Advances in diagnosis and the treatment for upper gastro-intestinal (UGI) cancers have led to improved survival rates and, consequently, to a larger population of survivors of many types of UGI cancer [1,2]. Progress in survivorship care for UGI cancer remains poor, and many survivors experience ongoing negative physical and psychosocial impacts of treatment, which can have profound and long-term impacts on physical function and quality of life (QOL) [3,4]. At one year post-op, 40% of survivors report poor physical function, and significant reductions in walking distance, cardiorespiratory fitness and muscle strength are observed, along with a high prevalence of fatigue …

How do we manage fish species, and how do fish, in turn, impact us? This portfolio of three stories will explore some of the ways in which humans interact with aquatic landscapes. First, we’ll go to Flathead Lake in Montana, where invasive lake trout have all but decimated native trout species, and learn what the Confederated Salish and Kootenai Tribes are doing to address the issue. Then, we’ll examine stories of a legendary Big Fish in Alaska’s Lake Iliamna, and think about what it means to scientifically prove something as real. In Tanzania, half the population lives below the poverty line and suffers from food insecurity. Of the population, women and children primarily suffer from malnutrition due to food insecurity. For Tanzania, the problem is so severe that some women do not name their newborns for weeks or months due to their unlikely survival. This problem worsens for those who have a significant reliance on agriculture and live in the nation’s rural areas. These rural communities face more traumatic burdens when floods and droughts destroy crops, fields, and tools and ruin livelihoods. A solution has not been implemented thus far due …

This project examines oral history methods through a series of interviews with Shirley Knutson. These interviews focus on her life and her intentions for Rural Ministry Initiative, a Lutheran residency program for clergy interns. Shirley describes her experiences in rural communities as a child, student, teacher, wife, and mother. This project aims to help historians understand ethical practices and effective principals when conducting oral history projects while also exploring historical themes of domesticity, religion, and family relations from the perspective of a woman living in the Midwest United States during the mid- to late-20th century.

Common beans (Phaseolus vulgaris L.) are extensively cultivated in sub-Saharan Africa as a cheap source of proteins, starch, dietary fiber, and excellent mineral salts and vitamins. However,beans are lost due to poor post-harvest handling and storage practices that provide insufficient protection against storage insect pests. Therefore, farmers are forced to apply insecticides more than once in a storage period to achieve protection. Excessive use of chemicals is not safe for health and is uneconomical. Law enforcement officers (LEO) are more likely to experience symptoms of PTSD when compared to the general population yet are less likely to seek mental health treatment (Jetelina et al., 2020). Given that LEO face unique occupational stressors and repeated exposure to traumatic events, treatment for PTSD among law enforcement populations poses unique challenges for clinicians. The combination of these variables precludes officers from seeking and receiving mental health services. Women in the perinatal period face a unique set of mental health challenges, as they must navigate both physical changes and transitions in their life. Perinatal mental health has been linked to child outcomes, such as social emotional development, cognitive development, and physical growth. Soil-test correlation and calibration data are essential to modern agriculture, and their continued relevance is underscored by the expansion of precision farming and the persistence of sustainable soil management priorities. In support of transparent, science-based fertilizer recommendations, we seek to establish a core set of required and recommended information for soil-test P and K correlation and calibration studies, a minimum dataset, building on previous research. The Fertilizer Recommendation Support Tool (FRST) project team and collaborators are developing a national database that will support a soil-test-based nutrient management decision aid tool. In-vitro evidence suggests that the lipid component of foods alters vitamin D absorption. This single-blinded, cross-over postprandial study examined the effect of changing the lipid component of a 20 µg vitamin D3 fortified dairy drink on postprandial 25(OH)D concentrations. Participants consumed one dairy drink per visit: a non-lipid, a pre-formed oleic acid micelle, an olive oil and a fish oil dairy drink. There was a significant time*drink*baseline status effect on 25(OH)D concentrations (p = 0.039). There were no time*drink, time or drink effects on 25(OH)D in vitamin D sufficient participants (>50nmol/L). However, there was an effect of time …

