The School of Culinary Arts and Food Technology, TU Dublin, Spring Newsletter captured the many events, research, awards, significant contributions and special civic and community activities which the students and staff members of the school have successfully completed up to the Spring period of 2021. The successful completion of these activities would not be possible without the active and on-going support of the 'INSPIRED' friends of Culinary Arts (school supporters) and our school's industry association supporters. In this issue we also fondly remember Cathal Brugha Street, Dublin 2 (as the school now prepares to move to our new campus facilities …

Abstract This study focused on the narratives of three national leaders in the field of Education for Sustainability (EfS) for the purpose of illuminating pathways to leadership in PreK-12 EfS for educators and school leaders. Stanger’s (2011) eco-sociological model of human development and learning was used as a framework for examining contextual influencers of participants’ formative experiences associated with family of origin, land/places where they grew up, and education as well as pivotal experiences that informed their Prek-12 EfS leadership development. Five themes related to sustainability also served as core concepts throughout this study: positionality, spirituality, social justice, equity, and …

In 2015, the United Nations Member States, including the United States, unanimously approved 17 Sustainable Development Goals (SDGs) to be achieved by 2030. The SDGs are nonbinding; each nation is to implement them based on its own priorities and circumstances. This Article argues that the SDGs are a critical normative framework the United States should use to improve human quality of life, freedom, and opportunity by integrating economic and social development with environmental protection. It collects the recommendations of 22 experts on steps that the Biden-Harris Administration should take now to advance each of the SDGs. It is part of …

A Systems Approach to Increase the ICU Nursing Workforce During a Pandemic
Abstract
In early March 2020 an intensive care unit (ICU) patient died of COVID-19 in an integrated healthcare system hospital in Northern California. Data from China and the CDC indicated that more healthcare members would require intensive care and could overwhelm the 21 acute care hospital macrosystem. A microsystem pilot program to upskill peri-anesthesia care unit (PACU) RNs to care for ICU patients was initiated. Concurrently the upskill pilot program was reviewed by macrosystem nursing leadership. Over a three-week period, the program was standardized, disseminated and implemented across …
Rhetoric And Emotion Save Science: Lessons From Student Eco-Activists, Jesse Priest
Rhetoric And Emotion Save Science: Lessons From Student Eco-Activists, Jesse Priest
The Journal of the Assembly for Expanded Perspectives on Learning
This essay is a qualitative study of the experience of undergraduate students learning how to teach issues of sustainability to their campus communities through an innovative outreach program at a large northeastern research university, while at the same time learning to navigate complex emotional labor required by their outreach and activist work. While most previous work on science writing and rhetoric focuses on disciplinary, publishing, or genre practices, I examine the holistic student experience by placing outreach, writing, and the classroom in conversation with each other, illuminating how discourses can cross institutional and contextual borders. Additionally, while most previous work …

From Displaced To Our Place: Educational Environments Can Promote A Community’S Health And Well-Being, Morgan Frederick
Bachelor of Architecture Theses - 5th Year
Thomasville heights is a displacement neighborhood for people pushed out by Atlanta’s Urban Renewal projects. Thomasville Heights remains a casualty of a system of economic segregation. Under this system of segregation these neighborhoods are left in detrimental states. It is in places like Thomasville Heights where the phrase “place matters” becomes a call to action. A town of 6000 residents and only one elementary school, Thomasville heights is bordered by multiple freight yards, a cemetery, landfills, and Atlanta’s US penitentiary, just a 5-minute walk from that one elementary school. There remains a vast difference between that of low-income urban, and …

The Development Of A Culturally-Informed Cervical Cancer Screening And Prevention Mhealth Intervention For African American Women., Ariel Washington
Electronic Theses and Dissertations
Background: Significant strides have been made in reducing the burden of cervical cancer and HPV. Between pap smear screenings and HPV vaccinations, there has been a reduction in cervical cancer incidence in the United States. Unfortunately, those reductions have not been experienced by all ethnic groups. Cervical cancer disparities are a threat to the health of African American women, and innovation in education and the healthcare experience is needed to eliminate this threat. This study aimed to develop and evaluate a culturally tailored intervention using mHealth services to improve cervical cancer and HPV knowledge. Methods: The development and evaluation of …

