Heat-labile enterotoxin (LT) is an important virulence factor secreted by some strains of porcine-origin enterotoxigenic Escherichia coli (pETEC). The prototypic human-origin strain H10407 secretes LT via a type II secretion system (T2SS), but its presence or importance in pETEC has not been established. Exposure of pETEC to glucose has been shown to result in different secretion levels of LT. Furthermore, the relationship between the level of LT secreted and the virulence potential of the respective pETEC strain has not been established. Amaranthus hypochondriacus is an emerging pseudo-cereal native to the New World which has garnered increased attention in recent years due to its nutritional quality, in particular its seed protein, and more specifically its high levels of the essential amino acid lysine. It belongs to the Amaranthaceae family, is an ancient paleotetraploid that shows amphidiploid inheritance (2n=32), and has an estimated genome size of 466 Mb. Here we present a high-quality draft genome sequence of the grain amaranth A. hypochondriacus. The genome assembly consisted of 377 Mb in 3,518 scaffolds with an N50 of 371 kb. Patterns of fruit and vegetable consumption begin in childhood and persist into adulthood. Educating parents regarding appropriate dietary requirements for preschoolers is critical to supporting their appropriate growth and development. The purpose of this study was to determine whether a parent health report (including information about the child's fruit and vegetable consumption and recommendations regarding how to increase fruit and vegetable consumption) resulted in a greater fruit and vegetable intake in preschoolers and kindergarteners. Results from both the open trial and the randomized-controlled trial suggest that the parent health report may be a beneficial tool to increase vegetable consumption in …

Lifestyle diseases represent a large burden on developed societies and account for much morbidity worldwide. Research has shown that eating a diet rich in fruit and vegetables helps to ameliorate and prevent some of these diseases. Antioxidants found in fruits and vegetables may provide a substantial benefit in reducing disease incidence. This thesis examines the antioxidant properties of resveratrol, piceatannol, and pterostilbene, and the ability of Burkitt's Lymphoma (Raji) cells to uptake these three antioxidants. Cigarette smoking is a common and lethal worldwide habit, with considerable mortality stemming from its deleterious effects on heart function. While current theories posit altered blood lipids and fibrinogen metabolism as likely mediators, none have explored the role of the sphingolipid ceramide in exacerbating heart function with smoke exposure. Ceramide production is a consequence of cigarette smoke in the lung, and considering ceramide's harmful effects on mitochondrial function, we sought to elucidate the role of ceramide in mediating smoke-induced altered heart mitochondrial respiration. Nanoparticles prepared from whey protein isolates can be used for encapsulation and sustained delivery of β-carotene and zinc (II) ions. The loaded whey protein nanoparticles were prepared by the pH cycle method at aggregation pH 6 and 22 h ageing time in the presence of calcium ions. Morphology, particle size, stability and release profiles at neutral and acidic conditions of the loaded whey protein nanoparticles were evaluated. The migration of phthalates esters from PET plastic bottles into water especially under poor storage conditions is subject to scientific debate. Kaolin geophagia is associated with the relief of gastrointestinal distress, but it may also cause adverse health effects on the body. This study was designed to: assess kaolin composition; test if 129SvEv mice would consume kaolin and determine the consequences of consumption; and assess rotational stress modulation of consumption. Thirteen kaolin samples were purchased from Alabama and Georgia stores. Chemical and physical properties were characterized for each sample using a Munsell chart, pH meter, Energy Dispersive Spectroscopy, Transmission Electron Microscopy, Visible Near-InfraRed Spectra, and Inductively Coupled Plasma-Optical Emission Spectrometry. Local and regional food production has gained increased interest of consumers in recent years. The study, therefore, focused on assessing consumer attitudes and beliefs on local or regional livestock products. Data were obtained from a convenience sample of 432 participants from South Central Alabama, and were analyzed using descriptive statistics, including chi-square tests. A majority of respondents thought using chemicals and additives in locally or regionally produced beef or goat meat was a serious hazard. The objective of this study was to measure stress levels in broilers raised on a pasture production system (PPS) and a conventional production system (CPS) by evaluating lymphoid organ weights, white blood cell profiles (WBCP), total white blood cell counts (TWBC), and heterophil to lymphocyte ratios (HLR). Broilers were brooded indoors for 3 weeks then divided into 2 groups; one placed on pasture while the other remained indoors. Blood was collected at weeks 3, 5, and 7 via brachial venipuncture. Here we present the Dietary MicroRNA Databases (DMD), the first repository for archiving and analyzing the published and novel microRNAs discovered in dietary resources. Objectives: To compare the mean total antioxidant status (TAS) among 3 glaucoma types, namely: pseudoexfoliation glaucoma (PEG), primary open angle glaucoma (POAG), and primary angle closure glaucoma (PACG), and study its potential association with various clinical glaucoma-parameters. Methods: In this case-control study, plasma samples were obtained between September 2013 and October 2014 from 340 glaucoma patients (PEG [n=54]; POAG [n=147]; PACG [n=139]), and 351 controls of matching age, gender, ethnicity, and 5 different systemic co-morbidities from King Abdulaziz University Hospital, Riyadh, Saudi Arabia. Objectives: To assess the risk factors associated with diarrhea among children below 5-years-old in Mukalla, Yemen, and compare with other studies. Methods: We conducted a case-control study on 200 children (100 cases and 100 controls) who attended the Maternity and Child Hospital, outpatient-clinics, and the Primary Health Care Centers in Al-Mukalla, Hadhramout, Yemen between February and April 2013. Objectives: To determine adherence to dimensions of physical wellness among medical students of public and private medical colleges in Pakistan. Methods: This cross-sectional study was carried out from January to July 2011 among 820 students of private and public medical colleges in Karachi, Pakistan. Results: Overall, medical students scored low in dimensions of physical wellness. Private medical colleges students were fond of vigorous activities such as aerobics and swimming, whereas public medical colleges students were involved in moderate intensity activities such as walking and use of stairs ( p <0.0001). Private students reported to consume more fast food ( p =0.0001), had less sleep ( p =0.0001), but attended regular annual medical checkups ( p =0.009) as compared with their public institute counterparts. Safe practices such as avoidance of tobacco were almost the same. Conclusion: Comprehensive adherence to all dimensions of physical wellness was lacking among medical students.

