National concerns, such as obesity, should be addressed through national efforts. Considering the national reach of the Special Supplemental Nutrition Program for Women, Infants and Children (WIC) and the Supplemental Nutrition Assistance Program (SNAP) and their ability to influence the diets of a significant amount of the nation's population, changes to these programs should be made to encourage healthy nutrition.

Technology is rapidly changing how our program participants learn in school and for their personal improvement. Extension educators who deliver nutrition program will want to be aware of the technology trends that are driving these changes. Blended learning, mobile learning, the visual Web, and the gamification of health are approaches to consider using in programming in the near future to meet learners' expectations.

The Bridge: Interdisciplinary Perspectives on Legal & Social Policy
In spite of significant advances in the prevention, diagnoses, and treatment of most chronic diseases, there is evidence that racial and ethnic people of color tend to receive lower quality of care and less preventive interventions than the majority members of a community. While our health system should improve its efforts at addressing and reducing disproportionality in health care, African Americans can make behavioral changes through diet and exercise that will reduce their susceptibility to chronic illnesses. This article first reviews the prevalence, disparities, and characteristics of chronic diseases impacting the African American population. Second, it discusses culturally connected practices …

Obesity is an epidemic in the United States. Over 61% of U.S. adults and 58% of Nevada adults have Body Mass Index’s (BMI) that classify them as either overweight or obese (Behavioral Risk Factor Surveillance System [BRFSS], 2005). According to a recent article published in the Journal of the American Medical Association, obesity was the second leading cause of preventable death in the United States behind tobacco use (Mokdad, Marks, Stroup & Gerberding, 2004).

Purpose: The worksite health promotion literature has shown that successful nutrition communication programs call for making small changes to diet, one at a time. The use of observational learning (role models) and a “challenge” scenario for behavior change is supported by Social Cognitive Theory. The significance of these small changes in worksites is underscored by a recent Harvard Business Review article suggesting workplace wellness programs can return up $2.71 on every $1.00 invested. Purpose: Although nutritional education was provided consistently to a group of Mexican American seniors, it was found that the seniors were not translating this into behavior change. The purpose of this study was to utilize Community Based Participatory Research to understand how Mexican American seniors define healthy eating. Method: Fourteen seniors (M=73 yrs) were administered the Nutritional Screen Initiative and interviewed about definitions of healthy eating and sociocultural influences on eating habits. Community based participatory research is a research strategy aimed at bridging the gap between research and practice. At the Good Samaritan Senior Center in San Antonio, TX there had seemed to be a disconnect between nutritional education provided to the seniors at their Senior Center and what the seniors did in practice. Interest in organic milk is increasing. By USDA Certified Organic standards, animals must be fed on pasture for a minimum of 120 days. Research indicates that various factors such as diet impact the nutritional quality and composition of milk. The objective of this study was to understand how feeding practices affected bovine plasma carotenoid concentrations over time. Plasma samples were collected from 9 cows fed on pasture at an organic dairy and from 9 cows fed total mixed ration (TMR) at a conventional dairy. Implementation of innovative strategies to improve coverage of evidence-based interventions, especially in the most marginalised populations, is a key focus of policy makers and planners aiming to improve child survival, health, and nutrition. We present a three-step approach to improvement of the effective coverage of essential interventions. First, we identify four different intervention delivery channels—ie, clinical or curative, outreach, community-based preventive or promotional, and legislative or mass media. Second, we classify which interventions’ deliveries can be improved or changed within their channel or by switching to another channel. Purpose: The purpose of this study was to analyze the reported diets of clients in a community wellness center. The Hispanic population is at higher risk for the development of fatty liver disease. It is correlated with visceral obesity, insulin resistance, Type 2 diabetes, metabolic syndrome, and lipid deposition. In a previously conducted survey of the community, the results identified obesity, high fat diets, lack of exercise and poor lifestyle choices as high risk factors for fatty liver disease.

Purpose: Overweight and obesity are increasing at alarming rates worldwide. In the healthcare setting, administrators are searching for evidence-based programs featuring interventions on healthy living to enable weight loss in overweight workers and maintenance of normal weight. This is especially true among professional nurses who often become "role models" for patients affected by illnesses induced by overweight status. Joint Base Elmendorf-Richardson (JBER), Alaska supports a large population of moose that lives in and around the urban and industrial development of Anchorage. This study evaluates the body condition of adult female moose on JBER and calculates the relative nutritional value of habitat for planning development and for mitigating the effects of development on this population. Body condition of moose on JBER was similar to that of other populations of moose in Alaska. Our nutritional model predicted that shrublands could support 11-81 times more moose than any other habitat on JBER. Activity patterns of JBER moose were similar to those …

Surimi is minced deboned fish meat that has been washed of lipids, sarcoplasmic proteins, and other impurities. Surimi seafood, also known as "imitation crabmeat", is widely enjoyed in the United States; however, it is not currently nutrified with fiber, omega-3 polyunsaturated fatty acids, and salt substitute. In the present study, preliminary experimentation was done to determine the optimal level of fiber addition. Three studies were conducted to evaluate how the broiler has changed over the years due to intense genetic selection. Four different broiler genotypes, one unselected since the 1950's (HER) representing the old meat-type bird and three current strains (Ross 308, Ross 708, and a test product (TY)) were studied. Differences in growth, morphometry, and response in performance and processing yield to different nutrient levels were studied.
Experiment 1 evaluated growth and morphometric analysis. Birds of each strain were killed weekly from day 7 to day 56, necropsied and cut up parts and organs weighed. Measurement of small intestine segments …

Fun With Foodella: A Pilot Study For Determining The Efficacy Of A 2nd Grade Nutrition And Physical Activity Curriculum, Elizabeth M. Winter, Suzanne Stluka, Karlys Wells, Howard Wey, Teresa M. Kemmer

Fun with Foodella is a nutrition and physical activity workbook designed for elementary-aged youth. The objective was to determine if the Fun with Foodella program increased participant preference for fruit, vegetables, low-fat dairy products, and physical activity. Four intervention (53 students) and four control (68 students) schools participated. Significant results within the intervention group included a positive preference change for cucumbers, celery, pineapple, flavored milk, cheese, yogurt, and physical activity. This pilot Foodella program, coordinated by Extension professionals, demonstrates that promoting nutrition education, taste testing and physical activity in second graders results in positive change.

The JIA team (physical education teacher, classroom teacher, school nurse, and parent) work together to provide a supportive environment as students set goals to improve food choices and increase activity. Following the program, students demonstrated increased self efficacy and knowledge of health behaviors. Students also reported, 1) drinking less soda and sugar added drinks, 2) spending more time being physically active, and 3) consuming four servings of dairy products more frequently.

This project examines food systems and hunger in relation to city planning, and results in a draft strategic plan to address the food security and nutritional needs of San Luis Obispo County’s most vulnerable residents. This Draft Plan is submitted to the Food Bank Coalition of San Luis Obispo County as part of the Hunger-Free Community Project.
