Short sleep has been linked to adolescent obesity risk, but questions remain regarding the dietary mechanisms by which this occurs. We tested whether mildly shortening sleep influences how rewarding and appealing healthy adolescents find several kinds of foods. Eighty-eight healthy adolescents completed a within-subjects crossover sleep experiment comparing 5 days of Short Sleep (6.5 hour sleep opportunity) vs. 5 days of Healthy Sleep (9.5 hour sleep opportunity). Following each condition, adolescents completed measures of food appeal and reinforcing value of food across five food types: sweets/desserts, fruits/vegetables, lean meats/eggs, fast food entrees, and processed snacks. Adolescents averaged 2.2 hours/night longer …

The Perceived Differences In Employee Engagement Through Multiple Generations In The Workplace: An Hr Perspective, Ashley Dawson
The Perceived Differences In Employee Engagement Through Multiple Generations In The Workplace: An Hr Perspective, Ashley Dawson
Senior Honors Theses
Generational differences in the workplace are a perceived challenge that can present hidden opportunities. The workplace currently consists of four generations shaped by the political, social, and economic environments that marked their formative years. These generational differences have resulted in differing workplace values. Employee engagement balances productivity in one’s job with enjoyment in one’s work, optimizing both employee satisfaction and organizational outcomes. The key to engaging employees lies in the meaning each employee finds in the work environment and job functions. This paper aims to address whether or not engagement is affected by generational differences in the workplace and how …

Physiology Of Energy Intake In The Weight-Reduced State, Hans Rudolf Berthoud, Randy J. Seeley, Susan B. Roberts
Division of Basic Science Faculty Publications
Physiological adaptations to intentional weight loss can facilitate weight regain. This review summarizes emerging findings on hypothalamic and brainstem circuitry in the regulation of body weight and identifies promising areas for research to improve therapeutic interventions for sustainable weight loss. There is good evidence that body weight is actively regulated in a homeostatic fashion similar to other physiological parameters. However, the defended level of body weight is not fixed but rather depends on environmental conditions and genetic background in an allostatic fashion. In an environment with plenty of easily available energy-dense food and low levels of physical activity, prone individuals …

Evaluation Of Eight Kinds Of Flavor Enhancer Of Umami Taste By An Electronic Tongue, Kai Wang, Haining Zhuang, Fangling Bing, Da Chen, Tao Feng, Zhimin Xu
Faculty Publications
The umami intensity of single flavor enhancer was detected by an electronic tongue and human sensory. The linear fit was performed to unravel the concentration–response values correlations of eight flavor enhancers. The electronic tongue response data were then analyzed using principal component analysis (PCA) and discriminant factor analysis (DFA) method. It was found that the umami response value of the electronic tongue and the flavor enhancer concentration showed a semi-logarithmic function. Moreover, the PCA and DFA could successfully distinguish the variety and concentration of flavor enhancer. The umami intensities were also assessed by human sensory and showed consistency with those …

Global Trends In Intra-Household Gender Inequality, Deepak Malghan, Hema Swaminathan
Global Trends In Intra-Household Gender Inequality, Deepak Malghan, Hema Swaminathan
Working Papers
We present trends in intra-household gender inequality for forty-five different countries across a four-decade period (1973–2016), using global micro-data from 2.85 million households. Intra-household gender inequality has declined by 20% in the four decades that we study. However, current levels are still significant so that any neglect of intra-household gender inequality results in a substantial underestimation of overall earnings inequality. For a sub-sample of countries, we show that the relationship between intra-household gender inequality and household economic status is non-monotonic – that we refer to as the “micro-GKC†(micro Gender Kuznets Curve) relationship. We also develop an empirical framework to …