Engaged Communication Scholarship For Environmental Justice: A Research Agenda, Chad Raphael
Communication
As a discipline of crisis and care, environmental communication needs to address questions of environmental justice. This article argues that the most appropriate approach to studying environmental justice communication is engaged scholarship, in which academics collaborate with community partners, advocates, and others to conduct research. The article reviews prior engaged communication scholarship on environmental justice, and proposes four streams of future research, focused on news and information, deliberation and participation, campaigns and movements, and education and literacy.

Line by Line: A Journal of Beginning Student Writing
To prepare for this Researched Argument writing assignment, I completed a research proposal that involved drafting a research question and creating a general timeline for conducting reseach leading up to this project's final submission. I then analyzed ten different sources through creating an annotated bibliography that examined the credibility, content, and relevance of each resource in relation to my paper's topic. In addition to collecting resouces, I personally attended SAP events and interviewed the SAP student leader in order to understand the innerworkings of sustainability education at the University of Dayton. I then composed a draft that was analyzed by …

Healthy development in the earliest years provides the foundation for adult health, while healthy adults comprise a thriving workforce. Investing in the health of young children is paramount to prevention of chronic diseases in later adulthood. Quality early childhood programs have an opportunity to maximize the healthy development of children by intentionally increasing caregiver self-efficacy as it relates to completing tasks associated with preventive care. The purpose of this exploratory data analysis study was to learn more about the relationship between level of caregiver self-efficacy and their ability to achieve required health and dental outcomes for children enrolled in a …
We Gotta Work With What We Got: School And Community Factors That Contribute To Educational Resilience Among African American Students, Denae Bradley
We Gotta Work With What We Got: School And Community Factors That Contribute To Educational Resilience Among African American Students, Denae Bradley
Electronic Theses and Dissertations
This thesis examines how Black residents in the Mississippi Delta claim and deploy agency and resiliency in a rural community context entrenched in a legacy of oppression. Black, low-income communities are implicitly labeled non-resilient when macro-level community capitals and resiliency literature are applied. However, I find that resiliency is culturally distinctive and oftentimes detected in ritual, daily processes in Black communities. This thesis rejects dominant narratives that Black communities in Mississippi are only poor, backwards, and lacking. It questions the assumption that dominant institutions have created inescapable boundaries for Black people in this region and challenges the notion that the …

Segregation, The “Black Spatial Imagination,” And Radical Social Transformation, Pauline Lipman
Democracy & Education
This response discusses the complexity of racial segregation in U.S. cities today and an emerging education movement for equity and racial justice. Racial segregation has been and continues to be a potent, and contested, strategy of containment, subordination, and exploitation, but African Americans have also, out of necessity, turned racial segregation into collective survival, radical solidarity, resistance, and counter-hegemonic economic and social relations. New geographies of racial containment, exclusion, and incorporation in the neoliberal, postindustrial city have spawned a new antiracist, antineoliberal education movement. While people of color have the right to live and attend school anywhere, African American and …

Transition Design: Teaching And Learning, Stacie Rohrbach, Molly Steenson
DRS Biennial Conference Series
Central to the development of transition design is its foundation in higher education. The theoretical basis that informs the practice of transition design develops from an emergent process comprised of hypotheses, theory, and testing in educational settings. These approaches—which focus on tackling specific, complex, placed-based challenges—must be tailored to address the nature of specific contexts and the varied learning of student cohorts and their respective needs. This paper investigates the value and thoughtful integration of transition design practices into design education and proposes curricula for undergraduate design students. It outlines methods and tools that are utilized in our teaching, describes …

