Nebraska Beef Cattle Reports

Summary with Implications

Dark-cutting beef is a result of preharvest stress and devalues the resulting carcass. High-pressure processing (HPP) has been recently identified as a potential strategy to improve the undesirable appearance of dark-cutting beef. Dark-cutting beef strip loins were collected from a local processing facility, sectioned, and assigned an HPP pressure (300 or 450 MPa) and holding time (0, 1, 30, 60, or 90 s). Overall, HPP increased the lightness and redness of dark-cutting beef, particularly the longer the pressure was held at both pressure levels. Additionally, negative effects such as increased meat discoloration, decreased tenderness, and increased rancidity …

Nebraska Beef Cattle Reports

Summary with Implications

A sorghum-sudangrass hybrid was swathed in the hard dough stage and grazed by growing steers from November 2023 to January 2024. Steers appeared to select the seedheads when grazing. The seed made up approximately 12.6% of swathed forage mass, but its energy contribution appears limited due to poor digestibility. When incubated whole, only 23% of dry matter and 13% of starch was digestible. Grinding improved digestibility but still left 40% of the dry matter and over 85% of starch unavailable. Weathering over two months did not improve digestibility, indicating the seed coat remains intact through winter. Compared …

Bariatric Surgery Impacts Immune Cell Metabolism And Function Dependent On Metabolic Status, Samantha N. Hart Jan 2026

Bariatric Surgery Impacts Immune Cell Metabolism And Function Dependent On Metabolic Status, Samantha N. Hart

University of Kentucky Doctoral Dissertations

Type 2 Diabetes (T2D), one of the top ten causes of death worldwide, is fueled by chronic inflammation. T2D is considered a metabolic disease, and there is a great push to target metabolic and associated inflammatory pathways to ameliorate the disease & its comorbidities i.e., obesity and cardiovascular disease. Thus far, clinical trials of anti-inflammatory drugs have had modest impacts on T2D and have not led to changes in clinical practice. This may in part be due to a gap in knowledge in the mechanism(s) driving obesity-associated chronic inflammation. I posit that metabolic abnormalities in immune cells in those with …

Searches And Seizures Of The Unhoused, Shawn E. Fields Jan 2026

Searches And Seizures Of The Unhoused, Shawn E. Fields

Faculty Scholarship

The United States recorded its largest ever unhoused population in 2024. Acute affordable housing shortages and climate-fueled natural disasters have exacerbated a decades-long unaddressed humanitarian crisis, straining resources in cities and rural areas alike. In response, state and local governments have pivoted to a more punitive approach to houselessness. Draconian "anti-camping" ordinances subject houseless people to fines or arrests while police destroy their property in encampment "sweeps," disconnecting the unhoused from critical social structures. Quality-of-life laws criminalize basic biological functions in public. New York, California, and other states have expanded the reach of involuntary civil commitment procedures, forcibly hospitalizing and …

Evolutionary Transitions In Social Behavior Are Associated With Convergent And Partially Reversible Expansions Of Transcription Factor Binding Sites, Savanna G. Ploessl, Beryl M. Jones

Entomology Faculty Publications

The evolution of sociality involves shifts in physiology and behavior, most notably the emergence of a reproductive division of labor. Within social colonies, these distinct behavioral phenotypes arise from differential regulation of a shared genome. Changes in transcription factor (TF) binding motifs are one potential mechanism underpinning this plasticity, with prior studies suggesting that social species exhibit expansions in TF binding sites. However, it remains unclear whether motif expansions are reversed when sociality is lost. Here we analyze predicted TF motif occurrences across gene promoters in 42 bee species spanning millions of years of evolutionary divergence and multiple independent gains …

Graduate Theses, Dissertations, and Problem Reports (ETD)

Immune and metabolic disruption during weaning represents a major challenge to health and productivity in beef cattle. This dissertation tested the hypothesis that supplementation with multi-strain direct-fed microbials (DFMs) modulates immune regulation and metabolic pathways associated with adaptation to weaning stress. To address this, whole-blood transcriptomics and plasma metabolomics were used to evaluate molecular and metabolic responses in newly weaned beef steers during the receiving period. Transcriptomic analysis identified differential expressions of genes associated with immune signaling and inflammatory regulation, indicating modulation of immune-related pathways without changes in growth performance. Metabolomic analysis revealed alterations in circulating metabolites related to amino …
