Previous research studies have explored the activities, motivations, and outcomes for the culinary tourist, and researchers have theorized certain segments of culinary travelers (Boniface, 2003; Mitchell, Hall & McIntosh, 2000). Contrasting to this, investigation into “the foodie” and his or her activities at home has been strikingly infrequent. Exploring the foodie ‘at home’ or the foodie’s everyday behavior is critical to understanding different types of foodies, how to market to foodies, and their decision-making processes for culinary travel. Background:

While eHealth approaches hold promise for improving the reach and cost-effectiveness of behavior change interventions, they have been challenged by declining participant engagement over time, particularly for self-monitoring behaviors. These are significant concerns in the context of chronic disease prevention and management where durable effects are important for driving meaningful changes.

“Be Fit, Be Well” was an eHealth weight loss intervention that allowed participants to self-select a self-monitoring modality (web or interactive voice response (IVR)). Arsenic is a known carcinogen to humans, and chronic exposure to environmental arsenic is a worldwide health concern. As a dietary factor, ethanol carries a well-established risk for malignancies, but the effects of co-exposure to arsenic and ethanol on tumor development are not well understood. In the present study, we hypothesized that ethanol would enhance the function of an environmental carcinogen such as arsenic through increase in COX-2 expression. Our in vitro results show that ethanol enhanced arsenic-induced COX-2 expression. Relationship Between Caries Experience And Mothers'dental Care Knowledge And Attitude Among Palestinian Refugees In Lebanon, Tarek Dgheim, Sherine Badr, Hala Ragab

International Arab Journal of Dentistry

The aim of this study was to assess oral health care and use of dental services among preschool Palestinian refugee children aged 3 to 6 years old, as well as to evaluate oral health care knowledge of their mothers. Cross-sectional study was carried out through a survey about oral health care of 120 refugee children randomly selected from two nurseries inside a Palestinian camp for refugees in Beirut, Lebanon. Dental examination was performed and mothers were surveyed about their dental care knowledge and attitudes toward their children. The mean Decayed-Missing-Filled index (dmf) index was 6.5 ± 5.25. Effects Of Cellulase Hydrolysis And Carbonates On The Probiotic Fermentation Of Noni (Morinda Citrifolia), Hui-Hung Lee, Li-Jung Yin, Shann-Tzong Jiang

Journal of Marine Science and Technology–Taiwan

In typical fermentation of noni (Morina citrifolia), nutrients loss, along with unfavorable taste and odor frequently occurred due to the time-consuming fermentation. To improve the quality of fermented noni, cellulase hydrolysis and probiotic fermentation were employed. Four hours of hydrolysis with 100 U/mL of cellulase at 50°C significantly increased the reducing sugar, total phenolic content, reducing power, and trolox equivalent antioxidant capacity. No probiotics tested in this study could grow on the noni slurry and its hydrolysate, except for Pediococcus pentosaceus (BCRC 14053), which was able to grow on noni with 0.6% calcium carbonate. Sensorineural hearing loss is a common and currently irreversible disorder, because mammalian hair cells (HCs) do not regenerate and current stem cell and gene delivery protocols result only in immature HC-like cells. Importantly, although the transcriptional regulators of embryonic HC development have been described, little is known about the postnatal regulators of maturating HCs. Here we apply a cell type-specific functional genomic analysis to the transcriptomes of auditory and vestibular sensory epithelia from early postnatal mice. We identify RFX transcription factors as essential and evolutionarily conserved regulators of the HC-specific transcriptomes, and detect Rfx1,2,3,5 and 7 in the developing HCs. …

In a recent report Title et al. (1) fostered miRNA-375 and miR-200c knock-out pups to wild-type dams and arrived at the conclusion that milk microRNAs are bioavailable in trace amounts at best and that postprandial concentrations of microRNAs are too low to elicit biological effects. Their take home message is flawed. First, the majority of microRNAs in bovine milk are encapsulated in exosomes, thereby conferring protection against degradation and a mechanism for intestinal transport (2). BACKGROUND Epidemiologic and preclinical data suggest that higher intake and serum levels of vitamin D and higher intake of calcium reduce the risk of colorectal neoplasia. To further study the chemopreventive potential of these nutrients, we conducted a randomized, double-blind, placebo-controlled trial of supplementation with vitamin D, calcium, or both for the prevention of colorectal adenomas. METHODS We recruited patients with recently diagnosed adenomas and no known colorectal polyps remaining after complete colonoscopy. We randomly assigned 2259 participants to receive daily vitamin D3 (1000 IU), calcium as carbonate (1200 mg), both, or neither in a partial 2Å~2 factorial design. Women …

Virtually all animals have endogenous clock mechanisms that “entrain” to the light-dark (LD) cycle and synchronize psychophysiological functions to optimal times for exploring resources and avoiding dangers in the environment. Such circadian rhythms are vital to human mental health, but it is unknown whether circadian rhythms “entrained” to the LD cycle can be overridden by entrainment to daily recurring threats. We show that unsignaled nocturnal footshock caused rats living in an “ethological” apparatus to switch their natural foraging behavior from the dark to the light phase and that this switch was maintained as a free-running circadian rhythm upon removal of …

Carbon dioxide (CO2) is the primary substrate for photosynthesis by the phytoplankton that form the base of the marine food web and mediate biogeochemical cycling of C and nutrient elements. Specific growth rate and elemental composition (C:N:P) were characterized for 7 cosmopolitan coastal and oceanic phytoplankton species (5 diatoms and 2 chlorophytes) using low density, nutrient-replete, semi-continuous culture experiments in which CO2 was manipulated to 4 levels ranging from post-bloom/glacial maxima (ppm) to geological maxima levels (>2900 ppm). The purpose of this study was to evaluate dietary behaviors, body composition, and potential cardiovascular disease (CVD) risk factors among college club rugby team players. 15 athletes completed demographics, three 24-hour dietary recalls, body composition and blood lipid profile assessments following an overnight fast. Some data exist suggesting that quercetin supplementation improves aerobic capacity in trained and untrained individuals at sea-level (normobaric normoxic conditions). Few studies have examined the effects of quercetin on endurance performance during simulated altitude exposure (normobaric hypoxic conditions). Proinflammatory adipokines (inflammation markers) from visceral adipose tissue may initiate the development of insulin resistance (IR) and endothelial dysfunction (ED). This study's objective was to investigate the association of five inflammation markers (CRP and four adipokines: IL-6, TNFα, PAI-1, and adiponectin) with IR (quantitative insulin resistance check index (QUICKI)), microvascular measures (capillary density and albumin-to-creatinine ratio (ACR)), and endothelial measures (forearm blood flow (FBF) increases from resting baseline to maximal vasodilation).
