The Impact Of Extension Gardening Programs On Healthy Attitudes And Behaviors, Erica Odera, Alexa J. Lamm, Courtney Owens, Sandra Thompson, Lawrence Carter
Journal of Human Sciences and Extension
Gardening programs have been increasing in popularity since 1995 when California enacted legislation with the goal of putting a garden in every school. Research has shown positive benefits of gardening programs include increasing a child’s academic skills, environmental awareness, and social skills, but little is known about their impact on healthy attitudes and behaviors. Considering childhood obesity rates are rapidly increasing, understanding how educational programs, such as gardening, can impact health has become important. The purpose of this study was to assess the impact Extension gardening programs had on participants’ healthy attitudes and behaviors. Using a pretest/posttest research design with …
Myplate, Children, And Lack Of Formative Evaluation: A Systematic Review, Nina Roofe, Elson Bihm
Myplate, Children, And Lack Of Formative Evaluation: A Systematic Review, Nina Roofe, Elson Bihm
Journal of Human Sciences and Extension
Beginning at the critical preschool level, preventing childhood obesity is a multifaceted challenge with health, economic, ethical, and social implications. In particular, increasing emphasis will be placed upon educating children and their caregivers about the USDA’s MyPlate model of good nutrition. To date, evidence-based efforts to teach preschool children nutrition facts and appropriate behaviors are limited, and developers of evidence-based practices do not appear to use formative-evaluation to an adequate extent. Crucial among these evaluations is assessing what the preschool child already knows about the MyPlate components (fruits, vegetables, grains, protein, and dairy). University researchers along with graduate students in …

Identifying Best Practices For Engaging Faculty In International Agricultural Education Experiences, Alexa J. Lamm, T. Grady Roberts, Amy Harder, Nicole Stedman, Marta Hartman
Journal of Human Sciences and Extension
Universities are being called upon to internationalize curriculum as the need for a globally competent workforce increases. Without globally-competent faculty, international integration within higher education cannot occur. Literature indicates that participation in short-term international agricultural education experiences is important to increasing agricultural faculty members’ cultural awareness. However, the best way to design and implement such experiences for faculty is uncharted. The purpose of the study was to identify best practices for facilitating a short-term international agricultural education experience for faculty in the agricultural and life sciences that encouraged learning, discussion, and reflection leading faculty to further integrate international perspectives in …

Including Capabilities Of Local Actors In Regional Economic Development: Empirical Results Of Local Seaweed Industries In Sulawesi, Mark T. J. Vredegoor, Bartjan W. Pennink
The South East Asian Journal of Management
Stimson, et al. (2009) developed one of the most relevant and well known model for Regional Economic Development. This model covers the most important factors related to economic development question. However, this model excludes the social components of development. Local community should be included in terms of the development of a region. This paper introduced to the Stimson model “Skills” and “Knowledge” at the individual level for local actors indicating the capabilities at the individual level and introduced “Human Coordination” for the capabilities at the collective level. In our empirical research we looked at the Indonesian seaweed market with a …

Examining Relationships Of Taste Sensitivity And Body Fat Percentage Using Body Adiposity Index, Amanda J. Lemaster
Examining Relationships Of Taste Sensitivity And Body Fat Percentage Using Body Adiposity Index, Amanda J. Lemaster
Master's Theses and Doctoral Dissertations
Body fat and taste sensitivity have been explored with mixed results. Generally, studies have used Body Mass Index (BMI) as an indicator of obesity. This research study explores the relations between body fat percentage using a fairly new measure, Body Adiposity Index (BAI; Bergman et al., 2011), BMI, and the three types of taste sensitivities: non-, medium, and supertasters. Taste sensitivity was assessed using two methods: the blue food dye exam (Miller & Reedy, 1990) and the filter paper method (Zhao, Kirkmeyer, & Tepper, 2003) using the general Labeled Magnitude Scale (Bartoshuk et al., 2004) among student participants (n = …

Egg-Derived Tri-Peptide Irw Exerts Antihypertensive Effects In Spontaneously Hypertensive Rats, Kaustav Majumder, Subhadeep Chakrabarti, Jude S. Morton, Sareh Panahi, Susan Kaufman, Sandra T. Davidge, Jianping Wu
Department of Food Science and Technology: Faculty Publications
Background: There is a growing interest in using functional food components as therapy for cardiovascular diseases such as hypertension. We have previously characterized a tri-peptide IRW (Ile-Arg-Trp) from egg white protein ovotransferrin; this peptide showed anti-inflammatory, anti-oxidant and angiotensin converting enzyme (ACE) inhibitor properties in vitro. Given the pathogenic roles played by angiotensin, oxidative stress and inflammation in the spontaneously hypertensive rat (SHR), we tested the therapeutic potential of IRW in this well-established model of hypertension.
Methods and Results: 16–17 week old male SHRs were orally administered IRW at either a low dose (3 mg/Kg BW) or a high dose …
