College of Health and Human Services
The objective of this study was to assess the impact of different strategies for delivering supplemental zinc on fecal myeloperoxidase (MPO), neopterin (NEO), and calprotectin (CAL) among young Laotian children. In a double-blind controlled trial, children aged 6-23 months were randomized to receive either daily preventive zinc (PZ) tablets (7 mg/ day), daily micronutrient powder (MNP; containing 10 mg zinc and 14 other micronutrients), therapeutic zinc (TZ) supplements for diarrhea treatment (20 mg/day for 10 days), or daily placebo powder and followed for ∼36 weeks. Stool samples were collected at baseline and endline. Fecal MPO, NEO, and CAL concentrations were …

Flavonols are gaining increasing interests due to their diverse health benefits for humans. Broccoli is a main flavonol source in our diet, but the genetic variation of flavonols and their correlation with antioxidant capacity remain to be understood. Here, we examined variations of the two major flavonols kaempferol and quercetin in florets and leaves of 15 diverse broccoli accessions by ultra-performance liquid chromatography. Broccoli accumulated more kaempferol than quercetin in most of the accessions tested, with the ratios varying from 4.4 to 27.9 in leaves and 0.4 to 4.4 in florets. Total flavonoids showed 2.5-fold and 3.3-fold differences in leaves …

We examine how solitary confinement correlates with self-reported adverse physical health outcomes, and how such outcomes extend the understanding of the health disparities associated with incarceration. Using a mixed methods approach, we find that solitary confinement is associated not just with mental, but also with physical health problems. Given the disproportionate use of solitary among incarcerated people of color, these symptoms are most likely to affect those populations. Drawing from a random sample of prisoners (n = 106) in long-term solitary confinement in the Washington State Department of Corrections in 2017, we conducted semi-structured, in-depth interviews; Brief Psychiatric Rating Scale …

Extension's in-person hiring processes have been complicated in 2020 by the COVID-19 pandemic. To prevent delays in hiring for three vacant county faculty positions, our search committee conducted remote interviews using a variety of innovative techniques, such as a live "we're hiring" webinar, an icebreaker session, and live and recorded candidate presentations. The results of our innovative efforts included a larger pool of applicants, relaxed web-based video interviews, and savings in time and expenses. These strategies could be considered as new and effective approaches and practices to hiring and interviewing in Extension as the pandemic continues and into the future.

The Relax and Recharge after school club was intended to help students wind down and recover from the stresses of the school day. We led a variety of crafts, exercises, and activities for this purpose. We also intended to provide the students with tools to take back into the school and home for stress management. Our goal was for the students to learn how to be more present, self-aware, and able to manage stress in a healthy way.

Many individuals who contract COVID-19 and experience poor outcomes are also found to be deficient in certain vitamins and minerals. As a result, many nutrients have been related to improved outcomes for patients suffering from COVID-19. While it is not proven that increased intake of any one vitamin or mineral can prevent COVID-19, the supplementation of specific vitamins or minerals such as vitamin C, vitamin D, zinc, and magnesium could impact the risk of getting COVID-19 and the severity of cases of COVID-19. Positive benefits are expected from this relationship because certain vitamins and minerals have been known to support …

Primary Reasons For Not Attending Farmers' Market. Do Market Features And Consumer Characteristics Matter?, Autumn Milliner
Masters Theses & Specialist Projects
The number of farmers’ markets has been growing, but consumer attendance does not appear to rise at the same rate. The overall purpose of this study was to investigate primary reasons for not attending. Specific objectives were: (1) describe the consumer characteristics of individuals who do not attend farmers’ markets (2) investigate the consumer characteristics and market amenities that influence a consumer’s choice to not attend a farmers market (3) estimate the variables that impact a consumer’s level of interest in subscribing to a CSA and (4) assess and estimate the relationship between consumer characteristics and their willingness to pay …

The Center for Population Studies (CPS) at the University of Mississippi (UM) has partnered with the Maddox Foundation (Hernando, MS) and the Community Foundation of Northwest Mississippi (CFNM) to explore changes in communities across an 11-county region as a way to identify funding priorities designed to address challenges and build upon assets in the region. With a grant from the Maddox Foundation, the CFNM launched FEED Northwest Mississippi to provide emergency funding for area food pantries, especially ones located in rural areas (CFNM 2020). This initiative has now expanded with a host of additional contributors to the FEED Fund. Results …

The proportion of women of reproductive age who are overweight or obese is increasing globally. Gestational obesity is strongly associated in both human studies and animal models with early-onset development of adult-associated metabolic diseases including metabolic syndrome in the exposed offspring. However, animal model studies have suggested that gestational diet in obese pregnancies is an independent but underappreciated mediator of offspring risk for later life metabolic disease, and human diet consumption data have highlighted that many women do not follow nutritional guidelines prior to and during pregnancy. Thus, this review will highlight how maternal diet independent from maternal body composition …

Bentonite Reinforced Chitosan Scaffold: Effect Of Bentonite Exfoliation On Scaffold Properties, Soma Chakraborty, Cristine Joy M. Pimentel
Chemistry Faculty Publications
Chitosan is under investigation as biodegradable scaffolding material for tissue engineering. Crosslinked chitosan alone cannot form a self-supporting scaffold hence it needs reinforcement. The group reported fabrication of chitosan scaffolds reinforced by exfoliated and non-exfoliated bentonite and compared their properties. Scaffolds were fabricated by freeze-drying technique. Bentonite was exfoliated by allowing it to swell in water for a certain time interval. XRD profile showed that swelling reduced the crystallinity of bentonite. Both types of bentonite dispersed well in the chitosan matrix and imparted structural stability to the scaffolds. Scaffolds had interconnected pores, apparent porosity of scaffold with exfoliated bentonite was …

Underfeeding Patients With Critical Illness: Making Sense Of Recent Data, Jacklyn C. Hook, Patricia M. Sheean
Parkinson School of Health Sciences and Public Health
Nutrition support is recognized as an important component of care for patients with critical illness. Providing energy and protein at estimated requirements is thought to prevent or decrease the likelihood of disease-related malnutrition. However, short-term calorie restriction may be advantageous in this setting. Using PubMed, we conducted a search for studies of “permissive underfeeding” or “hypocaloric feeding” for patients with critical illness to evaluate relevant outcomes. Of the initial 137 studies, 32 papers were evaluated, and 16 papers met all eligibility criteria. The results support a benefit or neutral impact on nutrition support-related complications, yet conflicting findings on mortality and …

BACKGROUND: Opioid-related adverse events are a serious problem in hospitalized patients. Little is known about patients who are likely to experience opioid-induced respiratory depression events on the general care floor and may benefit from improved monitoring and early intervention. The trial objective was to derive and validate a risk prediction tool for respiratory depression in patients receiving opioids, as detected by continuous pulse oximetry and capnography monitoring.
METHODS: PRediction of Opioid-induced respiratory Depression In patients monitored by capnoGraphY (PRODIGY) was a prospective, observational trial of blinded continuous capnography and oximetry conducted at 16 sites in the United States, Europe, and …
