Telephone follow-up for diabetes self-management is used to facilitate ongoing support for individuals striving to maintain a healthy lifestyle. With the use of telephone follow-up after Diabetes Self-Management Education (DSME), key concepts can be emphasized and goal reinforcement can occur. When successfully managed, improved glycemic control occurs, as evidenced by reductions in glycosylated hemoglobin (A1C) levels. A review of the literature surrounding this topic and description of a capstone scholarly project utilizing findings from the literature to create an evidence-based telephone follow-up pilot study are included. This paper investigates the connection between local food systems, health disparities, and social justice in the rural South. It begins with the relationship between food insecurity and health disparities that disproportionately affect racial and ethnic minority populations, and non-minority women and children. First, we discuss the concept of health disparities within the context of bioethics and public health ethics in order to explore the link between the food system and health as a social justice issue. The seasonal variation of chemical composition in sea urchin Tripneustes gratilla gonad from Taiwan is investigated. The level of both gonad index (GI) and body weight in the sea urchins showed seasonal variations and were higher during spring and summer. The main saturated fatty acids (SFA) of sea urchin gonad were C14:0 and C16:0, and both varied with season. Arachidonic acid and eicosapentaenoic acid were the dominant poly-unsaturated fatty acids (PUFA), while C16:1, C18:1 and C22:1 were the predominant monoenoic fatty acids (MFA). We investigated the diel cycle mechanism of a tide-pool ciliate community of the northeastern coast of Taiwan. The investigation was conducted on 17th-18th June (typical summer weather), and on 23th -24th July 2013 (10 days after a typhoon). In June, the tide-pool ecosystem was an independent and the excystment of ciliates in the tide-pool caused a dramatic increase in population abundance, as well as composition change. In July, there was no significant difference between the species composition in the tide-pool and that in the surrounding coastal water. Food paralytic poisoning incident was detected in the gastropod Nassariidae Niotha clathrata and Zeuxis scalaris occurred in December 2012 in Kaohsiung, Taiwan. The toxin was purified from each remain of cooked gastropod and victim tissues by ultrafiltration using a YM-3 membrane, followed by C18 cartridge column purification. Based on analyses by LC-MS/MS, the causative agent of gastropod food poisoning was identified as tetrodotoxin. The toxicity of remain of cooked sample was 245 MU/g (1MU = 0.178 µg TTX) for N. clathrata and 203 MU/g for Z. scalaris. The blood and excrements of victim was shown to contain TTX of 0.13 …

The seasonal abundance of epiphytic dinoflagellates in the intertidal zone of Jeju Island, Korea was quantitatively estimated by monthly collection of macroalgal samples (Rhodophyta, Phaeophyta, and Chlorophyta) from six sampling locations from July 2012 to June 2013. Ten epiphytic dinoflagellate taxa, including eight potentially toxic species Amphidinium carterae, A. operculatum, Gambierdiscus sp., Ostreopsis ovata, Prorocentrum concavum, P. emarginatum, P. lima, and P. rhathymum, were identified. Two Amphidinium and three Prorocentrum species are newly recorded in Korean coastal waters. The reproductive biology of intertidal, black brown frillfin goby, Bathygobius fuscus (Rüppell) have been surveyed from the coastal region of Keelung, Taiwan. The species always belongs to the dominant species found in the fish community of the tidal pools for different seasons. The overall fecundity of adult female is from 2335 to 13332 eggs with the average of 5605 eggs with average eggs-size is 0.34 ± 0.06 mm. The female minimum measure body-size would be 40.4 mm SL. We studied the prey consumption rates in Apocyclops royi on neonate and adult rotifers, Brachionus rotundiformis and ciliate, Euplotes sp. in the presence and absence of algae, the smaller Isochrysis galbana and the larger Tetraselmis chui. Both males and females of A. royi were able to successfully ingest neonate and adult rotifers and ciliate. The prey consumption rates were significantly lower in males than in females of A. royi. Regardless of sex and reproductive state of the copepod, prey consumption rates were higher on neonates rotifer than on adults. In the elderly, hip fractures from falls often result in decreased quality of life, independence, or functional mobility. Such injuries may lead to hospitalizations, skilled nursing facility admissions, and healthcare costs, yet can be minimized by addressing risk factors of falls. Health education models indicate that assessment of the target population is important prior to the development of an effective program. Ġellewża and Girgentina, the main two Maltese indigenous grape varieties that are used for winemaking, are grown in small parcels of land with an average size just over 0.1 ha. Policies and regulations that influence the sector have been set up and this increased the need for studies to understand the current management practices and how can they be more sustainable. Commercial manufacturing and widespread use of polychlorinated biphenyl (PCB) in the United States has left lasting negative effects today. These persistent contaminants continue to bioaccumulate in the food web because of their stable structure, long half-life, and high lipophilicity. Adding PCB to the diet of Sprague-Dawley rats during pregnancy and lactation alters the thyroid status of offspring, and the behavior of the dams and pups. Objectives: The purpose of this study was to evaluate the knowledge and self-care behaviors of African Americans necessary to prevent the development of hypertension or to improve the control of all ready existing hypertension. Motivational interviewing was used to identify and address barriers to lifestyle modifications. Determination Of Beta-Carotene Content And Consumer Acceptability Of Sweet Potato Cookies By Adults And Preschool Children, Aja Marie Stokes

