The work presented in this thesis characterises natural cereal-derived lactic acid bacteria and examines their potential application in the dairy fermentation area, with special emphasis on the sourdough isolate, Weissella cibaria MGl and its associated glucan homoexopolysaccharide. This strain is notable for its high-level production of dextran, being termed a “hyper-producef’. Genome sequencing and analysis of a number of IV. cibaria strains was performed in the context of available genomic data for other Weissella species, with special focus on the metabolic traits of W. cibaria MGl, and the results represent the first study to explore members of the Weissella genus …

Around 12,000 years ago, people began shifting towards a lifestyle of food production. The rapid shift in lifestyle significantly altered the human diet, and research suggests our genomes have had insufficient time to adjust. Due to the discord between genome and environment, unprecedented levels of disease and malnutrition are epidemic in certain subsets of the population. Prostate cancer is commonly screened in the bloodstream by detection of excess PSA, prostate-specific antigen which is a protein in the prostate produces in large quantities when cancerous tumors are present. The predominant cause of egg loss in a large Galucous-winged Gull (Larus glaucescens) colony in Washington is cannibalism. Previous work demonstrated the occurrence of every-other-day clutch initiation synchrony in dense areas of the colony during years when cannibalism was most frequent, suggesting that synchrony is an adaptive response to cannibalism. Here we show that (1) the initial egg laid in a nest is more likely to be cannibalized than subsequent eggs, (2) an egg is most likely to be cannibalized within the first 24 hours after it is laid, and (3) the odds that an initial egg is cannibalized within …

Cannibalism leads to a variety of behavioral, demographic, and ecological consequences and is influenced by a range of environmental circumstances among numerous taxa. Although multiple studies have linked cannibalism to egg and chick failure in gull populations, few characterizations of gull cannibal behavior and reproductive success exist. During the 2014 breeding season, we observed the territories of 16 Glaucous-winged Gull (Larus glaucescens) and Glaucous-winged x Western Gull (L. glaucescens x occidentalis) egg cannibal specialists on Protection Island, Washington, USA. Privacy policies are verbose, difficult to understand, take too long to read, and may be the least-read items on most websites even as users express growing concerns about information collection practices. For all their faults, though, privacy policies remain the single most important source of information for users to attempt to learn how companies collect, use, and share data. Likewise, these policies form the basis for the self-regulatory notice and choice framework that is designed and promoted as a replacement for regulation. BACKGROUND- We examined the differential impact of a well-established human immunodeficiency virus (HIV)/sexually transmitted infections (STIs) curriculum, Be Proud! Be Responsible!, when taught by school nurses and health education classroom teachers within a high school curricula.
METHODS- Group-randomized intervention study of 1357 ninth and tenth grade students in 10 schools. Twenty-seven facilitators (6 nurses, 21 teachers) provided programming; nurse-led classrooms were randomly assigned.
RESULTS- Students taught by teachers were more likely to report their instructor to be prepared, comfortable with the material, and challenged them to think about their health than students taught by a school nurse. Both groups reported …

Economic inequalities, institutional awkwardness, cultural underdevelopment, social exclusion, a fast rate of environmental, ecological, and biodiversity degradation have all been at the root of historic social injustice and structural poverty in Brazil for centuries. Human development and emancipation in this context should be approached as a set of non-formal educational practices to promote better learning and dignity. These would become potent means for reducing material poverty and selfish individual behavior, and for improving holistic modes of education and culture. Objective: Rural Kenya is affected by health disparities and poor health outcomes among school-age children. This paper identifies gaps in health care among school-aged children in rural Kenya, in order to identify a health care model to meet those gaps.
Design: The results of a systematic review on the health care needs were triangulated with field notes from interviews of stakeholders in a rural Kenyan village. Needs were then compared with currently available health care resources to identify gaps.

