Services Publications

In 2017, Library Services at Minnesota State University, Mankato, in collaboration with our College of Graduate Studies and Research, launched the first annual Graduate Online Symposium. This event was designed to showcase the research, scholarly and creative activities of our graduate students. Rather than presenting at an on-campus forum, we gave our graduate students (both on-campus and off-campus) an opportunity to be able to share their research in an open, online environment. The Graduate Online Symposium allowed our graduate students the chance to record brief 15-minute presentations about their research and creative activities. These digital presentations were then made available …

Erasmus Mundus Master Of Bioethics: A Case For An Effective Model For International Bioethics Education., Jan Piasecki, Kevin Dirksen, Hamilton Inbadas

Articles, Abstracts, and Reports

Designing bioethics curriculum for international postgraduate students is a challenging task. There are at least two main questions, which have to be resolved in advance: (1) what is a purpose of a particular teaching program and (2) how to respectfully arrange a classroom for students coming from different cultural and professional backgrounds. In our paper we analyze the case of the Erasmus Mundus Master of Bioethics program and provide recommendations for international bioethics education. In our opinion teaching bioethics to postgraduate international students goes beyond curriculum. It means that such a program requires not only well-defined goals, including equipping students …

Health Professions Education

Purpose: Case teaching is a popular method of health management and policy education but its relationship with technology is outdated. This project aims to expand existing case teaching materials with YouTube videos, and to report preliminary findings on learning outcomes. Method: YouTube videos were selected to enhance course topics and materials found in traditional text based materials. Original videos …

Education Fraud At The Margins: Using The Federal False Claims Act To Curb Enrollment Abuses In Online, For-Profit K-12 Schools, Erin R. Chapman Feb 2018

Education Fraud At The Margins: Using The Federal False Claims Act To Curb Enrollment Abuses In Online, For-Profit K-12 Schools, Erin R. Chapman

Michigan Law Review

America’s online schools have some things to account for. In recent years, an increase in the number of for-profit K–12 schools has coincided with the rise of online education. Meanwhile, funding models that award money for each additional student incentivize for-profit schools to overenroll students in online programs that were once reserved for specialized subsets of students. Although, to date, reported incidents of enrollment fraud have been rare, there are many reasons to think that the problem has gone largely undetected. As education reformers on both sides of the political spectrum continue to push privatization and charter schools, figuring out …

This work explores what keeps Latinx driven to continue their education despite the challenges experienced. Factors such as college knowledge and adjustment to college will be addressed in …
