The modern global agrifood system has had significant negative impacts on consumers and producers. This has precipitated the rise of local food systems that are purported to improve the health and livelihoods of consumers and producers. High expectations have led to significant public and private resources dedicated to the development of local food systems. Despite this, there has been little systematic research exploring the social and institutional conditions that facilitate or frustrate local food system development.

Abstract Ethanol is a biofuel that has unique capabilities to mitigate global climate change by reducing greenhouse gas emissions while simultaneously supporting rural economies and decreasing the United States’ dependence on foreign oil. Currently, the state of Nebraska depends on corn ethanol, which may be unsustainable. Cellulosic ethanol is a promising alternative but it is not without its problems, including high production costs and potential environmental damage. This thesis is an attempt to understand the benefits, downfalls, and processes of corn-based and cellulosic ethanol and the potential implications to Nebraska. Large-scale farm animal production facilities, also known as concentrated animal feeding operations (CAFOs), release a significant amount of contaminants into the air and water. Adverse health effects related to exposure to these contaminants among CAFO workers have been welldocumented; however, less is known about their impact on the health of residents in nearby communities. Epidemiological research in this area suggests that neighboring residents are at increased risk of developing neurobehavioral symptoms and respiratory illnesses, including asthma. Additional research is needed to better understand community-scale exposures and health outcomes related to the management practices and emissions of CAFOs.

Spiny dogfish (Squalus acanthias) are considered to be the most abundant shark species in the Western North Atlantic, but recently there was a decline in biomass estimates following a nearly ten-fold increase in fishery landings. Because fishing pressure has been shown to affect population dynamics in targeted species, an update of previous life history parameters is warranted to effectively manage the population. Although updated and accurate life history parameters are important, it is crucial that these parameters are applied to the correct populations, especially when there is evidence of population structuring in the Western Atlantic. The New England cottontail is currently endangered throughout much of its range. The cause of this decline has been habitat loss that has facilitated intense predation. Cottontails living on small patches have high mortality rates due to lack of quality cover and browse and high predation pressure. The goal of this study was to determine if provisioning supplemental food during the winter could increase cottontail survival rates by reducing risky foraging behavior in poor habitat that exposes the rabbits to predators. Among fed rabbits the survival rate (70%) was substantially greater than the survival rate for unfed rabbits (32%). A …

Populations of the invasive shore crab, Hemigrapsus sanguineus , were studied in northern and southern New England to determine if crabs differ in reproductive behavior or characteristics between these regions. Additionally, effects of temperature on reproductive activity were quantified through laboratory experimentation.

Number of broods per season increased with temperature, but the seasonal total was limited to three broods in laboratory experiments. Broods experienced limited success at the lowest temperature, 10°C. The reproductive season was longer at lower latitudes, and females at this site had smaller average ovigerous size. The goal of experiment one (Chapter One) was to determine if stocking density had an influence of the swimming behavior and spatial distribution of adult cod that were being raised in an aquaculture cage at the University of New Hampshire's Coastal Marine Laboratory. Acoustic telemetry and underwater video were used to quantify the behavior and distribution of cod that were stocked at four densities (5, 10, 25 and 45 kg/m³). At the lowest density (5 kg/m³) cod remained deep in the cage and spent 64.3 +/- 0.8% of their time below 1.80m (of a 2.70m cage). This contrasts to the …

Fifty-two calves were assigned to a randomized complete block design and were randomly assigned by block to one of four treatments: colostrum replacer with no sodium bicarbonate, colostrum replacer with 15g of sodium bicarbonate, colostrum replacer with 30g of sodium bicarbonate, and colostrum replacer with 45g of sodium bicarbonate to test for linear and quadratic effects. Calves were fed colostrum replacer (≥200g of IgG) in one feeding at 0 h and 2L milk replacer at 12, 24, 36, and 48 h. Silvicultural management of Pinus strobus L. runs the risk of damaging residual trees and can increase the probability of attack from damaging insects, including the common bark beetle Dendroctonus valens Le Conte. Considered a secondary pest, it is possible that D. valens is capable of economic impacts such as the downgrading of logs and lumber due to defect and blue-stain. To assess post harvest conditions that contribute to the probability and severity of D. valens attacks in Pinus strobus, stand and tree characteristics were sampled in four silvicultural treatments and one control site in southern Maine. The experiment compared the effects of chlortetracycline (CTC), lasalocid (L), and the combination (LCTC) on dairy heifers. Forty calves, 12 wk of age, were assigned to control (C), L (1 mg/kg BW/d), CTC (350 mg/d), or LCTC. Individual DMI was measured daily. Skeletal measures, BW, BCS, blood urea N and glucose concentrations were measured weekly. Calves received an external marker to estimate apparent total tract nutrient digestibilities. Total collection of urine was obtained from 20 calves to determine N retention. The DMI was higher (P=0.01) for CTC versus L and C, and DMI was lower for L versus LCTC. ADG …

