Food and Machinery
Both the environment and food have important impacts on human health. However, research on the macro -level patterns and micro -level mechanisms of their complex interactions affecting health remains limited.Environmental food science, centered on the scientific theme of coupling "environment -food" with "health",conducts systematic research on dietary behaviors and health -related scientific and technological issues across diverse spatiotemporal environments. It represents a newly emerging interdisciplinary direction within food science. This paper reviews the research trajectory and progress in understanding the relationships among environment, food, and health, evolving from the "binary relationship" between environment and food to the "ternary relationship" among environment, food, and health.Taking the research achievements of the key …

Midlife Physical Changes, Kirsten Horne, Lisa K. Lashley, Charles J. Golden
Essays in Developmental Psychology
Aging occurs at different rates in individuals. These rates are influenced by factors including genetics, lifestyle, and health. Midlife is considered to be the central period of one’s life, consisting of individuals who are approximately 45 to 65 years of age, although some researchers suggest midlife consists of individuals who are 40 to 65 years of age. There are a variety of changes that occur throughout life. However, a majority of the changes that occur during midlife are considered to be normative physical changes. The physical changes in midlife include but are not limited to changes in appearance, senses, muscles, …

The Impact Of Diet On Preeclampsia: An Observational Study Of Nutritional Influence, Trinity G. Moye, Alyssa Cunningham
Department of Nutrition Student Projects
Preeclampsia is a pregnancy-specific condition typically diagnosed after 20 weeks of gestation in women with no prior history of hypertension. Characterized by high blood pressure, proteinuria, thrombocytopenia, increased liver enzymes, and affecting the arteries carrying blood to the placenta, preeclampsia affects the health of both the mother and the fetus. Preeclampsia is disproportionately prevalent in certain populations, specifically among Black women, with various factors contributing to the higher susceptibility including socioeconomic status, education, and health distrust. These factors have been historically structured against Black women in American society. This study aims to reveal how dietary habits can play a role …

A Review Of The Ripple Effect Of Parental Incarceration: Suggestions For System Improvement From Neonatal Development Through Adolescence, Karen Thew, April Terry
International Journal of Undergraduate Research and Creative Activities
Parental incarceration has the potential to drastically affect the social, behavioral, and physical lives of children. Such negative impacts include prenatal and chronic health conditions, behavioral and mental health issues, developmental delays, juvenile and criminal legal system involvement, and overall declines in well-being. These damaging outcomes occur for babies delivered during their mothers’ incarceration with negative lingering effects seen throughout the lifespan. Due to the stigmatization of incarceration, these children may experience bullying, engage in isolating behaviors, and struggle within the school, which may lead to the school-to-prison pipeline. While prevention and intervention services directed at these youth could not …

More than 10 years ago, the American Academy of Pediatrics (AAP) released a statement recommending that children under the age of two should not be allowed to view electronic screens. Although screen time is commonplace in a modern climate, the research reported within this review draws attention to the potential detriments of early exposure. These detriments include reduced levels of exercise, sleep, and creativity, as well as increased levels of unhealthy food consumption and an influx of mental health challenges later in life. Some benefits are discussed, such as opportunities for learning and/or stress reduction. Ultimately, the research over the …

Long hours, shift work, and general poor nutrition factor into a multitude of reasons why first responders are obese, suffering from mental illnesses, and dying at a faster rate than the general public. First responders also suffer from PTSD, alcoholism, and commit suicide as a direct result of the horrendous things they see and respond to. Administrators should attempt to mitigate these issues by leading from the front when it comes to physical fitness and mental health. Administrators should also give first responders ample opportunity to work on their mental health and physical wellbeing. Law enforcement is one of the …

Examining Equifinality And Multifinality Using Outcome-Partitioned Person-Centered Analyses: A Proof-Of-Concept With Youth Developmental Assets And Health, Luke Russell, Todd M. Jensen, Jonathon J. Beckmeyer, Chang Su-Russell
Faculty Publications - Family and Consumer Sciences
Early general systems theorists proposed a key difference between living systems and physical systems is the widespread presence of equifinality and multifinality among living organisms. That is, in living systems, there are often variable pathways to the same outcomes (equifinality), or the same starting conditions can lead to disparate outcomes (multifinality). Family scientists, however, frequently use methods (adapted from the physical sciences) that fail to reflect these characteristics within their statistical models. In this paper, we propose and provide a preliminary proof-of-concept of how an outcome-partitioned set of person-centered analyses might be used to develop alternative models that more comprehensively …
Abundance And Other Food Fixations, Margot J. Pollans
Abundance And Other Food Fixations, Margot J. Pollans
Elisabeth Haub School of Law Faculty Publications
Although most people in the United States no longer devote the majority of their time to food production, processing, and distribution, food remains a daily fixation. This Article explores three driving food fixations--abundance, thinness, and health--and situates each against an inverse fear--scarcity, fatness, and illness, respectively. Mapping these threats onto U.S. food policy, this Article examines, among other policy arenas, food waste policy, nutrition and health claim labeling law, and food additive regulations. Across food policy, these fixations feed what this Article calls the “politics of abundance.” This politics helps to insulate the food industry from deeper systemic reform aimed …