Encapsulation is a versatile technique used to protect sensitive bioactive compounds under gastrointestinal conditions. In this study, nanoencapsulation of chlorogenic acid into the apple seed protein matrix was performed using the green technique ultrasonication to protect it from harsh gastric conditions and increase its biological activity and bioavailability upon digestion. Both nano (Nano-Chl) and native capsules (NT-Chl) were characterised by particle size, charge, structure, and morphology. The encapsulation efficiency, release behaviour, antioxidant and antidiabetic properties were also evaluated. The COVID-19 pandemic has further exacerbated physical inactivity, poor dietary intake and reduced mental wellbeing, contributing factors to non-communicable diseases in children. Cooking interventions are proposed as having a positive influence on children’s diet quality. Motor skills have been highlighted as essential for performance of cooking skills, and this movement may contribute to wellbeing. Additionally, perceived competence is a motivator for behaviour performance and thus important for understanding intervention effectiveness. Therefore, this research aimed to assess the effectiveness of an adapted virtual theory-based cooking intervention on perceived cooking competence, perceived movement competence and wellbeing.

Two of the next-generation dairy protein ingredients isolated from milk are micellar casein (MCC) and milk-derived whey protein, isolated from skim milk using microfiltration (MF). Lipid-laden macrophages contribute to atherosclerotic plaque formation in atherosclerosisrelated heart diseases. Thus, understanding formation and degradation of lipid would help identify therapeutic targets for the treatment of atherosclerosis. In the first chapter of this dissertation, I have explained the current understanding of cholesterol metabolism in macrophages and how mTOR could play a potential role in this process. Plant-based diets contain numerous flavonoid compounds that produce antibacterial effects and gut health improvement. Genistein is among the most abundant isoflavones present in a plant-based diet and can be found in high amounts in soy products (up to 1g Kg-1). We describe here a robust method to identify genistein tolerant and metabolizing bacteria in swine gut microbiota and to screen the strains that have antibacterial and immunestimulatory properties. Invasive species are forces of environmental, economic, and social change with detrimental impacts on ecosystems, commerce, agriculture, and human health. However, we still have a poor understanding of the processes that could be driving invasive potential. Hybridization may contribute to the establishment and spread of invasive lineages, as it may enhance genetic variation and facilitate rapid adaptation. Focusing on Russian thistle (Salsola tragus s.l., family Amaranthaceae) and closely related species, my thesis aims to clarify phylogenetic relationships and investigate how hybridization has shaped the invasion dynamics of these lineages. Pneumonia is a major factor affecting populations of free-ranging bighorn sheep (Ovis canadensis) across western North America. Pneumonia can occur in large-scale epizootics, during which greater than half of the population typically dies. After these epizootics, surviving ewes continue to conceive and bear lambs. However, lamb recruitment may remain low due to periodic or annual pneumonia outbreaks causing high lamb mortality rates, sometimes greater than 90%. Our study focused on the Rapid City, South Dakota bighorn sheep (BHS) herd that has recorded pneumonia-induced population decline since 2009. The Prairie Pothole Region (PPR) of North America provides critical habitat for waterfowl across life stages, but anthropogenic changes to the landscape have negatively impacted habitat quality for waterfowl. The mallard (Anas platyrhynchos) is abundant and socioeconomically valuable in the PPR, as it is a preferred target species of waterfowl hunters. Extensive research has evaluated breeding ecology of mallards in the PPR, but the period between juvenile mallards fledging and migrating has rarely been studied. Src family kinases (SFKs) play pivotal roles in multiple signaling pathways (Yeatman, 2004). SFK activity is inhibited by phosphorylation at its C-terminal tyrosine, by CSK (C-terminal Src kinase) and CHK (CSK-homologous kinase). CHK expression is restricted to normal hematopoietic cells, brain, and colon tissues. Downregulation of CHK in brain and colon tumors contributes to tumorigenicity in these tissues. CHK does not phosphorylate Src efficiently, however, in contrast to CSK, CHK inhibits Src kinase activity allosterically. Although the functions of CHK are still largely unknown, potential substrates of CHK including β-synuclein, α-tubulin, α-spectrin, 14-3-3, and Hsp90 have been identified. CHK is …