Given limited knowledge of the food sources of Arctic ground squirrels, an important arctic prey species, it is difficult to predict the implications of changes in food source availability that could result from climate change. I hypothesized that Arctic ground squirrels at two colonies, Atigun and Toolik, would have similar feeding habits and mushrooms would contribute to their diet The Arctic ground squirrels at Toolik had significantly higher del15N (3.7 per mill difference) and del13C values (1.3 per mill difference) than those at Atigun. The language of certified organic food lacks clarity. As the organic industry has blossomed, so has the myriad of available organic products, yet the term "organic" has remained the label to describe all of these items. Since these items are certified "organic" in accordance with regulated standards, it is assumed that all organic industry participants mean the same thing when using the term "organic." The article examines how adverse climatic conditions and high food prices influenced the opportunities of peasants in pre-industrial Mexico between 1730 and 1835. Particular attention is paid to data of soldier heights, global climate events, warm-season tree growth, and real food prices to determine how these factors may have affected urban and rural populations. Declines were seen in the general standard of living and average height, while the cost of food increased. It is argued that distribution and acquisition of food has an equal influence on biological well-being as the availability of food at any specific given time.

In the fall of 2008, a mail survey was distributed to New England retailers to assess their knowledge and interest regarding 'sustainable seafood' campaigns and eco-labeling programs, as well as identify incentives to help overcome perceived barriers that prevent the distribution of sustainably harvested and labeled seafood in grocery stores. In the current study, the possibility that cytokeratin 18 (CK18)---containing intermediate filaments (IFs) protect bovine luteal cells from FasL-induced apoptosis was explored. Bovine corpora lutea (CL) from early and late stages of the luteal phase were collected and prepared for cell culture. The cultures were exposed to culture medium without (control) or with 5mM acrylamide for 4 hr to disrupt CK18 IFs. Subsequently, the cultures were exposed to fresh medium without (control) or with FasL (50ng/mL) for 24 hr to induce apoptosis. Acrylamide disrupted CK18 IFs without affecting microtubules, progesterone secretion (P>0.05), or cell viability (P>0.05). Surface expression …

From 2005-2007, I sampled macroinvertebrates at 10 vernal pools to determine the effects of forested buffer treatments (30-m or 100-m). I grouped taxa into three subgroups: taxa enumerated and identified to genus (Trichopterans, Anisopterans, Coleopterans, and Hemipterans); taxa identified to family and documented as present or absent; and predatory taxa (enumerated and identified to genus). I measured hydroperiod, surface area, pH, conductivity, substrate cover, canopy cover, and annual and seasonal variability and used Non-Metric Multidimensional Scaling (NMS) to examine effects on composition. Finally, I analyzed NMS scores using Linear Mixed Models. Buffer treatments explained a significant amount of variation in …

PBDEs, lipophilic flame-retardant chemicals, are considered to be endocrine-disrupting compounds and potential obesogens. This study investigated PBDE exposure plus a high-fat/high-sugar diet in rats. Twenty-eight male Wistar rats were fed either a control or high-fat/high-sugar diet and gavaged with either 18 mg/kg PBDEs or corn oil daily for 4 weeks. Body weight and food intake were measured 3x/week. At 3 weeks, 24-hr whole-body metabolism was measured. At 4 weeks, blood was sampled for T4 and insulin, epididymal adipose tissue was removed and adipocyte lipolytic response to varying concentrations of isoproterenol was measured. Fishmeal is the main ingredient in formulated fish feeds, and the cost of this commodity is the largest and most volatile recurrent expenditure by the finfish aquaculture industry. Additionally, the reliance on wild-harvested forage species raises concerns about the industry's ecological impacts. Marine macroalgae and soy-derived feed ingredients both have merits as alternative proteins for piscivorous marine fish. Atlantic cod, in particular, have a highly adaptable digestive system and perform well with alternative protein diets.

Intestinal and total tract digestibility of crude protein (CP) and amino acids in rumen undegraded protein (RUP-AA) in 5 corn silage hybrids were measured using the mobile bag technique (MBT). Two in vitro methods, the modified three-step procedure (TSP) and an in vitro procedure (IVP) developed by Sapienza Analytica, LLC (Slater, IA), were further evaluated to determine digestibility of RUP-AA in corn silage. Intestinal digestibility of RUP-AA in corn silage varied from 24 to 59%, indicating differences in intestinal digestibility among AA. The TSP and IVP tended to under predict RUP-AA digestibility compared with the MBT. Consequently relationships between the …

The purpose of this study was to determine the knowledge and perceptions of the animal, plant, environmental, and food sciences by the adult residents of Louisiana. This study was conducted using a survey research design. This survey utilized random telephone dialing techniques in order to survey 547 residents of Louisiana. The survey instrument consisted of fifty-five questions divided into three sections: demographic characteristics, agriculture knowledge, and perception of agriculture. The overall mean agriculture knowledge score of adult residents of Louisiana for the twenty items included in the survey instrument equaled 13.60 (SD = 2.743) or 68%.
