During the study, were analyzed two natural juice with blueberry juice concentrate, packed in Tetra Pak. At the juice were studied these parameters: the technological process of juice production, the sensory characteristics (color, aroma, taste and homogeneity), physical and chemical (pH degree, refraction index, soluble solids degree ° Brix and turbidity expressed with NTU ). The parameters were analyzed in the juice with fruit content of 50% and 25%. From the sensoric aspect the most qualitative fluid resulted with a 50% fruit concentration, from the refractive index content and the degree of ° Brix higher results had 25% fruit juice …

How can the teaching of biology contribute to sustainability education? The authors of this article suggest that their approach has the potential to increase the students’ level of engagement with the natural environment. The scope of biology teaching can be widened by allowing room for more experience and art-based activities. Such a change may deepen and expand the learners’ insights in natural phenomena, which in turn might foster or enhance an attitude of care-taking for the natural environment.

To soybean oil as the main raw material, chicken for the fried food. The effects of different frying time, frying temperature and the quality of each batch of fried chicken on the quality of soybean oil were studied by measuring the physical and chemical indexes, including color, acid value, peroxide value, carbonyl valence price and polar component of soybean oil. To investigate the application of minuteness wet pulverization method on the preparation of full bean milk, experimental and numerical analysis were applied in this paper. The influences of different technological parameters on the fiber grain size after the pulverization were also studied, and the empirical formula was obtained by dimensional analysis. The results showed that the average volume size of fiber grain decreased with the increase of cycle number, static blade number and rotating speed. However, the cut depth determined the limitation size of fiber grain. The increase of cycle number would not affect the grain size after the pulverization …

Zanthoxylum bungeanum seed protein was hydrolyzed with different proteases, and the optimal protease was screened based on the hydrolysis degree and iron-chelating ability of hydrolysates, then iron-chelating peptides were prepared by the optimal protease. Single factor method and response surface methodology based on Box-Behnken design using four factors and three levels were carried out to optimize the conditions of Zanthoxylum bungeanum seed iron-chelating peptide, and the effects, including substrate concentration, enzyme/substrate ratio, hydrolysis pH, temperature, time on iron-chelating ability of hydrolysate were studied. The paper focused on the effect of the cassava flour on the physical properties, sensory qualities and texture characteristics of cake. Different proportion of cassava flour instead of low-gluten flour was used to make cake, and the qualities and texture indexes of the products were evaluated. The results showed that with increase of the cassava flour, retraction rate of cake first decreased then increased. However, the sensory score of cake was found first increased then decreased. The baking loss rate, density, hardness and chewiness of cake increased, and the specific volume, moisture content, springiness and cohesiveness of cake was reduced. …

Moisture content and temperature variation of cut tobacco during convective drying were detected with the different hot air temperature from 70 ℃ to 120 ℃. The heat and mass transfer model for the variation of cut tobacco surface temperature with moisture content was established, and the characteristic temperature was proposed to characterize the heating degree of cut tobacco in the drying process. Then the correlation between the physicochemical properties of cut tobacco and the characteristic temperature was analyzed after the end of drying (12.5% moisture content of wet base). Ranking tests are important preference and attribute difference tools for sensory evaluation. Replicated testing is used widely to reduce the number of panelists required in other sensory methods such as discrimination. The information regarding replications sensory ranking is limited. This research evaluated important statistical and technical aspects for the development of the foundation for duplicated sensory ranking tests. Three studies were accomplished: 1) A study of nonparametric analyses on real preference ranked data; 2) a sensitivity study of two samples serving protocols for duplicated visual ranking, and 3) protocols comparison in taste. Type 2 Diabetes Mellitus (T2DM) is a metabolic disorder characterized by chronic hyperglycemia, which develops as a consequence of peripheral insulin resistance and defective insulin secretion from pancreatic β-cells. A high calorie diet coupled with physical inactivity are known risk factors for the development of T2DM; however, these alone fail to account for the rapid rise of the disease. The purpose of this study was to clarify the relationship between performance and vertical stiffness of triathletes in isolated running (IR; running without a prior swim and cycling) and triathlon running (TR; running preceded by a 1.5-km swim and 40-km cycling). The mean running speed during 10-km run and the vertical stiffness in IR and TR conditions were assessed. The vertical stiffness was positively related to the running speed in both, the IR and TR conditions. The relationship between the running speed and the vertical stiffness were stronger in TR than in IR. Improvement of vertical stiffness should be important …

We aimed to determine the influence of triceps surae (TS) muscle strength and Achilles tendon (AT) stiffness on age-related changes in locomotor performance and motor task execution strategy during a drop jump (DJ) task. After matching 12 young and 12 middleaged adults for TS muscle strength and AT stiffness, all subjects performed a series of DJs from different starting heights. Matched young and middle-aged adults showed similar DJ performance but the middle-aged adults showed significantly longer ground contact times, lower values in maximum vertical ground reaction force during the support phase and lower mechanical power, independent of starting height. Changes of direction (CoDs) have a high metabolic and mechanical impact in field and court team sports, but the estimation of the associated workload is still inaccurate. The aim of this study is to establish a kinematic-based algorithm to determine the energy cost of running at variable speed with frequent 180° CoDs. Kinematic and metabolic data were simultaneously collected during 5-minutes 5+5 m shuttle run tests. Mechanical work computation was split into positive (eccentric) and negative (concentric) contributions. When compared to the actual energy cost, the estimation algorithm returned an error of 5%. The purpose of this study was to examine postural sway patterns of ice hockey players and compare them with other athletes and also physically active non athletes. Balance training has become an integral part of sports training and is often included in knee injury and rehabilitation programs. We collected postural sway data for subjects during double and single legged stance for 30 seconds. The data was analyzed using traditional postural sway measures of range, length of path (or speed) as well as with Sample Entropy. The prevalence of bacteria in the atmosphere has been well-established in relevant literature, suggesting that airborne bacteria can influence atmospheric characteristics including the development of clouds. Studies have also demonstrated that the atmospheric biological profile is influenced by the underlying terrestrial biomes. An understanding of the complex interplay of factors that can influence the atmospheric biological profile, not to mention developing a biological census of the atmosphere, requires a cost-effective experimental system capable of generating reproducible results with reliable data. Low respiration rates, immobility, lack of feeding, and undeveloped reproductive systems confirmed a summer diapause in the overwintered and current-year adults of the clover leaf weevil, Hypera punctata, and lesser clover leaf weevil, Hypera nigrirostris. The prolonged summer diapause and extended winters in Wisconsin set strict limitations on the available time for damaging populations to develop on red clover, Trifolium pratense thus assuring the status of these weevils as minor pests.

Demand-driven acquisitions (DDA) programs have become an integral part of academic libraries’ collecting strategies. While DDA programs provide an effective way to build a just-in-time collection, it can be difficult to anticipate how many titles will be triggered for purchase and what the financial impact will be. This presentation will describe a project to build a predictive model to flag DDA titles that are likely to be triggered for purchase within the first year of being added to the catalog.
