The Evolution Of Food Labeling, University Of New England Applied Nutrition Program

All Student-Created Educational Resources

The infographic displays the timeline pertaining to the regulation created by the Food and Drug Administration to keep food manufacturers accountable for what is labeled on the food they produce. The evolution of nutrition labeling was not solely driven on the decisions made by the government, but also the interests of consumers. The process began in 1969 and has been evolving until present day. As scientists began to uncover the link between diet and food, consumers began to take note. The publishing of both The Surgeon General’s Report on Nutrition and Health and the National Research Council’s report and the …

PCOM Scholarly Works

Green tea and its catechins have been shown to ameliorate high fat diet-induced oxidative stress and hyperlipidemia. However, low bioavailability of catechins limits their therapeutic potential. Lemon juice (LJ) has been suggested to enhance the bioavailability of catechins in vitro. This study investigated the antioxidative and hypolipidemic efficacy of a single dose of green tea extract (GTE) or GTE plus LJ (GTE + LJ) in high-fat diet fed pigs. Sixteen pigs ingested a single dose of GTE (190 mg/kg/day) or GTE + LJ (0.75 mL/kg/day) mixed with low-fat (LF; 5% fat) or high-fat (HF; 22% fat) diets and blood samples …

Linking Nutrient Stoichiometry To Zika Virus Transmission In A Mosquito, Andrew S. Paige, Shawna K. Bellamy, Barry W. Alto, Catherine L. Dean, Donald A. Yee

Faculty Publications

Food quality and quantity serve as the basis for cycling of key chemical elements in trophic interactions; yet the role of nutrient stoichiometry in shaping host–pathogen interactions is under appreciated. Most of the emergent mosquito-borne viruses affecting human health are transmitted by mosquitoes that inhabit container systems during their immature stages, where allochthonous input of detritus serves as the basal nutrients. Quantity and type of detritus (animal and plant) were manipulated in microcosms containing newly hatched Aedes aegypti mosquito larvae. Adult mosquitoes derived from these microcosms were allowed to ingest Zika virus-infected blood and then tested for disseminated infection, transmission, …

High Protein Rice Flour In The Development Of Gluten-Free Muffins And Bread, Gabriella M. Paz Jun 2019

High Protein Rice Flour In The Development Of Gluten-Free Muffins And Bread, Gabriella M. Paz

LSU Master's Theses

Gluten sensitivities and intolerance disorders such as Celiac disease are being diagnosed more every day which has opened a huge market for gluten-free foods that is expected to reach nearly $7.6 billion by 2020. About 30% of the US population says they are trying to cut-down on or avoid gluten completely, with only 7% doing so for medical reasons. Although there are gluten-free alternatives available to use in cooking and baking, simple substitution of these flours for wheat does not produce acceptable texture characteristics. Gluten-free baked goods suffer from being low in nutritional value such as protein and fiber content …

They live in groups that typically contain family members, including a breeding pair and their offspring. Seven related individuals were observed for this study, which was designed to ensure and evaluate the activity budgets of each tamarin. The aim of the study was to determine whether the older tamarins possessed different activity levels than the younger offspring. Each cotton-top tamarin was observed for an hour per week over a ten-week period. Each activity— playing with other tamarins, active in general, eating, grooming or being …

The Effects Of Hyperlipidemia On Β-Cells, Andrew Barlow, Trevor Lloyd, Mason Poffenbarger, Austin Ricks, Dr. Jeffery Tessem Jun 2019

The Effects Of Hyperlipidemia On Β-Cells, Andrew Barlow, Trevor Lloyd, Mason Poffenbarger, Austin Ricks, Dr. Jeffery Tessem

Journal of Undergraduate Research

Diabetes’ prevalence is increasing at an alarming rate. Normally, insulin-secreting β-cells in the pancreas regulate proper glucose absorption and storage. Type 1 and Type 2 diabetes are characterized by decreased functional β-cell mass and insulin production (1). Diabetes also results in increased circulating glucose and fatty acid levels, which damage and destroy β-cells over time (2). Our study sheds further light on the palmitate and oleate-induced effects of gradually worsening hyperlipidemia and the mechanisms behind those effects; ultimately, promoting investigation into methods by which existing β-cells could be protected from harmful hyperlipidemia.

Nf Κb As A Mediator In Iron Regulation, Erik D. Marchant, Chad Hancock Jun 2019

Nf Κb As A Mediator In Iron Regulation, Erik D. Marchant, Chad Hancock

Journal of Undergraduate Research

Doxorubicin (DOX) is a commonly used chemotherapy drug. Although it is very effective in treating many different types of cancer, it has also been shown to induce oxidative stress in multiple tissues, partially due to severe iron-dysregulation. The effects of DOX have mostly been studied in heart tissue, because DOX has been shown to increase the risk of cardiomyopathy and other heart diseases. Besides causing damage to the heart, DOX has also been shown to contribute to muscle wasting. For this purpose, we decided to investigate how DOX causes iron-dysregulation in C2C12 myotubes, which are immortalized cells from mouse skeletal …

Development Of Solid Lipid-Polymer Hybrid Nanoparticles As Potential Oral Delivery Systems For Lipophilic Bioactive Compounds, Taoran Wang Jun 2019

Development Of Solid Lipid-Polymer Hybrid Nanoparticles As Potential Oral Delivery Systems For Lipophilic Bioactive Compounds, Taoran Wang

Doctoral Dissertations

Solid lipid–polymer hybrid nanoparticles (SLPN) are nanocarriers made from a combination of polymers and lipids. By integrating the advantages of biocompatible lipid-based nanoparticles and gastrointestinal (GI)-stable polymeric nanoparticles, SLPN are the ideal delivery system for delivering lipophilic compounds orally. In this project, two novel preparation strategies were proposed to fabricate GI-stable SLPN: 1) Bovine serum albumin (BSA) and dextran were first conjugated through Maillard reaction and the conjugates were exploited as macromolecular emulsifier and surface coating layer to prepare SLPN by a solvent diffusion and sonication method. In this approach, the multilayer structure was formed by self-assembly of BSA-dextran micelles …

Potassium Citrate Prevents Increased Urine Calcium Excretion And Bone Resorption Induced By A High Sodium Chloride Diet, Sellmyer Deborah, Schloetter Monique, Sebastian Anthony

Central Asian Journal of Pediatrics

The amount of sodium chloride in the diet of industrialized nations far exceeds physiological requirements. The impact of abundant ietary salt on skeletal health has yet to be established, but is potentially detrimental through increased urinary calcium losses. We examined the effect of increased dietary sodium chloride on urine calcium excretion and bone turnover markers in postmenopausal women and, further, whether potassium citrate attenuates the effects of increased dietary salt. Postmenopausal women (n _ 60) were adapted to a low-salt (87 mmol/d sodium) diet for 3 wk, then randomized to a high-salt (225 mmol/d sodium) diet plus potassium citrate (90 …