Managing food allergies in schools has become a critical strategy for ensuring the health and safety of students. The Centers for Disease Control and Prevention's (CDC) Voluntary Guidelines for Managing Food Allergies in Schools and Early Care and Education Programs (CDC, 2013) provides schools with important guidance for this complicated task. The CDC developed a food allergy guidelines toolkit for schools to bring the contents of the guidelines to priority school audiences in easily accessible and relevant formats. Despite greater risk of cardiovascular disease (CVD) mortality in patients with a history of incarceration, little is known about how prisons manage CVD risk factors (CVR-RF) to mitigate this risk.
We conducted in-depth interviews with men and women with CVD-RF and who had been recently released from prison (n=26). Using a grounded theory approach and applying the constant comparative method, we inductively generated themes about CVD- RF care in prison. Data collection and analysis occurred iteratively to refine and unify emerging themes.

Attitudes of health professional students may determine the effectiveness of interprofessional education (IPE). We sought to identify student characteristics associated with more positive attitudes toward IPE by surveying a cohort of medical (M), nursing (N), and physician associate (PA) students first and third year using the Readiness for Interprofessional Learning Scale (RIPLS) and Interdisciplinary Education Perception Scale (IEPS). We collected demographic and experiential information and performed one-way ANOVA, independent and paired t-tests, and multiple linear regression. 110 of 213 students (52%) completed the RIPLS and 106 (50%) completed the IEPS at both time points. Background: Infant feeding takes place within a network of social relationships. However, the social context in which infant feeding advice is received remains underresearched.
Objective: The objective of this study was to evaluate the social contexts of infant feeding by examining individual and relationship characteristics of mothers and network members associated with advice to exclusively breastfeed, exclusively formula feed, or use a combination of breast milk and formula.

The Framework Convention on Global Health (FCGH) represents a significant opportunity to realize the right to health globally. However, in order to succeed the FCGH must be carefully considered: it must take a new evidence-based approach that departs meaningfully from past shortcomings in realizing the right to health. Central to this approach is recognizing, formally incorporating, and operationalizing the right to adequate food. This right should be correctly interpreted as a right to a standard of nutritional quality and not as a right to a minimum number of calories. © 2015 Munawwar Ali Khan et al. Sulforaphane (SFN) may hinder carcinogenesis by altering epigenetic events in the cells; however, its molecular mechanisms are unclear. The present study investigates the role of SFN in modifying epigenetic events in human cervical cancer cells, HeLa. HeLa cells were treated with SFN (2.5 μM) for a period of 0, 24, 48, and 72 hours for all experiments. After treatment, expressions of DNMT3B, HDAC1, RARβ, CDH1, DAPK1, and GSTP1 were studied using RT-PCR while promoter DNA methylation of tumor suppressor genes (TSGs) was studied using MS-PCR. IPE: Interprofessional Healthcare Education (IPE) competencies provide the criteria against which to measure the capacity and capability of fully collaborative healthcare teams to learn and work together. Significant work already exists in the determination of IPE competencies across all disciplines. Background: The purpose of developing ‘Sepsis Guidelines for Pakistan’ (SGP) is to provide clinicians practicing in local hospitals with a framework to aid timely recognition and management of adult patients in sepsis by adopting evidence-based recommendations of Surviving Sepsis Campaign (SSC) tailored to available resources. These recommendations are not meant to replace the SSC Guidelines.

The cancer incidence has risen dramatically over the last decades. About 8 million people died globally according to latest reports, which represented almost 40% more than it was 20 years ago. Risk factors for the development of cancer have been found to include smoking, alcohol, drugs, obesity and diet. This dissertation used a mixed-methods approach to conduct two inter-related studies focused on increasing physical activity (PA) in children in the 3rd, 4th, 5th, and 6th grades on an American Indian (AI) reservation in the northwestern US. Study 1 assessed enhancers and barriers to increasing PA in elementary school children. Six focus groups were conducted with children and adults. Each focus group was comprised of 7 to 11 participants and lasted approximately one hour. This thesis examines the relationship between socioeconomic status (SES) and the amount of outdoor time in public elementary schools in Portland, Oregon. "Outdoor time" is defined as the percentage of the school day spent at recess. SES is determined based on the percentage of children at each school who receive free or reduced price lunch. Schools with a higher percentage of students who receive free or reduced lunch are considered lower SES than schools with a lower percentage of students who receive free or reduced lunch.
