Making Summer Learning Equitable For Students In A Rural, Title I School District: Turning On The Faucet Of Resources, Kathrina O'Connell
The Interactive Journal of Global Leadership and Learning Infographics
This research explores summer learning loss and the effect of summer resources on students’ literacy growth. Using the faucet theory, this mixed methods sequential explanatory study was designed to provide equitable resources and educational support for students in grades five through eight in a rural, socioeconomically disadvantaged school district. Transportation, breakfast, lunch, books, and a literacy-focused enrichment program were coordinated and provided for all participants in an effort to reduce learning loss during summer break. The pragmatic approach to inquiry incorporated both quantitative (e.g., literacy outputs, registration, and attendance data) and qualitative data (e.g., parent open-ended question responses). BACKGROUND/OBJECTIVES: Concerns about regional disparities in heathy eating and nutritional status among South Korean adults are increasing. This study aims to identify the magnitude of regional disparities in diet and nutritional status among Korean adults who completed the 2017 Korea National Health and Nutrition Examination Survey (KNHANES).
SUBJECTS/METHODS: The participants were a nationally representative sample of Korean adults aged 19 years and older from the 2017 KNHANES (n = 6,126). We employed the svy commands in STATA to accommodate the complex survey design. Cardiovascular diseases (CVDs) remain the leading cause of mortality among adults living in the U.S. despite advances in treatment throughout the past century. A number of risk factors such as hypertension, obesity, smoking, and physical inactivity contribute to the significant rise of cardiovascular disease. This Capstone project is focused on providing families and students with meals during a pandemic. The majority of students in California are enrolled in a free or reduced breakfast and lunch program. Due to virtual learning it has become increasingly more difficult for students to be provided with school meals. Schools give opportunities to students to pick up their lunches but this is not beneficial for students with a lack of transportation or two working parents. There is little nutritional education in preschools. Children are not being taught about the importance of eating nutritious foods. When children are taught about nutrition, they will create positive eating habits that could make them less susceptible to health complications. To address the lack of nutrition education, I created a three-day lesson about nutrition for preschoolers at Teddy Bear Learning Center in Monterey, California.

The COVID-19 pandemic has increased the need for indirect Extension programming. To ensure a consumer-focused response, we gathered data from 452 survey respondents regarding how the pandemic was affecting their food-related and health behaviors. The majority reported obtaining their food from a grocery store as they had prior to the pandemic, albeit less frequently, and having increased their home food preparation. Due to the pandemic, respondents were less physically active and more stressed and were seeking reliable nutrition and wellness information. Through current trends in animal protein consumption, the United States poultry industry has seen a drastic rise in production and popularity. Over the last few decades, poultry meat has surpassed both beef and pork production to become the most widely consumed animal protein. Although the root is widely consumed, sweetpotato leaves (SPL) are often discarded and are only consumed in a few countries. In the United States, SPL consumption is limited to private gardens, particularly in the Southeastern United States. Not only are SPL a good source of nutrients such as vitamins and minerals, but they also contain polyphenol compounds including the caffeoylquinic acid derivatives and carotenoids such as lutein. Several studies have shown the polyphenol contents and antioxidant capacities of SPL, which vary based on year and variety, while few studies have shown anti-colon cancer effects of SPL. Assessing Healthful Eating And Physical Activity Practices In Places Children Learn, Carolyn D. Rider, Amanda Linares, Janice Kao, Christina Becker, Gail Woodward-Lopez

Site-level assessment questionnaires (SLAQs) were developed to assess nutrition and physical activity practices and environments in schools and other places children spend time in order to facilitate program planning and evaluation. After expert panel review for content validity, questionnaires were feasibility tested by users in six schools, three early care and education programs, and two out-of-school programs. Findings indicate that the questionnaires are feasible and useful for planning interventions. Extension programs can use SLAQs to support policy, systems, and environment change efforts that promote healthful eating and physical activity in children and to measure intervention effectiveness.