Senior Honors Theses and Projects
The way our communities are designed impacts our health. and there is an increasing need for collaboration between urban planners and public health professionals. Yet, it is not clear to what extent universities are preparing public health and planning students to work together. Our research will shed light on this important topic by evaluating the course requirements for both of these disciplines in accredited institutions and look at how they are addressing interprofessional issues such as land development, transportation policies, air/water quality, and community growth issues. The current study explores the availability of interdisciplinary courses in accredited undergraduate and graduate …
The Role Of Education In Self-Sustaining Community Development, Leanne Riegel
The Role Of Education In Self-Sustaining Community Development, Leanne Riegel
Senior Honors Theses
Self-sustaining community development strategies, focused on education as a means for change, have great potential to make an impact on worldwide poverty. Instead of a one-time intervention with results that fade over time, the cyclical structure of participatory development will yield increasing results as time goes on. Teaching the community how to improve itself will increase its ability to deal with future problems, and positively impact women, children, and the environment in developing countries. This philosophy and practical strategy could be effective in any geographic location or culture, focusing on education and the ability of the local people to transform …

African Indigenous Knowledge: An Underutilised And Neglected Resource For Development, Njabulo Bruce Khumalo, Charity Baloyi
Library Philosophy and Practice (e-journal)
Indigenous knowledge points to the fact that Africa has been able to generate, test and apply knowledge through its own methodologies and approaches. This knowledge sustained communities for years prior to colonialism which somehow downplayed the value of indigenous knowledge and promoted western knowledge systems. Colonialism created dependence on western knowledge systems and Africa has over the years neglected its own rich indigenous knowledge. This paper sought tohighlight challenges faced in the quest to incorporate IK into developmental goals and projects. Furthermore, the study also sought to recommend ways through which Africans can promote IK in its developmental projects. A …

Community Schools: A Public Health Opportunity, Catherine Diamond
Community Schools: A Public Health Opportunity, Catherine Diamond
Dissertations and Theses
Community schools link students, families, and communities to educate children and strengthen neighborhoods. They have become a popular model for education in many U.S. cities in part because they build on community assets and address multiple determinants of educational disadvantage. Since community schools seek to have an impact on populations, not just the students enrolled, they provide an opportunity to improve community health. It has been proposed that community schools influence the health and education of the area residents through three pathways: building trust, establishing norms, and linking people to networks and services. However, no research has been published exploring …

Quality education of international development/humanitarian professionals is of high importance due to increased donor demands for projects’ transparency, accountability, and efficiency. However, there is a lack of standardization of learning outcomes among the educational institutions that train the workforce for the non-profit sector. The purpose of this quantitative survey study was to describe how humanitarian professional alumni think their Master’s program aligned with the Core Humanitarian Competencies Framework (CHCF) and how these competencies assisted them in their current work. Additionally, the study explored what NGO employers think of applicability of the Framework’s competencies in their organizations and the preparedness of …

I am a teacher. I always have been and always will be. As a little girl, I developed a passionate need to see fairness and justice in my world, which of course outside of my family of origin revolved around my life at school. If one of my friends could not understand something, even if I was not totally sure about it myself, I would endeavor to help them learn it in a way that made sense to them. A small act of friendship helped me learn and develop my own a belief in the oneness that connects all of …

"In the past century our understanding of leadership has changed as the contexts in which leadership occurs evolve. Today, constructs of leadership that do not incorporate emergent concepts such as systems thinking no longer match the realities of the world in which it is exercised and the challenges it seeks to address. The challenges we face as a global community have increased in complexity, size, scope, and consequence. As a result of this contextual evolution, our definition of effective leadership is evolving as well."

Failure to complete high school has a direct impact on a person’s earning potential and quality of life. Higher levels of education are associated with better health. Because of this association, it is important for children and adults to have access to quality education. The percentage of adults who have successfully pursued higher education in Southern Nevada is lower than the peer Mountain West metropolitan areas and the national average. Nevada high school graduation rates are the lowest in the nation. High school graduation rates and dropout rates vary by race/ethnicity in the Clark County School District. High school graduation …
