Department of Food Science and Technology: Faculty Publications
Objective The effects of food sensitivity can easily be masked by other digestive symptoms in ostomates and are unknown. We investigated food-specific-IgG presence in ostomates relative to participants affected by other digestive diseases.
Design Food-specific-IgG was evaluated for 198 participants with a panel of 109 foods. Immunocompetency status was also tested. Jejunostomates, ileostomates, and colostomates were compared with individuals with digestive tract diseases with inflammatory components (periodontitis, eosinophilic esophagitis, duodenitis, ulcerative colitis, Crohn’s disease, and appendicitis), as well as food malabsorption due to intolerance. A logistic regression model with covariates was used to estimate the effect of the experimental data …

Student Works (2020-2029)
Food fraud is one of the most prevalent problems of the present day. It is important for consumers to ascertain the authenticity of the declared ingredients in food products. Beef, buffalo, goat, sheep, chicken, duck, and pork are the heavily consumed meats having enormous importance from nutritional, economic, and cultural/religious viewpoints and are often found to be mutually adulterated in raw and processed states. Available DNA-based approaches for species authentication are commonly based on long DNA markers that can be damaged during food processing, rendering the methods less reliable. The objective of the project is to develop a heptaplex Polymerase …

Department of Nutrition and Health Sciences: Faculty Publications
Objectives: Dietary γ -glutamyl peptides (γ -GPs) found in dry edible beans exhibit biological activities (antioxidant, anti-inflammatory) with potential benefits against chronic metabolic disorders. γ -GPs are responsible for the desirable Kokumi flavor through allosteric activation of the Calcium Sensing Receptor (CaSR) present in multiple mammalian tissues. In this study, we investigated the metabolic effects of γ -glutamyl valine (γ -EV) in diabetic obese mice.
Conclusions: γ -EV improved the diabetic condition of db/db mice via modulation of glucose and lipid metabolism.

Seed dispersal is critical to the ecological performance of sexually reproducing plant species and the communities that they form. The Mammalian order Carnivora provide valuable and effective seed dispersal services but tend to be overlooked in much of the seed dispersal literature. Here we review the literature on the role of Carnivorans in seed dispersal, with a literature search in the Scopus reference database. Overall, we found that Carnivorans are prolific seed dispersers. Carnivorans’ diverse and plastic diets allow them to consume large volumes of over a hundred families of fruit and disperse large quantities of seeds across landscapes. Gut …

Antibiotic-resistant microorganisms (ARMs) are widespread in natural environments, animals (wildlife and livestock), and humans, which has reduced our capacity to control life threatening infectious disease. Yet, little is known about their transmission pathways, especially at the wildlife-livestock interface. This study investigated the potential transmission of ARMs and antibiotic resistance genes (ARGs) between cattle and wildlife by comparing gut microbiota and ARG profiles of feral swine (Sus scrofa), coyotes (Canis latrans), cattle (Bos taurus), and environmental microbiota. Unexpectedly, wild animals harbored more abundant ARMs and ARGs compared to grazing cattle. Gut microbiota of cattle was …

Resource selection informs understanding of a species’ ecology and is especially pertinent for invasive species. Since introduced to Canada, wild pigs (Sus scrofa Linnaeus, 1978) remain understudied despite recognized negative impacts on native and agricultural systems globally. Elsewhere in North America, pigs typically use forests and forage in agricultural crops. We hypothesized Canadian wild pigs would behave similarly, and using GPS locations from 15 individuals, we examined diel and seasonal resource selection and movement in the Canadian prairie region. Forests were predominately selected during the day, while corn (Zea mays L.), oilseeds, and wheat (Triticum aestivum L.) …

Enhancing Hospitalists' Knowledge In Relation To Palliative Care, Herline Raphael
Enhancing Hospitalists' Knowledge In Relation To Palliative Care, Herline Raphael
DNP Research Projects
Abstract
Palliative care was not the specialty of many hospitalists; thus, communication was hindered regarding ELC and advanced directives. Despite healthcare utilization in the United States, inadequate treatment of serious illnesses continues due to the lack of provider education and understanding of ELC (palliative and hospice care). Hospitalists are not formally or informally trained to care for patients that need palliative or hospice care. A quantitative, quasi- experimental and qualitative approach was utilized to determine if hospitalists who received educational training on palliative care communication and collaboration improved knowledge, skills, and collaboration when caring for end-of-life or critically ill patients. …

