Transcriptome Sequencing Of Mung Bean (Vigna Radiate L.) Genes And The Identification Of Est-Ssr Markers, Honglin Chen, Lixia Wang, Suhua Wang, Chunji Liu, Matthew Wohlgemuth Blair, Xuzhen Cheng

Agricultural and Environmental Sciences Faculty Research

Mung bean (Vigna radiate (L.) Wilczek) is an important traditional food legume crop, with high economic and nutritional value. It is widely grown in China and other Asian countries. Despite its importance, genomic information is currently unavailable for this crop plant species or some of its close relatives in the Vigna genus. In this study, more than 103 million high quality cDNA sequence reads were obtained from mung bean using Illumina paired-end sequencing technology. The processed reads were assembled into 48,693 unigenes with an average length of 874 bp. Of these unigenes, 25,820 (53.0%) and 23,235 (47.7%) showed significant …

Program Development And Implementation For South Carolina Youth Through Expanded Food And Nutrition Education Program (Efnep), Katherine Cason, Kattia Blanco, Joyce Senior, Jillian Clinton, Matt Francis, Christen King, Ashley Knight, Courtney Lee, Ana-Lisa Patterson, Katherine Smith, Amanda Wells, Griffin Wynkoop

Focus on Creative Inquiry

The Expanded Food Nutrition and Education Program (EFNEP) is a federally-funded program that aims at informing and educating limited-resource children, youth, and families in developing and maintaining a nutritionally sound diet, and a physically active lifestyle. Many of the intervention programs implemented through Youth EFNEP are created to be part of an existing school curriculum or as an after-school program. Currently, few programs exist that allow for easy transferability of these already existing curriculums to a summer camp setting. Therefore, the purpose of our Creative Inquiry was to develop the students' abilities to design and implement a Nutrition Education program for …

Evaluating The Nutritional Risk Of Older Adults Participating In The South Carolina Older Americans Act, Maciel Ugalde, Katherine L. Carson, Cheryl Dye, Vivian Haley-Zitlin

Graduate Research and Discovery Symposium (GRADS)

Older Americans Act (OAA) services are designed to help older adults maintain maximum independence in their homes and communities and to promote a continuum of care for the vulnerable elderly. Monitoring nutrition status of Area Agencies on Aging clients will help identify those at high nutritional risk for poor health outcomes and the factors contributing to that risk. This assessment will inform the development of strategies to enhance delivery of food and nutrition services to those with the greatest need. The purpose of this study is to determine population “hot spots” of high nutritional risk and their association with demographic …

The Effect Of A Target Bite Count And Plate Size On Food Intake., Phillip W. Jasper, James N. Salley, Adam Hoover, Eric R. Muth Apr 2015

The Effect Of A Target Bite Count And Plate Size On Food Intake., Phillip W. Jasper, James N. Salley, Adam Hoover, Eric R. Muth

Graduate Research and Discovery Symposium (GRADS)

The purpose of this study was to determine if an instruction to take fewer bites than typically taken, would reduce intake and overcome the known environmental cue of plate size. In a previous study, fifty-five participants (34F) ate ad libitum macaroni and cheese in groups of four, either from a small plate or a large plate. They ate 111±35g with 12±4 bites from the small plate, and 195±111g with 20± 6 bites from the large plate. The current study employed the same paradigm. Sixty participants (33F) were given bite count feedback and were instructed to take only 12 bites, while …

Deposition, Persistence, And Utilization Of Kelp Wrack Along The Central California Coast, Jarred Klosinski Apr 2015

Deposition, Persistence, And Utilization Of Kelp Wrack Along The Central California Coast, Jarred Klosinski

Capstone Projects and Master's Theses

Kelp wrack occurs year round along temperate coastlines providing food to a low productivity environment; few efforts however, have been made to quantify wrack’s variability in deposition, persistence, and utilization along beaches and the rocky intertidal. Knowing the biomass deposited, persistence (amount of time a piece of wrack is found in an area), and how primary and secondary consumers respond to wrack allows for a better understanding of how these three variables work together to promote a food web and the ecological implications of the presence/absence of wrack within an area. My work focused on spatiotemporal variation in wrack deposition, …

An Investigative Study Into The Beneficial Use Of Seaweed In Bread And The Broader Food Industry., James A. Griffin

Dissertations

The primary objective of this research was to investigate the beneficial use of seaweed in bread and the broader food industry. The author began the thesis by reviewing Japan’s consumption of seaweed (the highest, per capita, in the world, with the lowest incidence of obesity and cancer). The author introduced a new Irish seaweed product and examined how seaweed could be integrated more effectively into the Western diet. Using the literature reviewed in Chapter Two, the author explored the nutritional aspects of how seaweed is used both in Asian cuisine and in Western culture, in addition to how seaweed use …
