Effects Of Six Common Dietary Nutrients On Murine Intestinal Organoid Growth, Tenson Cai, Yijun Qi, Albert Jergens, Michael Wannemuehler, Terrence A. Barrett, Qun Wang
Internal Medicine Faculty Publications
The intestinal epithelium of the gastrointestinal (GI) tract constantly renews itself to absorb nutrients and provide protection for the body from the outside world. Since the intestinal epithelium is constantly exposed to various chemicals and dietary components, it is critical to determine which constituents promote or inhibit intestinal epithelium health and growth rate. Intestinal organoids, three-dimensional miniature models of the intestines, represent an ex vivo tool to investigate intestinal physiology and growth patterns. In this study, we measured the growth rates of murine intestinal organoids exposed to various concentrations of different dietary constituents. Results indicate that caffeic acid inhibited organoid …

Exploring Diet, Physical Activity, And Self-Reported Health Status Among Individuals In The Medically Underserved Population, Kelley R. Devoe
Honors Undergraduate Theses
The primary purpose of this study is to determine if certain lifestyle and health behaviors (e.g. smoking, physical activity, diet) in the medically underserved population have any influence on particular health statuses. This study also looked to determine if these health behaviors resulted in particular medical aliments being more prevalent or specific to this community. The secondary purpose of this study aims to gain information that may help health care providers practicing in this community to earlier identify risk factors in patients before a medical problem becomes more severe, difficult and expensive to treat. A survey, adapted from the CDC's …
Relationship Between Diet And Learning Differences In Children, Amelia Hamilton, Ramona Stone
Relationship Between Diet And Learning Differences In Children, Amelia Hamilton, Ramona Stone
Public Health Sciences Student Work
There is growing recognition that learning disabilities are associated with a variety of factors, including diet. Prior research showed that children in need of special education services eat less home prepared meals and more non-home-prepared meals, which can lead to obesity, inadequate diet, and lethargy. Additional research along with parental health education to promote healthy nutritional decisions and skills for preparing meals is necessary.
Why Weight? Zines As Effective Health Communication Tools Against Fat Phobia, Evelyn Gonzalez
Why Weight? Zines As Effective Health Communication Tools Against Fat Phobia, Evelyn Gonzalez
Scripps Senior Theses
The current models for health care hold at their core a pathologization of fat bodies informed by discriminatory methods and ideologies leading to an explicit lack of quality medical care for those who fail to meet normative standards of health and size. This project is interested in examining alternative public health models that provide interventions into those systems. Specifically, this work will seek to understand how the grassroots movement, Health at Every Size (HAES), serves to interrupt current limited understandings of health and weight. HAES individualized, weight-neutral approach to health and wellness exists in seeming opposition to contemporary ideas around …

Finding Companionship On The Road Less Travelled: A Netnography Of The Whole Food Plant-Based Aussies Facebook Group, Robyn Chuter
Theses : Honours
Chronic conditions are now the leading contributors to the burden of disease and associated healthcare expenditure in Australia. Wholefood plant-based diets are an evidence-based approach to the prevention, management and even reversal of many types of chronic disease. However, numerous practical, cognitive, social and intrapersonal barriers inhibit the ‘mainstreaming’ of plant-based diets (PBDs). Online communities may provide the informational, emotional and social support to help members overcome these barriers. However, there is a paucity of research on both the support needs of people attempting to follow PBDs in Australia, and the role that online community membership plays in providing this …

The Sweet Truth: Initial And Post-Ingestive Effects Of Sugar And Protein On Taste Preferences In Rats, Katrina Prantzalos
Senior Honors Theses and Projects
The purpose of this study is to investigate the food preferences of rats when given food with either a high protein or a high sugar content. We hoped to compare initial preferences and long-term exposure to determine the role of taste, and then post-ingestive effects, to examine if taste preferences are formed on the basis of taste alone or caused by the body's absorption of nutrients. To achieve this goal, we studied rats' food choices when presented with high protein yogurt or yogurt with a high sugar content. For half the rats two dishes were placed into the home container …

Total Antioxidant Levels Of Individual Foods Versus Combinations Of Food And The Effect On Apoptotic Induction In Hela Cells, Natalie Van Ochten
Total Antioxidant Levels Of Individual Foods Versus Combinations Of Food And The Effect On Apoptotic Induction In Hela Cells, Natalie Van Ochten
Undergraduate Honors Thesis Collection
Cancer affects over 14.5 million U.S. citizens of all ages, socioeconomic statuses, and races. Some countries have much lower cancer incident rates than the U.S. One major contributing factor to the lower incident rates is diet. Diets in countries with low rates of cancer include antioxidant-rich foods like raw fruits, raw vegetables, and spices. Studies have shown that antioxidants in black tea and berries induce apoptosis in cancerous cells. Because studies have shown that diet and cancer rates are related, it is important to analyze what we eat and how it impacts us. In this study, I quantified antioxidant levels …

