Nutritional Wellness In Preschoolers With Autism Spectrum Disorder, Jayanthi Kandiah, Constance Mcintosh, Naomi R. Boucher Jan 2023

Nutritional Wellness In Preschoolers With Autism Spectrum Disorder, Jayanthi Kandiah, Constance Mcintosh, Naomi R. Boucher

Perspectives on Early Childhood Psychology and Education

Preschool age is a time when children experience erratic appetite and fluctuations in growth and development. Typically developing preschoolers have picky eating habits leading to varied nutrient deficiencies. Dietary inadequacies are further compromised in preschoolers with autism spectrum disorder (ASD) due to abnormal sensory sensitivity, social deficits, and repetitive behaviors of interests. To promote health and wellness in this population, school psychologists and educators in collaboration with registered dietitian nutritionists who are the food and nutrition experts need to identify avenues to promote healthy eating for this pediatric population. This article focuses on nutritional needs and considerations of preschoolers with …

The Healthcare Experiences Of African Americans With A Dual Diagnosis Of Hiv/Aids And A Nutrition-Related Chronic Disease: A Pilot Study, Meena Mahadevan, Ndidiamaka Amutah-Onukagha, Valerie Kwong

Department of Nutrition and Food Studies Scholarship and Creative Works

For HIV-positive African Americans, the mistrust of medical providers due to anticipation of unequal treatment care, prejudice, and bias can become a major deterrent to medication and treatment adherence. Although programs and services incorporate strategies to improve patient–provider relationships, a deeper understanding of their healthcare experiences, especially among those with a dual diagnosis of HIV/AIDS and a nutrition-related chronic disease, is lacking. This qualitative study aimed to address this gap by conducting focus groups with participants who identified themselves as being African American, and having a dual diagnosis of HIV/AIDS, and a chronic disease. Content analysis generated several major themes, …

Cultivating Carrots, Community, And Health-Conscious Children: Investigating The Effects Of Community Garden Implementation On Nutrition Attitudes Of Elementary Students In The Los Angeles Unified School District, Hannah Michele Tiedemann

Scripps Senior Theses

Growing up in an urban food desert can significantly affect children's development, health, and well-being (Jencks et al., 1990; Leventhal et al., 2000). Compared to their more affluent peers, youth living in low-socioeconomic urban neighborhoods are at greater risk of experiencing poor-quality diets, food insecurity, unhealthy body weights, and mental health problems (Duncan et al., 1997; Sampson et al., 1997). Moreover, children living in food-insecure households are more likely to consume calorically dense diets high in trans fat and added sugar, putting them at risk for poor health, childhood obesity, and chronic, diet-related diseases as adults (Nielsen et al., 2002). …

Food As A Vector For Change: Lessons From The Third Sector On Improving Livelihoods With Nutritional Knowledge In Medellín And Bogotá, Solomon Treister Jan 2023

Food As A Vector For Change: Lessons From The Third Sector On Improving Livelihoods With Nutritional Knowledge In Medellín And Bogotá, Solomon Treister

Honors Theses

In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. In Colombia, internal displacements and urban migration have accelerated a loss of connection with the land and food processes. At the same time, …

Protecting Low-Income Consumers In The Era Of Digital Grocery Shopping: Implications For Wic Online Ordering, Qi Zhang, Priyanka Patel, Caitlin M. Lowery

Community & Environmental Health Faculty Publications

The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) is now expected to allow participants to redeem their food benefits online, i.e., via online ordering, rather than only in-store. However, it is unclear how this new benefit redemption model may impact participants’ welfare since vendors may have an asymmetric information advantage compared with WIC customers. The WIC online ordering environment may also change the landscape for WIC vendors, which will eventually affect WIC participants. To protect WIC consumers’ rights in the new online ordering model, policymakers need an appropriate legal and regulatory framework. This narrative review provides that …

Community & Environmental Health Faculty Publications

The Special Supplemental Nutrition Program for Women, Infants, and Children (WIC) plans to allow participants to redeem their food package benefits online, i.e., online ordering. As grocery shopping online has become more common, companies have developed strategies to market food products to customers using online (or mobile) grocery shopping platforms. There is a significant knowledge gap in how these strategies may influence WIC participants who choose to shop for WIC foods online. This review examines the relevant literature to (1) identify food marketing strategies used in online grocery shopping platforms, (2) understand how these strategies influence consumer behavior and consumer …

Effects Of Ketone Bodies On Energy Expenditure, Substrate Utilization, And Energy Intake In Humans, Rodrigo Fernández-Verdejo, Jacob T. Mey, Eric Ravussin

Division of Basic Science Faculty Publications

The potential of ketogenic approaches to regulate energy balance has recently gained attention since ketones may influence both energy expenditure and energy intake. In this narrative review, we summarized the most relevant evidence about the role of ketosis on energy expenditure, substrate utilization, and energy intake in humans. We considered different strategies to induce ketosis, such as fasting, dietary manipulation, and exogenous ketone sources. In general, ketosis does not have a major influence on energy expenditure but promotes a shift in substrate utilization towards ketone body oxidation. The strategies to induce ketosis by reduction of dietary carbohydrate availability (e.g., ketogenic …

The Experiences Of Middle-Aged Women In An Online Weight-Loss Community, Holly Fields

Walden Dissertations and Doctoral Studies

The obesity epidemic continues to be a public health crisis in the United States. The number of obese middle-aged women has risen dramatically over the past few decades. Despite multiple levels of support available, not all women are receiving the support they need to reduce overweight/obesity, as evidenced by the continuing rise in obesity. Using a qualitative phenomenological approach, this study examined middle-aged women's views on exercising, eating healthily, and social support in online weight-loss communities. For this study, the health belief model (HBM) and social learning theory (SLT) were used as conceptual frameworks to understand a person's behavioral intentions …

The Influence Of Early Childhood Parental Feeding Behaviors On Self-Regulation & Food Decision-Making In Young Adults, Natasha Singareddy Jan 2023

The Influence Of Early Childhood Parental Feeding Behaviors On Self-Regulation & Food Decision-Making In Young Adults, Natasha Singareddy

CMC Senior Theses

This study used data from a diverse set of undergraduates from the Claremont Colleges to examine the relationship between cognitive control (impulsivity and response inhibition) and self-regulatory ability as an indicator of sustained early childhood parental feeding behaviors in adulthood. In addition, the current study explored if early childhood parental feeding behaviors predicted food decision-making in adulthood as a result of perceived taste and nutritional value of food items. It was hypothesized that heightened impulsivity and impaired response inhibition as measures of cognitive control would correlate to poorer self-regulation, in turn reflecting a particular mode of early childhood parental feeding …