Abstract
Background: Exhaustion is now accepted in nursing culture. Staff suffering from sleepiness and fatigue are more likely to commit medical errors and sentinel events. Emergency department nurses have the greatest risk of committing these errors. Currently, there is no relief provided to shift workers beyond a single 30-minute meal break within a 12-hour period. Other researched mitigation strategies have either failed or are unrealistic in this environment.
Local Problem: Emergency Department nurses at Parkridge Medical Center in Chattanooga, TN suffer from chronic sleepiness and fatigue that is exacerbated by shift duration, excessive workload, a stressful environment, and lack of …
Improving Nutrition Literacy In Primary Care, Kami D. Dykes
Improving Nutrition Literacy In Primary Care, Kami D. Dykes
DNP Research Projects
Abstract
By the year 2030, nearly one in every two adults will have obesity (Body Mass Index [BMI] ≥30 kg/m2.), and one in four adults will have severe obesity (BMI ≥35 kg/m2) (Ward et al., 2019). Equally troubling is that obesity poses a threat to the health of individuals, decreases the quality of life, shortens life expectancy, causes and worsens comorbidities, and increases all- cause mortality (Abdelaal et al., 2017). Studies have shown a link between BMI, nutritional knowledge, and dietary practices. Nutrition literacy is a newer term that refers to the complex relationship between nutrition …

A shift is needed in information and digital literacy instruction and assessment led by elementary and secondary school librarians with an emphasis on the evaluation of information sources. The need is in response to widespread societal sharing of mis- and disinformation related to political news including the politicizing of scientific understandings of a disease and the ensuing distrust of the messages of public health officials during the COVID-19 global pandemic. In this article, I create an instructional framework for information evaluation that is grounded in data derived from a qualitative content analysis of published research, standards, and theoretical perspectives and …

Using Telemedicine To Optimize The Delivery Of Care In Patients With Liver Disease, Samantha Ramirez
Yale School of Nursing Digital Theses
Chronic Liver Disease (CLD) is one of the top causes of morbidity and mortality globally. Among the spectrum of liver diseases, non-alcoholic steatohepatitis (NASH) is the most common cause of cirrhosis and one of the top reasons for a liver transplant. Patients with NASH end up with hepatic decompensation and liver-related complications such as malnutrition, sarcopenia, frailty, and death. Telemedicine has transformed health care by improving access, reducing cost, and increasing the quality of care. However, telemedicine has not been widely used to manage patients with CLD. This DNP project created a telemedicine protocol to manage patients with NASH, implemented …

Constructing A Company On Purpose: Understanding The Role Of Purpose On Firms' Corporate Brand Identity, Asfiya Taji
Constructing A Company On Purpose: Understanding The Role Of Purpose On Firms' Corporate Brand Identity, Asfiya Taji
Theses and Dissertations (Comprehensive)
Increasingly, stakeholders are demanding greater accountability from firms and their respective brands. This in turn has pressured firms across industries to address social issues that were once inconceivable in relevance to their operating mission, requiring many businesses to pivot towards embracing a social purpose as part of their corporate brand identity. Purpose in management has been defined as the greater values that promote societal welfare within and outside the firm (Hollensbe et al., 2014) and, as such, purpose-driven firms are those that link their governance practices with the greater pro-social values they espouse(Kim et al., 2016). This dissertation studies the …

The Role Of Ovarian Hormones In Appetite-Regulation: Examining The Post-Exercise Appetite Response In Pre- Vs Post-Menopausal Females, Jessica A.L. Tucker
Theses and Dissertations (Comprehensive)
INTRODUCTION: Appetite fluctuates across the menstrual cycle, suggesting ovarian hormones are involved in the regulation of appetite hormones and energy intake. Exercise is another regulator of appetite with higher intensity exercise generating a greater and more consistent suppression. Considering there is limited evidence investigating the role of ovarian hormones in appetite regulation, menopause represents a stage of life where ovarian function declines, thus providing an opportunity to further explore the role of ovarian hormones in the appetite-regulatory response to exercise. PURPOSE: To examine the role of ovarian hormones on appetite-regulating hormones in pre- and post-menopausal females following a …

People globally rely on herbal practices as their main form of healing, yet few people in the West understand how to properly identify and effectively use herbs. This loss of knowledge regarding traditional healing practices was done so intentionally during enslavement and colonization, resulting in exploitation and misinterpretation of herbal practices. By reclaiming this knowledge, it is not only a way to improve the health of communities and the land, but it is also a way of reclaiming ancestral traditions and connection with oneself. Furthermore, this research paper explores the complexities of Western herbalism and determines what drives individuals within …