In the United States, approximately 50 percent of people experience mental illness during their lifetimes (Cunningham, 2009). However, previous studies estimate that up to 80 percent of people living with a mental illness do not access services (Mackenzie et al., 2007). While there are numerous explanations for such disparity, this study posited that stigma associated with mental illness is a significant contributory factor.

The purpose of this study was to examine the moderating effect of couple's attachment behavior on family-of-origin (FOO) issues and body mass index (BMI). Previous research has indicated that family and couple relational factors may influence BMI. The vulnerability and stress model provided a theoretical framework for understanding how attachment behaviors may give greater adaptability to managing vulnerabilities from family stress. 1214 couples between the ages of 18 and 70, who identified themselves as in a serious relationship were surveyed using the RELATE questionnaire; both partners responded. Athletic training is an allied health profession in which individuals receive education in prevention, emergency care, clinical diagnoses, therapeutic intervention and rehabilitation for injuries and medical conditions. Currently, the route for an individual to become a certified athletic trainer is to graduate from an institution accredited by the Commission on Accreditation of Athletic Training Education (CAATE). Most commonly, entry-level education for athletic trainers is gained at the 331 institutions that host a bachelor’s level professional program. This study examined associations of sleep and minutes spent in moderate-vigorous physical activity (MVPA) with C-reactive protein (CRP) and interleukin (IL)-6 among persons living with HIV (PLWH). Cross-sectional analyses (n=45) focused on associations of inflammatory outcomes (i.e., CRP and IL-6) with actigraph-derived sleep duration, latency, and efficiency; bedtime; wake time; and wake-after-sleep-onset; as well as MVPA. Least square means for CRP and IL-6 by levels of sleep and MVPA were computed from general linear models. Individuals below the median of sleep duration, above the median for bedtime, and below the median of MVPA minutes had higher CRP or IL-6 levels. …

Children enter the Child Welfare System for a variety of complex reasons.
These reasons often point towards parents’ inability to provide appropriate
protection and safety for their children. After removal, many children are placed in
foster homes of relatives, non-related extended family members, group homes,
and county or private foster homes. A child who is removed from their original
home is likely to experience difficulties in the areas of attachment with caregivers
and other adults throughout their development.

The objectives of this study were: (1) to evaluate consumer acceptance of cheeses varying in fat and sodium levels, (2) to determine if sensitivity to reward and body mass index has an effect on product liking based on fat or salt content, (3) to evaluate the use of FaceReader technology during consumer evaluation and, (4) to determine if consumer’s self-selected, conscious emotions matched with the expressed, subconscious emotions acquired by FaceReader.