Nutrition Transition, Trace Elements In Nails, And Blood Pressure Along The Interoceanic Highway, Madre De Dios, Peru, Stacy M. Pettigrew
Legacy Theses & Dissertations (2009 - 2024)
The paving of the Interoceanic Highway (IOH) brought rapid development to the Madre de Dios (MDD) region in the Peruvian Amazon. Development brings concerns of toxic trace element exposures, and road development has been a major driver of the transition from traditional to calorie-dense processed ‘Western’ diets in lower and middle-income countries. Investigacion de Migracion, Ambiente, y Salud (IMAS) (Investigation of Migration, the Environment, and Health) is the first analysis of health, diet, and integrated toxic trace elements in nails in the region. In 2014 we collected household surveys from 310 households in 46 communities along the IOH and nails …
Investigating The Pubertal Effects Of High Advanced Glycation End Product (Age) Consumption On Mammary Gland Development, Jamie F. Randise
Investigating The Pubertal Effects Of High Advanced Glycation End Product (Age) Consumption On Mammary Gland Development, Jamie F. Randise
MUSC Theses and Dissertations
The mammary gland continues to develop postnatally through puberty, pregnancy, lactation and involution. Evidence supports the notion that critical events in mammary development permanently alter developmentally regulated programs which influence the breast microenvironment to increase breast cancer risk. Advanced glycation end-products (AGEs) are highly reactive metabolites that irreversibly accumulate in tissues as we grow older. The pathogenic effects of AGEs include tissue degeneration, protein dysfunction, aberrant cell signaling and reduced genetic fidelity. AGE accumulation can contribute to pro-inflammatory and -oxidant phenotypes when signaling through the receptor for advanced glycation end-products. AGEs form during normal metabolism but critically, lifestyle factors such …

A wide diversity of fungi have been detected in the human gastrointestinal (GI) tract with the potential to provide or influence important functions. However, many of the fungi most commonly detected in stool samples are also present in food or the oral cavity. Therefore, to recognize which gut fungi are likely to have a sustained influence on human health, there is a need to separate transient members of the GI tract from true colonizers. To identify colonizing fungi, the eukaryotic rRNA operon’s second internal transcribed spacer (ITS2) was sequenced from the stool, saliva, and food of healthy adults following consumption …
Immune Modulation Of Pain And Recovery Via Diet, Stacie Totsch
Immune Modulation Of Pain And Recovery Via Diet, Stacie Totsch
All ETDs from UAB
Chronic pain is the most common disability in the United States. Additionally, one out of three adults in America are obese and obesity and pain are often comorbid. Obesity is an inflammatory state due to the release of pro-inflammatory mediators from adipose tissue. Generally, obesity is a result of a poor-quality diet. Specific dietary components and patterns are independent activators of the immune system and can exacerbate the obesity-induced inflammatory state. It is known that immune system activation is a critical aspect in the development and progression of many chronic pain conditions. To address a general lack of preclinical investigations …

This thesis investigates the acceptability and efficacy of Functional Imagery Training (FIT), a motivational intervention for weight-management. FIT is based on Elaborated Intrusion Theory, delivered in the style of Motivational interviewing (MI), and designed to promote sustained behaviour change and address cravings. It trains the habitual use of affective, goal-directed mental imagery of personal incentives, using imagery to plan behaviours, anticipate obstacles, and mentally try out solutions from previous successes. Participants are taught to update their imagery from their experience, and to generalise their imagery skills to new goals. In study 1, focus groups explored problems and wishes in regards …
The Timing And Composition Of Gestational Weight Gain And The Impact On Neonatal Anthropometry, Kathy Redfern
The Timing And Composition Of Gestational Weight Gain And The Impact On Neonatal Anthropometry, Kathy Redfern
Other Faculty of Health Theses
Background: Numerous maternal factors, such as body mass index (BMI), gestational weight gain (GWG), diet and physical activity (PA) have been shown to impact infant birth weight. In the UK, antenatal care tends to be based on pre-pregnancy BMI and women are not weighed routinely during pregnancy nor are there guidelines for GWG. However, it is widely acknowledged that maternal obesity and GWG in excess of the American Institute of Medicine guidelines are associated with increased risk of foetal macrosomia and recent studies have suggested a role of the timing and composition of GWG beyond that of BMI. The purpose …
Bed And Breakfast: The Role Of Sleep And Affect In Breakfast Intake, Ashley R. Macpherson
Bed And Breakfast: The Role Of Sleep And Affect In Breakfast Intake, Ashley R. Macpherson
Theses and Dissertations
Breakfast intake is associated with numerous positive physical and mental health outcomes, yet breakfast skipping remains common in adults. Chronotype and sleep show potential as predictors of breakfast intake; however the existing literature has methodological limitations and fails to examine how psychological mechanisms might explain the relation between sleep and breakfast. The current investigation explored the association of means and variability of sleep behaviors (bedtime, midsleep, sleep duration) as predictors of breakfast intake frequency and high-protein breakfast intake frequency. Additionally, the role of positive and negative affect as mediators in the sleep—breakfast association was examined. Hierarchical regressions and PROCESS parallel …