There are many types of diets with varying instructions on what kind and how much of a food, or food group, should be eaten. This cross sectional study focused on possible health benefits of a vegetarian diet in regards to the body composition of non-vegetarian and vegetarian women. The leading causes of death in the United States include many chronic diseases with modifiable risk factors including ischemic heart diseases. Gut microbiota-dependent trimethylamine N-oxide (TMAO) synthesis has been implicated in cardiovascular disease risk in recent years. New evidence may also implicate TMAO involvement in other chronic diseases including diabetes mellitus and chronic kidney disease. The role of diet in TMAO synthesis has also been of considerable interest, as certain dietary precursors are known to modulate circulating TMAO. The nutrient concentration of fruits and vegetables in the U.S.A. has declined in the past 50–70 years. Crop management practices utilizing on-farm inputs are thought to increase crop nutritional quality, but few studies have evaluated this under long-term side-by-side trials. An experiment was conducted from 2004 to 2005 at Rodale Institute’s long-term Farming Systems Trial to investigate the nutritional quality of vegetables under organic manure (MNR) and conventional (CNV) farming systems, with or without arbuscular mycorrhizal fungi (AMF) treatment. AMF reduced the vitamin C content in carrots in both systems in 2004, but the reduction was 87% in CNV and …

Purpose: Breast cancer survivors are at increased risk of cancer recurrence, second malignancies, and other comorbid conditions. This study examined if use of a convenient, commercially available, $65 per month app that gives breast cancer survivors access to a health and wellness coach is more effective than a self-guided toolkit and one-time health education session at achieving the following goals: 1) improving adherence to a plant-based diet, 2) increasing physical activity, 3) assisting with weight loss and reduction in body mass index, 4) reducing elevated depression and fatigue scores, and 5) leading to sustained adherence to lifestyle and wellness plan …

The aim of the study was to identify dietary patterns (DP) and examine differences in anthropometric measures, blood pressure (BP), cardiorespiratory fitness and nutritional knowledge of 6- and 10-year-old children at baseline and following a nutrition and physical activity intervention, with respect to DP and treatment group. This is a longitudinal study. Food diary, nutritional knowledge questionnaire and 550-m walk/run test measured dietary intake, nutritional knowledge and cardiorespiratory fitness, respectively. As a result, many nutrients have been related to improved outcomes for patients suffering from COVID-19. Sleep is essential but incompatible with other behaviors, and thus sleep drive competes with other motivations. We previously showed Drosophila males balance sleep and courtship via octopaminergic neurons that act upstream of courtship-regulating P1 neurons (Machado et al., 2017). Here, we show nutrition modulates the sleep-courtship balance and identify sleep-regulatory neurons downstream of P1 neurons. Yeast-deprived males exhibited attenuated female-induced nighttime sleep loss yet normal daytime courtship, which suggests male flies consider nutritional status in deciding whether the potential benefit of pursuing female partners outweighs the cost of losing sleep. The majority of students will experience stress during their first year at college. Stress can have many ill effects on the well-being of a first-year student and can even be a significant factor in weight gain – hence the term “The Freshman 15”. Sixty seven first-year students at the University of South Carolina were recruited to participate in a sixteen-item questionnaire focused on analyzing the relationship between stress and dietary habits. Introduction: COVID-19 has challenged governments, healthcare systems, and individuals, drawing attention to the limits of modern technology and the extent of social inequity. Such challenges have directed attention to historical epidemics as repositories of data that could contribute to effective public health strategies and prognostic modeling. In light of the well-established correlation between frailty and mortality from COVID-19, this paper investigates the relationship between frailty, inequity, and mortality in the setting of the Black Death of 1346 – 1353, in order to identify trends over time in populations at the greatest risk of mortality during pandemics.

BACKGROUND: Investigation of physical activity and dietary behaviors across locations can inform "setting-specific" health behavior interventions and improve understanding of contextual vulnerabilities to poor health. This study examined how physical activity, sedentary time, and dietary behaviors differed across home, school, and other locations in young adolescents.
METHODS: Participants were adolescents aged 12-16 years from the Baltimore-Washington, DC and the Seattle areas from a larger cross-sectional study. Wellbeing is generally understood as the quality of people’s lives. Promoting well-being and public health awareness involves understanding and addressing adults as well as children and young people. The effect of wellbeing education programs on children depends on the method and style in which the information is transmitted. In spite of many conventional methods like small group discussions, large school assemblies, or lecture workshops are addressed, initiative steps could be taken developing a multimedia packages that would be able to assist children in increasing their knowledge and awareness on public health and wellbeing.