Vitamin A deficiency is recognized as a major health concern worldwide, especially in developing countries. Sweet potatoes are a cash crop that is abundantly grown and available, providing an excellent source of the carotenoid, beta-carotene. Carotenoids are precursors to vitamin A (retinol). Three sweet potato cookie products were developed: glutenree, wheat-containing, and glutenree with extra sweet potato. Products were evaluated by adults and pre-school aged children based on appearance, aroma, texture, flavor, and overall acceptability. Results showed that overall the children liked both the glutenree and wheat-containing cookies (p<0.05). Adults preferred (p<0.05) the glutenree with extra sweet potato and the wheat-containing products. The glutenree cookie contained 10.1 parts per million of beta-carotene as determined by high-performance liquid chromatography.

Child care providers in Mississippi are required by the Mississippi Health Department to obtain food manager’s training and certification. The TummySafe© program satisfies this requirement and is offered in a self-paced computer delivered version and a traditional classroom version. This research explores participant changes in attitude and self-reported behaviors in the two methods of curriculum delivery as well as the correlation of knowledge change with attitude and self-reported behavior change. A quasi-experimental, pre-test/post-test design was used. Attitude change was not significantly different in the two methods. Traditional participants reported a higher change in self-reported behaviors than computer delivered participants. Both …

This study examined nutritional status and fecundity of women and was approved for patient enrollment by the ETSU Institutional Review Board (IRB). Once enrolled, participants filled out two food frequency questionnaires (FFQ, fruit/vegetable intake, fat intake), self-reported anthropometric data, and had one 5 mL vacutainer of whole blood (EDTA) collected for measures of oxidative stress (OS), coenzyme Q10 level, and fatty acid profile of the red blood cell (RBC) membrane. Participants were either designated to the case group (13 women experiencing fertility problems and an anti-mullerian hormone level of 1 ng/ml or less (AMH, <1 ng/mL)) or the control group (13 women experiencing normal ovulation cycles and no evidence of polycystic disease). This study hypothesized that the case group would have poorer plasma antioxidant status, consume more dietary saturated fat and have lower levels of omega-3 and higher levels of omega-6 fatty acids in the RBC membrane. Results showed that case participants had significantly higher body mass index (BMI) when graduating from high school, BMI upon enrollment in the study, and trended to gain more weight since high school. Antioxidant status of the plasma tended to be higher for the case group. This result was surprising as case participants consumed significantly fewer servings of fruits and vegetables (sources of antioxidants) than control subjects. FFQ results indicated that case participants consumed significantly higher amounts of total fat (g), saturated fat (g), unsaturated fat (g), and their diets had a higher dietary fat percent. No significant differences were noted in the individual fatty acids isolated from the RBC membrane or in calculated ratios of fatty acid between case and control groups. The fatty acid profile from RBC membranes are in agreement with self-reported fat intake from FFQ data and may provide a rationale for no differences observed between the two groups.

Individuals with weight statuses approaching obesity may be at risk for chronic health problems. Diet, weight, health behaviors, level of knowledge, and attitudes or perceptions have been identified as key factors influencing body weight. The purpose of this study was to determine which factors were related to BMI in adults in north Mississippi and to determine if there were relationships between those factors. A telephone survey was conducted with 500 participants (mean age 46.3 ± 18.5). The average BMI was 27.5 ± 6.2 kg/m2.
