Purpose: Vitamin K may inhibit vascular calcification, a common attribute of atherosclerotic vascular diseases (ASVDs). We examined associations between dietary vitamin K1 intakes and both subclinical atherosclerosis and ASVD events, including hospitalisations and mortality, in older women.

Methods: 1,436 community-dwelling women (mean ± SD age 75.1 ± 2.7 years) were included. Vitamin K1 intakes were calculated from a validated food frequency questionnaire at baseline (1998), utilising a region-matched vitamin K food database. Common carotid artery intima–media thickness (CCA-IMT), a measure of subclinical atherosclerosis, was measured in 2001 (n = 1,090). Differences in CCA-IMT by quartiles (Q) of vitamin K1 intake …

Enhancing Health Literacy in Adolescents at a Homeless Shelter

Over the past two months, our group of seven Seattle Pacific Nursing Students collaborated with a local nonprofit homeless shelter for families. After meeting with the agency’s health services coordinator, we decided to focus on the teen population and enhance their health literacy. This choice was due to our population primarily not being exposed to the American healthcare system. Our team gathered information from the teens and found that nutrition, sleep, and mental health were of particular interest. End stage renal disease requires dietary education and behavior modifications to manage the condition. The purpose of this quantitative study was to investigate the role of rapport and trust between the patients and registered dietitians and its impact on self-efficacy. The study was implemented over 12 weeks in multi-site dialysis units in urban Georgia. The health belief model was used as the framework to explain the participants’ desire toward self-efficacy. Data were obtained for the 14-item Health Care Relationship Trust scale and the self-efficacy scales and analyzed using multiple linear regression. The consequences of this misinformation by social media users has been documented in research, although the effects of misinformation on registered dietitians (RDs) in the United States have not been extensively studied. Kid Eats is a free app for iPad encouraging children and parents to cook together at home using fruits and vegetables. A preliminary study with parents and children showed children enjoyed using the app and that it provided useful information to support children’s involvement in the kitchen, including guidance around safety concerns. Every family in the study voluntarily completed at least one of the recipes with their child at least once following the in-person activity. Parents reported that their children actively asked to cook the recipes from the app and felt the app helped increase their time spent cooking with …

Reaching Tomorrow’S Extension Customer: A Food And Health Needs Assessment, Morgan Szczepaniak, Sarah L. Francis, Ruth Litchfield, Ulrike Genschel, Shannon Coleman, Anirudh Naig

The food and health needs and preferences of Iowans (n=452) were examined. The leading food and health information sources were online platforms, social media, and print media. Program topics with high participation likelihood were cooking, food preservation, food safety, and gardening. Short, low-cost, online programs were preferred. Extension use was more likely among those who identified as persons of color, Hispanic/Latino, or were food insecure (p < 0.030). Those with less education and chronic disease were less likely to be interested in Extension programming (p < 0.040). These results provide valuable information regarding future directions for Extension programming.

Abstract:

Background: The pediatric nutrition focused physical exam (PNFPE) is important for completing comprehensive assessment in pediatric patients, particularly those at risk for malnutrition. The PNFPE helps to identify the depletion of fat and muscle stores, as well as micronutrient deficiencies.

Methods: Pediatric RDNs, self-identified through CDR and practice group membership, were surveyed-to investigate their training, clinical practice, documentation, and barriers to use of the PNFPE. The survey instrument, validated by content experts and analyzed for reliability, was approved by our university’s IRB.

Results: A total of 65.8% of respondents held a graduate degree and 81.6% held a specialty certification. …

Urogenital schistosomiasis continues to impact the wellbeing of hundreds of millions of people worldwide and remains a significant public health challenge across Ethiopia. Despite existing knowledge on the disease, there remain significant unanswered questions with regard to its treatment and diagnosis. This dissertation evaluated the efficacy of praziquantel at treating urogenital schistosomiasis, improving nutritional parameters among children and the performance of FlukeCatcher at detecting and determining the intensity of infection. Despite the well-established link between nutrition and chronic disease prevention, medical education continues to underemphasize nutrition training. This study explores the impact of integrating registered dietitians (RDs) into pre-clerkship medical education to enhance students’ knowledge, confidence, and perception of nutrition in clinical care. A series of optional, system-based nutrition lectures were delivered by RDs and supplemented by senior medical students who shared real-world clinical case studies. Pre- and post-session surveys assessed students’ confidence in providing dietary counseling, understanding of the physician’s and dietitian’s roles, and the perceived importance of nutrition in disease management. Research has shown that early exposure to healthy foods and cooking practices can positively influence lifelong health behaviors. Cooking classes have also been linked to improved food literacy, culinary confidence, and willingness to try new foods. This thesis explores food insecurity in Oxford and Lafayette County, Mississippi, within the broader context of state, national, and global challenges. Over a four-year period, student-led and community organizations collaborated to design programs that addressed both food access and chronic illness prevention through education, outreach, and direct service. Objective: To examine determinants of food choice among NCAA Division III athletes using the Athlete Food Choice Questionnaire (AFCQ), focusing on gender, sport type, and seasonal status. Participants: 72 NCAA Division III athletes from 13 sports at a private northeastern university participated in an online survey during Fall 2024. Methods: Participants completed the 32-item AFCQ assessing nine food choice factors. Independent t-tests and Pearson’s correlations were used to compare factor scores by gender, sport type, seasonal status, and team success. Competitive foods are foods sold outside of school breakfast and lunch, such as those sold in vending machines. Background :Small for Gestational Age (SGA) is a complex perinatal syndrome associated with increased neonatal morbidity, mortality, and impaired childhood growth and neurodevelopment. Current classifications rely primarily on birth weight, which does not capture the heterogeneity of the condition nor predict long-term health outcomes. Here we aim to identify and characterise distinct SGA sub-groups and assess their neonatal and early childhood health trajectories.

Maternal mortality is an increasing concern in the United States. According to the WHO, from 2018-2022 the Maternal Mortality Rate (MMR) was 23.3 deaths per every 100,000 live births. Overweight and obesity (OW/OB) are significant concerns among individuals with Autism Spectrum Disorder (ASD), yet the underlying causes remain unclear. Emerging evidence points to metabolic and hormonal factors—particularly leptin, a hormone involved in appetite regulation—as potential contributors. This scoping review examined five key studies from 2003 to 2024 that investigated the relationship between leptin and ASD in overweight populations. Across studies, individuals with ASD consistently exhibited elevated leptin levels compared to controls. While some findings also noted changes in other adipokines, such as lower resistin or progranulin, leptin was the most consistently dysregulated. Objective: The objective of this research is to determine what established guidelines, training, certifications, and advanced degrees RDNs working in management of food and nutrition systems (MFNS) use to develop their level of expertise. Nutrition education is not often included in the elementary school curriculum. Without learning about nutrition, students may make poor nutritional choices and develop unhealthy eating habits, which may affect physical health, cognitive development, and academic performance. By informing students about healthy eating habits, they can improve their nutritional intake, well-being, and academic success. To address this issue, I will create a three-day lesson on nutrition education for first graders at Elkhorn Elementary School in Castroville, California.

Background: Dietary intake during the first year of life is a key determinant of a child’s growth and development. ORIGINS is a longitudinal birth cohort study investigating factors that contribute to a ‘healthy start to life’ and the prevention of non-communicable diseases. Methods: This descriptive cross-sectional study aims to describe the dietary intakes of one-year-old children participating in ORIGINS and compare these to the Australian Dietary Guidelines and Nutrient Reference Values (NRVs).
