Food Talk: Better U (FTBU) is a healthful weight management curriculum developed by the University of Georgia's Supplemental Nutrition Assistance Program Education (SNAP-Ed) team. FTBU addresses the high burden of obesity among low-income Georgians by focusing on healthful weight management practices. Topics include practicing portion control, tracking dietary intake, setting goals, limiting added sugar, making small healthful behavior shifts, and implementing problem-solving strategies. Lesson structure includes sharing sessions, didactic lessons, cooking demonstrations, and physical activity. FTBU is based on needs assessment results and rigorous evaluation and thereby aligns with requirements outlined in current SNAP-Ed guidance materials. Other Extension SNAP-Ed providers …

This lab gives students hands-on experience with visualizing the root architecture of plants exposed to varying concentrations of the vital nutrient phosphorus. By maintaining Brassica sp. seedlings in the presence of different quantities of phosphate, students can quantify changes in the number of lateral roots as an example of how the environment influences plant pattern formation. Additional variables in the experimental design, such as the use of plant mutants altered in plant regulator action or the presence of plant regulators in the plant growth medium, allow for exploration of how plant growth regulators are involved in root development. In Fall term of 2014, three instructors of Portland State University’s School of Community Health, in collaboration with the school’s subject librarian, deployed digital badges to certify information literacy and critical thinking outcomes in their classes. The badge curriculum, which was developed by mapping library learning outcomes to course learning outcomes, was designed to teach and assess students’ understanding of and skills acquisition in website evaluation, information formats, database searching, citing and plagiarism, and contributing knowledge to the information landscape. Get Started Or Unstuck: Four Elements Of Successful Interdisciplinary Collaboration In Extension, Alison Holland, Alexis Troschinetz, Shahram Missaghi

Minnesota Extension needs to increase interdisciplinary collaboration across the organization to remain successful. Through interviews with associate deans and Extension educators, we investigated elements of existing interdisciplinary collaboration and recommended ways to approach such collaborations. Common themes identified were (a) the need to identify an issue requiring collaboration, (b) the need to define success, (c) the need to clarify expectations, and (d) the need to determine resources. Our findings can help Extension professionals get started, or unstuck, in the pursuit of successful interdisciplinary collaborations.

Poverty Simulations For Human Services Professionals: Impacts And Implications, Jeong-Kyun Choi, Dan Wang, Euwanda Jennings, Ruth Vonderohe

We examined the program outcomes of a poverty simulation offered by Nebraska Extension. Using qualitative and quantitative data sets collected from 582 participants, we investigated their emotional, attitudinal, and learning outcomes. The overall findings suggest that poverty simulations can enable participants to empathize with people living in poverty, reduce their misconceptions about people living in poverty and about governmental support, and improve their awareness of financial hardship, economic difficulties, government programs, and community resources. We provide recommendations for poverty simulation implementation, such as more rigorous use of orientation, group discussion, and community resources.

Proper calf care is important on dairy farms as management practices affect animal well-being and productivity as well as farm profitability. This article highlights areas of calf management needing improvement according to the results of a mixed-mode survey intended to provide a snapshot of calf management practices in Vermont. Areas for which improvement is needed aligned with farmers' identification of topics of interest and included calving management, nutrition (particularly neonatal feeding practices), and biosecurity (including vaccination). Annotation: this paper attempts to look closely at socio-economic consequences of migration and remittance decisions of the Uzbek households. We first draw a portrait of a typical migrant worker, paying special attention to the motives for migration and the skills that the migrants possess. We trace the portrait of the typical migrant worker to see the changes in migration profile over time. We also investigate the impact of migration and remittances on the livelihoods of migrant-sending families. Objective: Aphids harbor a nutritional obligate endosymbiont in specialized cells called bacteriocytes, which aggregate to form an organ known as the bacteriome. Aphid bacteriomes display distinct gene expression profiles that facilitate the symbiotic relationship. Currently, the mechanisms that regulate these patterns of gene expression are unknown. Recently using computational pipelines, we identified miRNAs that are conserved in expression in the bacteriomes of two aphid species and proposed that they function as important regulators of bacteriocyte gene expression. Objectives: The purpose of this dissertation was to create small area estimates to describe and explore the county-level spatial variation of extreme obesity among adults in the United States and to assess the county-level association and spatial variation of extreme obesity and mortality.

Methods: The Behavioral Risk Factor Surveillance System was used in conjunction with data from the Census Bureau to estimate county-level model-predicted prevalence of extreme obesity using multilevel regression and poststratification. Objective: To evaluate the potential protective effect of pumpkins’ seed extract on oxidative stress and cyclin D1 expression associated with mammary gland carcinoma in rats. Design: Randomized controlled experimental study. Animals: Forty female Sprague Dawley rats. Procedures: Rats were allocated equally to four groups (10 rats each); group 1 (control group); group 2 received 7, 12 dimethylbenzanthracene (DMBA) subcutaneously in the mammary region to induce carcinoma. Group 3 received pumpkin seed extract at 300 mg/kg body weight orally, and group 4 was treated with both pumpkin seed extract and DMBA. Objective Progress towards equitable and sufficient water has primarily been measured by population-level data on water availability. However, higher-resolution measures of water accessibility, adequacy, reliability and safety (ie, water insecurity) are needed to understand how problems with water impact health and well-being. To investigate the immunomodulatory effects of the three non-digestible oligosaccharides, fructooligofructose, xylooligosaccharide and galactooligosaccharide, and their combinations on mice,140 BALB/c female mice were randomly divided into 7 groups in this experiment, including blank control group, FOS group, XOS group and GOS group, XOS and GOS group, XOS and FOS group, FOS and GOS group. The aim of this study was to screen the representative indexes of melon nutritional quality and identify the nutritional quality characteristics of different varieties of melon. Based on the data of 18 nutritional quality indexes of melon, the principal component analysis (PCA) was used to select the representative indexes of melon quality. The results showed that the loading values of ash, fat, VB1, niacin, tartaric acid, sucrose, total sugar, soluble solids and total acid in the corresponding principal components of the 18 indexes were relatively high, which could better reflect the overall variation of the data. With grass carp (Ctenopharyngodon idella) oil used as core material, chitosan (CTS) and soy protein isolate (SPI) as wall materials, CTS/SPI fish oil microcapsule product was prepared by use ultrasonic and spray drying. The embedding rate, particle size, thermal stability, storage stability, fish oil and microcapsule functional fatty acids content changes before and after storage and fall hematic fat action were studied. The results showed that the preparation of microcapsule embedding rate reached 77%, with the average particle size 15.8 μm, and the glass transition temperature (Tg) was 71 ℃. The physicochemical and sensory properties, polyphenolic composition, and antioxidant capacity of two kinds of matcha tea infusion were investigated in the present study. The results showed that the pH increased slightly, and the titratable acid content decreased dramatically from the first to the third brew. Meanwhile, the infusions of the first brew had optimal color and scent sensory quality compared with those of the second and third brews. Furthermore, the total polyphenol content, polyphenolic composition, and antioxidant capacity of tea infusions showed no significant difference between the two kinds of matcha tea, but all decreased to some degrees during the …
