Career Trajectories, Gender Differences And Accumulated Health Disparities Over The Life Course, Li Zheng

Using longitudinal data from Panel Study of Income and Dynamic (PSID) and multivariate analyses, this dissertation examines the dynamic and longitudinal relationship between gender, occupational career and health among people of working age under the new economy. The major concern is whether there are gender differences in the health returns to occupation/employment resources across life course, whether the gendered health gap diverges with age, and whether health affect men' and women's employment transitions and occupational mobility differently. Results show that women experience significantly poorer health than men, but this health gap reduces with aging. The health disadvantages experienced by women …

Blanching Optimization And The Effect Of Blanching On Functional Components Of Yacon (Smallanthus Sonchifoulius) Root Slices, Yu-Ting Chen

Yacon (Smallanthus sonchifolius) root products are susceptible to oxidation, reduced quality and functional properties. The optimum water blanching process for yacon root slices was determined through a central composite design with variable temperature (80-100 degrees Celsius), blanching time (2-6 min), and citric acid concentration (0.04-0.20%). Phenolics and fructooligosaccharides of yacon slices were also evaluated after blanching. Yacon slices (3-4 mm) blanched at 90 degrees Celsius, 3.9 to 4.1min, and 0.05% to 0.07% citric acid showed the lowest polyphenol oxidase activity, highest whiteness value, and the highest sensory appearance scores. Hydrolysis of casein using chymotrypsin results in the formation of polypeptides (CH) with a hydrophobic aromatic amino acid on one end of the chain because the enzyme selectively cleaves the adjacent peptide-bond. Due to resonance of the aromatic micro-domain, thiols become redox-sensitive and actively participate in electron transfer. These types of amphipathic peptides also tend to be membrane-lytic. The two prong approach of this investigation was to, (1) assess antibacterial effect of the CH in beef steak, and (2), to determine its antioxidative efficacy as a constituent of Cheddar whey based edible coating mix. A single tube detection kit was designed as a rapid, easy-to use and reliable test to detect Listeria spp.. Various food samples (vegetables and raw catfish fillets) were used in order to validate the performance of the detection kit. L. grayi was detected in one ready-to-eat (RTE) vegetables with the detection kit while no Listeria spp. was detected using the modified FDA-BAM method. In addition, both the detection kit and modified FDA-BAM method indicated that twelve catfish fillets were Listeria positive. Influence Of Temperature On Acid-Stress Adaptation In Listeria Monocytogenes, Qian Shen

Acid-stress adaptation in Listeria monocytogenes (Lm) serotype 4b and 1/2a occurred when cells were pre-exposed to pH 5.0 tryptic soy broth supplemented with yeast extract (TSB-YE) at 22°C or 37°C but not at 4°C. Prolonged time, varied sublethal acid pH, substitute of acidulants and addition of sodium chloride during 4°C mild acid pre-exposure still did not induce acid-stress adaptation in Lm. This finding was also validated using an acidic cheese, similar to what has seen for Gram-negative bacteria E. coli and Salmonella. Further investigation revealed that major cold shock protein in Lm CspL was not responsible for repressed acid-stress adaptation …

The purpose of this study is to determine the effect of temperature on inducing an alkaline-tolerance response in L. monocytogenes (Lm) serotypes 1/2a and 4b. When Lm cells were pre-exposed to a sublethal alkali pH of 9.0 at different temperatures, two main patterns were observed: (1) Alkali-stress adaptation was readily induced in Lm when cells were pre-exposed to a sublethal alkali pH of 9.0 for 5-15 min at 37°C or 22°C; and (2) Alkali-stress adaptation was not induced in Lm when cells were pre-exposed to a sublethal alkali pH of 9.0 for 1 h at 4°C. Background

Scientists and regulators have sought to understand whether and how physiologic dysregulation due to chronic stress exposure may enhance vulnerability to the adverse health effects of toxicant exposures. We conducted a cross-sectional study to determine whether allostatic load (AL), a composite measure of physiologic response to chronic exposure to stress, amplifies the effect of lead exposure on blood pressure among middle-aged adults.