Birth On Mother Earth: Mitigating The Maternal Health Crisis, Jill C. Engle
Faculty Scholarship
Maternal health outcomes in the U.S. are remarkably poor, especially when compared to those in other industrialized countries. For example, our maternal death rate is more than twice that of Canada’s. Women of color in the U.S. suffer maternal morbidity and mortality at rates considerably higher than white women. Indigenous women experience the worst maternal health outcomes of all. Yet, most maternal deaths and injuries are preventable. Furthermore, rates of maternal harm, including death, are lower when midwives and similar birthing attendants are involved. This Article is the first to fully explore the unique skillset of traditional birth attendants (TBAs). …

A health-promoting lifestyle is an important determinant of physical and mental health status. Collegiate aviation pilots face unique challenges in balancing a healthy lifestyle with academic and physical demands. The schedule and expectations required of collegiate aviation pilots can make it difficult to practice a health-promoting lifestyle. Enhancing comprehension of the lifestyles of these students can yield valuable insights into the challenges they encounter, and how institutions can enhance their support for them. An online survey using the Health-Promoting Lifestyle Profile II questionnaire was utilized to investigate collegiate aviation pilots’ health promoting lifestyle and behaviors. Overall health promoting lifestyle and …
Differential Effects Of Health Insurance Coverage On Health For Sexual Minorities, Ruby W. Morr
Differential Effects Of Health Insurance Coverage On Health For Sexual Minorities, Ruby W. Morr
Theses and Dissertations
Much existing research has found a substantial gap in health between sexual minorities and non-minorities. This is usually attributed to discrimination or access to care. I seek to find the role that insurance plays, including minorities' choices of insurance coverage. If a gap does exist, insurance may have a stronger impact on sexual minorities. Also, if minorities are less likely to have insurance coverage, they may be susceptible to worse health. I confirm results from the literature that sexual minorities do have worse health. While health insurance accounts for some of the gap, it is only a small portion, though …

Research outputs 2022 to 2026
School health educational content often entails different subject areas and a variety of topics that students are supposed to learn, and when taught in diverse classrooms, potentially positions students as at-risk. Using vignettes in interviews with migrant students in Sweden, the study focuses on views of the content of health education in relation to different ways that health as risk is enacted. Four aspects of risk were identified: (i) risk as content in health education and risky, including topics such as nutrition, stress, smoking, and pollution; (ii) risk as content in health education but not so risky, including topics such …

Multimorbidity In Adolescents: The Longitudinal Impact Of Childhood Socioeconomic Trajectories And Health Risk In Adulthood, Savitha Sambandamoorthy
Electronic Theses & Dissertations (2024 - present)
Abstract
Background:
Multimorbidity, defined as the co-occurrence of two or more health conditions (physical, mental, or both), has been thought of as a disease of the elderly, with most studies of multimorbidity focusing on adults and the elderly population. However, co-occurring (multimorbid) health conditions are common in adolescence, and it is important to understand the profiles and patterns of multimorbidity during adolescence, a critical developmental period with long-term implications. Social determinants of health, especially lower socioeconomic status (SES), are linked to higher risk of multimorbidity and poor outcomes in adulthood. However, most of the past studies that have looked at …

Retrospective Recall Of Food Parenting Practices During Childhood, Current Adult Health Outcomes, And Intuitive Eating, Katelyn Bretzel
UNF Graduate Theses and Dissertations
Emerging adulthood is a time of exploration, change, and emerging independence, which can make individuals vulnerable to health changes. Previous research demonstrates that food parenting practices (coercive control, structure, and autonomy support) during childhood may relate to health outcomes into adulthood. In the current study, it was hypothesized that intuitive eating during emerging adulthood would be associated with food parenting practices; with coercive control and structure practices hindering intuitive eating, while autonomy support encourages it. The current study tested these relationships further, utilizing retrospective reports of food parenting practices during childhood and examining their relation to intuitive eating, dietary quality, …

Multidimensional Health Outcomes In Lgbtq+ Older Adults In The United States: Individual And Community-Level Protective Factors, Emily P. Lapidus
Theses and Dissertations--Psychology
Despite a lifetime of systematic barriers, LGBTQ+ individuals age into late adulthood, likely due to various protective factors. Guided by the Iridescent Life Course Framework (ILCF; Fredriksen-Goldsen & Muraco, 2019), I analyzed unique protective factors at two levels: (1) individual psychological factors (i.e., resilience, identity management) and (2) community-level factors (i.e., LGBTQ+ community connectedness, social support). Health was operationalized as mental health, physical health, and health-promoting behaviors. The present study accounted for covariates (i.e., financial barriers to healthcare, felt subjective age discrepancy, lifetime discrimination). I hypothesized that both stronger individual and community factors would be associated with better physical and …
