Examining The Feasibility Of Implementing Farm To School Programs In Rural Kentucky Schools: Barriers And Successes Of Initiating Programming As Identified Through Teacher’S Observations, Christina Wilson

Theses and Dissertations--Nutrition and Food Systems

Farm to School (FTS) programs provide experiential learning opportunities to children that have the potential to shape eating patterns and, in turn, improve health and learning outcomes. Participation in FTS programs in Kentucky is growing. However, programming varies widely across schools, and few have an edible school garden. This study examined the feasibility of establishing an edible school garden while incorporating FTS programming by evaluating teachers' observations and experiences. Six rural Kentucky schools were selected to receive a $5,000 grant to initiate an edible school garden and incorporate FTS programming. A Qualtrics survey measured six categories regarding implementation. The results …

Articles

Vitamins are essential organic compounds that vary widely in chemical structure and are vital in small quantities for numerous biochemical and biological functions. They are critical for metabolism, growth, development and maintaining overall health. Vitamins are categorised into two groups: hydrophilic and lipophilic. Vitamin K (VK), a lipophilic vitamin, occurs naturally in two primary forms: phylloquinone (VK1), found in green leafy vegetables and algae, and Menaquinones (VK2), present in certain fermented and animal foods and widely formulated in VK supplements. This review explores the possible factors contributing to VK deficiency, including dietary influences, and discusses the pharmacological and therapeutic potential …

Undernutrition occurs when there are deficiencies in essential vitamins, while overnutrition refers to consuming an excessive amount of nutrients, leading to issues such as obesity, diabetes, and related health problems. Malnutrition often stems from the economic and social status of parents. In children, malnutrition can significantly result in physical and mental growth issues. Therefore, there is a need for early prediction of malnutrition in children to mitigate its adverse effects. Children image comprises great amount of information which can be analyzed for distinguishing between a nourished or malnourished children. The success stories of convolutional neural networks in image classification are …

The Nature And Role Of Health Laws In The Writings Of Ellen G. White, Lehel Somogyi Jan 2024

The Nature And Role Of Health Laws In The Writings Of Ellen G. White, Lehel Somogyi

Master's Theses

The Topic

Since the founding of their denomination, Seventh-day Adventists have advocated a particular concept of health based on the visions and writings of denominational co-founder Ellen G. White (1827–1915). According to her writings, certain natural laws are crucial for maintaining health. These laws are often called “the laws of health” or “the eight laws of health” and include principles such as diet, exercise, water, temperance, and hygiene. In Seventh-day Adventist circles, Ellen G. White is usually perceived as the originator of these health principles. Some scholars suggest that she simply borrowed her health principles from other contemporary health reformers. …

Defining "Healthy" On Food Labels: One Step Forward, Two Steps Back, Alexia Brunet Marks

Publications

Few definitions of the mid-twentieth century have survived into the twenty-first century. It is worth asking, then, why the definition of "health," articulated seventy-five years ago by the World Health Organization, has endured into the present. The 1948 definition reads as follows: "[h]ealth is a state of complete physical, mental[,] and social well-being and not merely the absence of disease or infirmity." Aspirational in tone, the definition resonates with the surge among consumers towards healthier foods and overall well-being. However, in addition to wartime and pandemic concerns, today's threats to achieving "health" include climate change and a rise in diet-related …

The Impact Of The Covid-19 Pandemic On The Well-Being Of People Incarcerated In United States Prisons, Kimberly Rivera

Department of Sociology: Dissertations, Theses, and Student Research

The COVID-19 pandemic has negatively impacted the population as a whole. However, the incarcerated population (which also experiences a variety of health disparities) has been disproportionately affected by the pandemic. Due to overcrowding, poor ventilation, and lack of resources, the incarcerated population already is at a heightened risk for negative health outcomes, made worse by the recent pandemic. To adapt to the rapidly changing conditions during the pandemic in 2020 and into 2022, new safety measures were implemented, but the unintended consequences associated with the implementation of these procedures have yet to be examined empirically. I conducted a qualitative content …