Methods

We analyzed associations between blood lead levels and blood pressure in a nationally representative sample of 8,194 U.S. adults (aged 40-65 years) participating in the National Health and Nutritional Examination Survey, 1999--2008. Outcomes were elevated systolic …

After traumatic brain injury (TBI), both primary and secondary injury cascades are initiated, leading to neuronal death and cognitive dysfunction. We have previously shown that the combinational bioflavonoid, Pycnogenol® (PYC), alters some secondary injury cascades and protects synaptic proteins when administered immediately following trauma. The purpose of the present study was to explore further the beneficial effects of PYC and to test whether it can be used in a more clinically relevant fashion. Mycorrhizae is a symbiotic association between certain species of soil fungi and the root systems of many land plants. Most economically important crops form this association. By colonizing plant roots, mycorrhizal fungi receive a carbon supply from photosynthesis in plant tissues. The plant, by reason of the fine, extracellular, hyphal network of the fungi, is lent a greatly improved access to soil nutrients (especially phosphorus), improves its water relations, and may receive some resistance to soil-borne diseases. Some scientists assert that optimal management of mycorrhizae is an essential part of sustainable agricultural systems (1).

Maize is one of the most abundantly produced grains on earth and is widely used in human and livestock diets. 90% of maize protein is found in the endosperm portion of the seed in the form of small spherical aggregates called protein bodies. Peak bone mass of pre-menopausal women has been established as a major risk factor for postmenopausal osteoporosis and related bone fractures (4). Previous research evidence suggest that bone mass of both the peripheral and axial skeleton is stable for women before menopause (1,2). Teegarden et al.(3) established that peak Bone Mineral Content (BMC) is attained by age 26.2+/- 3.7 years. After peak BMC is obtained, mass of cortical and trabecular bone and BMC will decline at a rate of approximately 1.2% per year.

This report presents an evaluation of the Friends in the Desert, Foundation Incorporated (FID), a sit-down feeding program in downtown Henderson, Nevada. The evaluation identified both strengths of the program and opportunities for growth. Major components of this report are presented in the following order: scope of work, research design, findings, recommendations, conclusions and limitations. The report recommendations provide the agency’s members and principal stakeholder groups with proposals designed to improve the program’s financial position and long-term viability. Glucose regulation is important in both spermatogenesis as well as mature sperm function. The impact of diabetes on sperm function is becoming increasingly clear, though much work is still needed to elucidate the mechanism by which diabetes impairs spermatogenesis. Diabetes causes disruptions in the hypothalamic pituitary gonadal (HPG) axis, the regulatory system that controls reproduction. The HPG axis functions by secreting GnRH pulses from the hypothalamus, which bind to receptors on the pituitary and cause secretion of follicle stimulating hormone and luteinizing hormone, which then bind to receptors in the testes and facilitate spermatogenesis. The liver is a central organ to whole-body metabolism and mediates many of the adaptive responses to changes in nutrient availability, such that the appropriate energy sources are used and blood glucose levels maintained, whether directly after a meal or after a twelve-hour fast. The adaptive responses to fasting in liver are largely mediated by the nuclear receptor peroxisome proliferator-activated receptor α, or PPARα. PPARα can be activated by a de novo synthesized lipid ligand—16:0/18:1- glycerophosphocholine (16:0/18:1-GPC)—the synthesis of which is dependent on fatty acid synthase (FAS), but little is known about the regulation of this pathway. Background

Acrylamide as a possible carcinogen is known to form in heated carbohydrate-rich food such as potato chips. In this study, the effect of three potato varieties (Agria, Sante and Savalan) and two blanching conditions ((75˚C for 9 min and 83˚C for 2.5 min) on the concentration of precursors and acrylamide reduction in potato chips was investigated.

Results

Results revealed that potato variety and blanching time-temperature ere important parameters for acrylamide formation in potato chips. Acrylamide content in Sante variety potatoes, which contained the highest amount of reducing sugars, was found to be the highest (8825μg/kg). However, Savalan, containing …

Cervical cancer is a virally mediated disease with the majority of cases due to the human papillomavirus (HPV). HPV infections are the most prominent sexually transmitted diseases among college-aged women. Although HPV vaccines such as Gardasil afford women with a valuable method of cancer prevention, vaccination rates are often incomplete or inadequate. This study evaluated the effectiveness of an interactive, information-motivation-behavioral skills (IMB) based, multimodal program to promote Gardasil use among 62 undergraduate women enrolled at the University of Connecticut. This dissertation aimed to understand formal and informal ayurvedic knowledge and practice through the framework of commodification, in the context of the recent emergence of global ayurvedic tourism in Kerala, India. The objective was to understand how commodification, both old and new, have affected knowledges and livelihoods of actors constituting the ayurvedic commodity chain, with a focus on `social lives' of ayurvedic pharmaceuticals and select herb-ingredients. I argue that the trajectory of commodification in Kerala provides a stark contrast to the national mainstream with its focus on classical vis-à-vis proprietary medicines. The concepts of sustainability and sustainable development are frequently described as having three main components, sometimes referred to as the three pillars or the triple bottom line: environmental, economic, and social.
