“Un Pueblo Tan Dulce”: Diabetes, Depression, And Obesity Syndemics In Puerto Rico, Shir Lerman Apr 2016

“Un Pueblo Tan Dulce”: Diabetes, Depression, And Obesity Syndemics In Puerto Rico, Shir Lerman

Doctoral Dissertations

Diabetes, depression, and obesity are global health crises that disproportionately affect people with low socioeconomic status and other marginalized identities. These diseases have high incidence and prevalence rates in Puerto Rico due to high poverty and unemployment rates, changing dietary patterns, and Puerto Rico’s political status as a U.S. commonwealth. The myriad problems on the island contribute to the flight of Puerto Ricans to the mainland in search of better education and employment; there are currently more Puerto Ricans living on the mainland than there are in Puerto Rico. Puerto Rico’s political status is of particular importance, as it simultaneously …

Ethics In The Nonprofit Sector: A Study On The American Red Cross, Emily Smith

Honors Theses

When disaster strikes in the United States, there is one organization that is on everyone’s mind, the American Red Cross. It has operated for over a hundred years on the simple premise of delivering aid to those in need. The organization does this by reacting effectively and efficiently to natural and man-made disasters and delivering humanitarian aid to those affected. In recent years, though, the American Red Cross has come under scrutiny for mismanagement and ineffective disaster relief. The purpose of this paper is to use ethical standards of the nonprofit sector to evaluate and explain the performance of the …

How The U.S. Low-Fat Diet Recommendations Of 1977 Contributed To The Declining Health Of Americans, Julia Reedy Apr 2016

How The U.S. Low-Fat Diet Recommendations Of 1977 Contributed To The Declining Health Of Americans, Julia Reedy

Honors Scholar Theses

In 1977, the first edition of The Dietary Goals for the United States (“The Recommendations”) was published in attempts to reduce incidence of diet-related diseases such as cardiovascular disease and diabetes. While numerous dietary adjustments were recommended in order to improve health, fat was identified as the most instrumental factor. However there exist many confounders of The Recommendations, including Medium Chain Triglycerides (MCT), fat from dairy products, eggs and the high-fat Mediterranean Diet. Nonetheless, the food industry made adjustments to acclimate to the anti-fat mentality The Recommendations initiated. Linoleic acid- (LA) rich soybean oil became heavily used, drastically altering the …

Rescue Of Diet-Induced Obesity And Estrous Cycle Irregularity With Omega-3 Rich Fish Oil Diet, Simone Marie Godwin

Electronic Theses and Dissertations Archive

Reproduction, an energetically costly process, is subject to nutritional and metabolic control. There is a high occurrence of female infertility in obese women, and Polycystic Ovarian Syndrome (PCOS), a condition characterized by androgen excess and oligo- and amenorrhea, is highly associated with obesity and diabetes mellitus. Obesity is characterized by chronic, low-grade inflammation and increased circulating pro-inflammatory cytokines. These pro-inflammatory molecules can alter insulin signaling, thereby contributing to glucose intolerance and insulin resistance, both hallmarks of type 2 diabetes. This study seeks to elucidate the relationship between obesity, inflammation, and reproductive dysfunction through diet intervention. Diets rich in n-3 poly-unsaturated …

Exploring Patient Satisfaction With Interdisciplinary Care Of Complex Feeding Problems, Claire K. Miller Phd, Scott Pentiuk Md

Patient Experience Journal

Measures of patient satisfaction with health care experiences are recognized as essential in the healthcare market environment. To our knowledge, there are no specific patient experience measures that assess patient and caregiver satisfaction with a multidisciplinary approach to management of complex feeding and swallowing issues in pediatric patients. In order to explore patient experience and to identify opportunities for improvement, a pilot patient satisfaction survey was developed in an interdisciplinary feeding team clinic. Patients and families were surveyed following clinic encounters between July of 2014 and January of 2015. Likert style questions were used to assess experience with ease of …

Effects Of Barley Β-Glucan On Pasting And Rheological Properties Of Wheat Flour, Li Yuan, Zhou Huiming, Guo Xiaona, Zhu Kexue, Peng Wei

Food and Machinery

In the present study, the influence was investigated from water extracted barley β-glucan (BBG) on the pasting and rheological properties of wheat flour. Results showed that the values of wet gluten content decreased with the addition ratio of BBG increased. The presence of BBG induced an increase of peak viscosity, trough viscosity, breakdown and peak viscosity, while the setback value showed a decreasing tendency. Compared with the control, with increasing of the water absorption of dough, the development time, the stability and the weakening value reduced. Lower modulus (G′, G″) and tan δ values were observed in dynamic viscoelasticity measurements.

The Farmers' Market Experience: Food To Fuel The Body And Soul, Ellery Brett Hinson Apr 2016

The Farmers' Market Experience: Food To Fuel The Body And Soul, Ellery Brett Hinson

Departmental Honors & Graduate Capstone Projects

This thesis examines the rise in popularity of the farmers' market through ethnographic research of the Fredericksburg Farmers' market. The farmers' market shopper has become a well known stereotype -- a white, upper-middle class suburbanite who sees it as their moral duty to support their local community and economy through their consumer power. I argue that these shoppers are buying more than just healthy local food. Their interactions with the market and vendors build an experience that feels more authentic and real than the larger capitalist society the market exists within. Through their consumption of the farmers' market and its …

Beyond The Process God: A Defense Of The Classical Divine Attributes, Steven J. Young Apr 2016

Beyond The Process God: A Defense Of The Classical Divine Attributes, Steven J. Young

Honors Program Theses and Projects

Because of the work of process philosophers Alfred North Whitehead and Charles Hartshorne, a view of God has emerged as being in a constant state of flux. The power and knowledge of the process God are much more restricted than the power and knowledge of the classical God, but such diminutions supposedly safeguard divine goodness from tyrannical implications. In this paper, I defend the classical divine attributes against process philosophers. More specifically, I argue that God’s omnipotence does not diminish divine goodness and that a deity with such restricted power would not function as a proper object of worship. In …

Debridement Of Diabetic Foot Ulcers: Public Health And Clinical Implications. A Systematic Review, Meta-Analysis, And Meta-Regression, David Dayya

Doctoral Dissertations

Background

Diabetic Foot ulceration has devastating complications. These include amputations resulting in poor quality of life, and serious infections including osteomyelitis and life threatening sepsis. Diabetic wounds can be protracted, take significant time to heal, and they can recur after they have healed. They can be very costly and consume healthcare resources. These consequences have serious public health and clinical implications. Debridement is often used as a standard of care in efforts to help avert these consequences. It is used to remove nonviable or necrotic tissue such as nonviable tissue in order to facilitate the wound healing process and help …
