Lyme Disease, Marin Olson Beal
Lyme Disease, Marin Olson Beal
Infectious Diseases Project 2015
When asked to think of headlining diseases, many would choose bubonic plague, smallpox, Ebola, or leprosy. However, Lyme disease makes up for more confirmed diagnostic cases in the United States than all the aforementioned diseases combined. In 2014 alone, in the United States, 119 diagnostic cases were confirmed of bubonic plague, smallpox, Ebola, and leprosy altogether, while there were over 25,000 confirmed cases of Lyme disease (CDC, 2015). More information is needed to understand Lyme disease and how to treat it, before any more lives are lost.

Escherichia Coli O157:H7 Bacteriophage Φ241 Isolated From An Industrial Cucumber Fermentation At High Acidity And Salinity, Zhongjing Lu, Fred Breidt
Faculty Articles
A novel phage, Φ241, specific for Escherichia coli O157:H7 was isolated from an industrial cucumber fermentation where both acidity (pH ≤ 3.7) and salinity (≥5% NaCl) were high. The phage belongs to the Myoviridae family. Its latent period was 15 min and average burst size was 53 phage particles per infected cell. The phage was able to lyse 48 E. coli O157:H7 strains, but none of the 18 non-O157 strains (including E. coli O104:H7) or the 2 O antigen-negative mutants of O157:H7 strain, 43895Δper (also lacking H7 antigen) and F12 (still expressing H7 antigen). However, the phage was able to …

College of Nursing Faculty Publications
The objective of this study was to examine the relationship between the nutritional status, incidence of food insecurity and health risk among the homeless population in Rhode Island. This correlational study utilized a convenience sample of 319 homeless adults from Rhode Island’s largest service agency for the homeless. At the time, participants were living on the streets, in shelters, or were using Health Care for the Homeless services. Information on use of services such as access to emergency foods, shelters, and the Supplemental Nutrition Assistance Program (SNAP) was requested. Food security was measured by the six-item subset of the USDA …

Department of Animal Science: Faculty Publications
The aim of this study was to evaluate the carcass and meat characteristics of eight muscles from bulls with distinct growth paths. A total of 40 Alentejana male calves were allocated to two distinct feeding regimes. In the continuous growth (CG) system, the animals were fed concentrates plus hay and were slaughtered at 18 months of age. On the other hand, in the discontinuous growth (DG) system, the animals were fed hay until 15 months of age; the cattle were then fed the same diet provided to the CG group from 15 to 24 months of age. The DG reduced …
